6 to 10 medium-sized apples
1/2 cup water
Pinch salt
1/3 to 1/2 cup sugar

Steps:

  • Cut the apples into quarters, peel them and core them. As you peel them, put the apple pieces in a bowl of cold water to keep them from turning brown. When they are all peeled and cored, cut them into slices (or cubes) and put them in a saucepan with the water and salt. Cover and simmer gently until the apples are almost soft. Remove the lid and add sugar to taste. Apples vary so much in tartness that it is difficult to tell you just how much to use. You must add a little at a time, tasting to find out how sweet the sauce is. After it is sweetened enough, continue simmering for a few minutes to melt the sugar thoroughly and cook down the sauce. James Beard's Notes: If the apples are not tart enough (or you added too much sugar), add just a dash of lemon juice as they cook. Feel free to add your favorite spice to taste. Good choices are cinnamon, nutmeg, ground cloves, or mace. Cardamom and coriander are other flavors that some chefs are using. Smash the apples as they cook for a rustic look, or if you prefer a smoother sauce, you can strain it through a fine sieve or food mill after it has cooked. Don't forget that applesauce makes a wonderful gift!

4 pounds any combination of apples (about 8 large), rinsed, halved or quartered
1 (3-inch) cinnamon stick
2 tablespoons fresh lemon juice
1 vanilla bean, split lengthwise, or 1 teaspoon vanilla extract
Special Equipment
A food mill

Steps:

  • Combine apples, cinnamon stick, lemon juice, salt, and 1/4 cup water in a large Dutch oven or other heavy pot. Scrape in seeds from vanilla bean and add pod. Cover pot and cook over medium-low heat, occasionally stirring with a wooden spoon and checking to make sure apples are not scorching (add a splash of water if they are), until apples are soft and falling apart, 35-45 minutes. Uncover pot and let apples cool slightly.
  • Working in batches, pass apples through food mill fitted with a medium disk into a large bowl; discard solids. If sauce is watery, return to pot and simmer over medium heat until thickened.
  • Do Ahead:
  • Applesauce can be made 4 days ahead. Let cool; cover and chill.

1 cup water
1 cinnamon stick or 1/2 teaspoon cinnamon extract
1/2 to 1 cup sugar

Steps:

  • Peel, core and quarter the apples. In a Dutch oven, bring apples, water and cinnamon to a boil. Reduce heat; cover and simmer 10-15 minutes or until apples are tender. Remove from the heat. Add sugar to taste and stir until dissolved. If you used a cinnamon stick, remove and discard. Mash apples with a potato masher until desired texture is reached. Serve warm or chilled.
