Steps:
- Position a rack in the lower third of oven; place a pizza stone on rack. Preheat oven to 500 degrees at least 30 minutes before cooking.
- Heat olive oil in a large pot over medium-high heat. Add onion, garlic, and bay leaf; cook, stirring, until vegetables are soft and fragrant. Add wine and cover pot; bring liquid to a boil. Add clams, cover, and cook, until clams have opened, about 5 minutes. Remove clams from pot and let cool. Remove clams from shells, discarding shells; set aside.
- Strain liquid into a medium saucepan; discard solids. Cook liquid over medium-high heat until reduced and thickened. Add cream and continue cooking until reduced and thickened. Remove from heat and let sauce cool.
- Divide dough into six equal pieces; shape one piece into a 10-inch-round on a pizza peel or the back of a baking sheet. Spoon just enough of the clam sauce over pizza to cover. Top pizza with 9 clams and sprinkle with pepper flakes.
- Carefully transfer pizza to pizza stone and bake until pizza is crisp and nicely browned. Sprinkle with chopped parsley and serve immediately; repeat process with remaining dough and toppings.
WHITE CLAM PIZZA
This recipe is from the April 2008 edition of Everyday with Rachael Ray. This is a nice change from the traditional red sauce pizza and also incorporates seafood...yum.

RED CLAM PIZZA
This pizza remains dairy-free until it hits the table, where you can decide to add Parmesan--or not. Not "fishy" tasting, plus the clams were delicious and not rubbery! My 9 year-old loves this pizza! For the sake of brevity, I'm not including a crust recipe--just use your favorite one. We enjoyed it with a New York Style crust. Adapted from a recipe in American Pie by Peter Reinhart.

Steps:
- Bring garlic and 4 cups water to a boil in a medium saucepan. Drain. Repeat process twice more. On final turn, do not drain; reduce heat and simmer until garlic is tender, 20-30 minutes. Drain; reserve garlic.
- Cook clams and 1/4 cup water in a large pot over medium-high heat, covered, stirring occasionally, until clams open, about 5 minutes (discard any clams that do not open); transfer to a large bowl. Strain clam cooking liquid through a fine-mesh sieve into a small bowl. Remove clams from shells and coarsely chop. Place in a medium bowl, cover, and chill.
- Purée reserved garlic, 1/2 cup clam cooking liquid, and 2 tablespoons oil in a blender, adding more cooking liquid by the tablespoonful, until smooth and creamy.
- Preheat oven to 500°F. Cook bacon in a medium skillet over medium heat until fat renders and bacon is slightly crisp, about 5 minutes; transfer to a paper towel-lined plate.
- Cut pizza dough in half. Working with 1 piece at a time and keeping other piece covered with a damp towel or plastic wrap, gently stretch dough into 12"-14" rounds and transfer to lightly oiled baking sheets. Spread dough with garlic purée and top with Pecorino, clams, and bacon. Bake pizzas until cheese is melted and crust is brown and crisp, 10-15 minutes. Drizzle with oil and top with parsley and red pepper flakes.

Steps:
- Preheat the oven to 500 degrees. Place a pizza stone or inverted rimmed baking sheet on the bottom rack.
- Mix the garlic and 1/4 cup olive oil in a small bowl. Knead the dough about 6 times on a lightly floured surface. Roll and stretch into a 12-inch round. Place the dough on a pizza peel, or another inverted baking sheet, dusted with cornmeal.
- Brush half of the garlic-oil over the dough; season with salt. Scatter the mozzarella and clams over the crust; drizzle with 2 tablespoons of the reserved clam juice and the remaining garlic-oil. Sprinkle with the oregano, parmesan, and salt to taste. Slip the pizza onto the preheated pizza stone or baking sheet (the cornmeal will help it slide off). Bake until the crust is light brown, 13 to 15 minutes.
- Just before the pizza is done, drizzle the arugula with olive oil and lemon juice. Slice the pizza; top each piece with arugula and season with red pepper flakes, if desired.

- Fire up. Preheat the grill or oven to at least 450°F. If you can get it hotter, do. If you are using a stone, put it into the cold oven and let it heat at least 30 minutes.
- Shape the dough. You can use a frozen dough from the grocer, just not a precooked dough. But I strongly recommend you try making your own by using my simple Roman style no knead pizza crust recipe. It has the right amount of oil in it for the same kind of crispy crust you find at Pepe's.
- Toss the flour on your work surface and spread it thin. Place the dough in the center and begin working it outward and roll it thin, less than 1/4". Move it to a peel if you are cooking on a pizza stone or to an oiled pan. Either works fine. Throw some cornmeal on the peel or pan to help the dough slide on and off, and for a bit of flavor.
- Add the toppings. Pat the clams dry and place them on the dough, spreading them out evenly, and take them to within 1" of the edge. Then sprinkle on the garlic, cheese, oregano, and finally drizzle on the oil. The oil will pool but don't worry, it will spread out in the oven. I like to take a brush and paint a little oil on the edges of the dough.

- Make the broccoli rabe: In a medium skillet over medium heat, add the olive oil and sauté the garlic until fragrant, 3 minutes. Add the broccoli rabe and cook until it's tender, 5 minutes. Season with salt. Transfer to a cutting board and roughly chop, then set aside.
- Make the clam topping: Rinse the clams to wash off sand and debris. Soak for 30 minutes in salted water to allow the clams to purge any excess sand, then strain and rinse again.
- In a large rondeau, add the olive oil and sweat the garlic, shallots, parsley stem and thyme over medium heat until translucent, 5 minutes. Add the white wine and the clams, stirring to coat. Cover the pan and allow the clams to steam until they open, 5 to 7 minutes. Remove from the heat and transfer the clams to a bowl, reserving the cooking liquid. Return the pan to medium heat and reduce the liquid until syrupy, 12 to 15 minutes. Strain the mixture and let cool completely.
- Once cool enough to handle, remove the clam meat from the shells and roughly chop, discarding the shells.

- Drain the clams, but don't dry them (you can reserve the juices for another purpose if you like; see Note).
- Unroll the pizza dough on its parchment onto a baking sheet. Evenly distribute the clam mixture over the pizza dough, leaving a ¼-inch border all around the edges. Sprinkle over the Pecorino Romano, and lightly season with pepper. Don’t salt at this point, knowing that the clams and cheese might be a bit salty (you can always salt a bit after baking if needed).

- Preheat the griddle to 300° F. Cook the 4 pizza rounds for 30 seconds on each side. Remove from heat and set aside.
- In a saucepan heat the olive oil over medium heat, until hot but not smoking. Add the garlic, onion, salt and chile flakes. As soon as the garlic and onions begin to look transparent, add the cockles and white wine. Continue to cook until all of the cockles have steamed open.
- Meanwhile, divide the mozzarella evenly among the 4 marked pizza rounds, making sure to leave a 3/4-inch rim for the crust. Cook the prepared pizzas on the griddle until the dough is cooked but not dark, and the cheese has melted, about 4 minutes.
- Remove the cockles from the pan with a slotted spoon and arrange the cockles (in their shells) on the pizzas, allowing a bit of the juices to drip from the spoon onto the pizza. Serve immediately.

- In a medium bowl combine the water, yeast, and sugar. Stir briefly and set aside until the yeast begins to bubble and swell, about 5 minutes. Add 2½ cups flour, 3 tablespoons oil, and the salt. Stir until the dough holds together and then turn it out onto a lightly floured work surface. Knead the dough until it is smooth, adding more flour as needed, 4 to 6 minutes. Shape the dough into a ball, put it in a lightly oiled bowl, and turn to coat with oil. Cover the bowl with plastic and let stand in a warm place until the dough doubles in volume, 1 to 1½ hours.
- Punch down the dough and turn it out onto a lightly floured work surface. Divide the dough into four equal pieces. Roll or press each piece into an approximate circle, ¼ inch thick (don’t worry if it’s not exact; irregular shapes are fine). Oil four 12-inch squares of wax paper or parchment paper and place one dough round on each.
- Drain the clams and reserve 1 tablespoon of the clam juice. In a small bowl whisk the clam juice with ¼ cup oil and the garlic. In another bowl combine the parsley, cheese, oregano, and lemon zest. Put the drained clams in a third bowl.
