Steps:
- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with foil, and coat well with vegetable cooking spray. Scrub potatoes well and cut into 1/2 inch thick fries.
- In a large mixing bowl, toss potatoes with oil, sugar, salt and red pepper. Spread on baking sheet in one layer.
- Bake for 30 minutes in the preheated oven, until potatoes are tender and browned. Serve immediately.

- Preheat oven to 400°. Cut each potato into 12 wedges. In a large bowl, combine oil, paprika, salt and garlic powder. Add potatoes; toss to coat., Transfer to a greased 15x10x1-in. baking pan. Bake until tender, 40-45 minutes, turning once.

BEST EVER OVEN FRIES
Get ready for my best ever oven fries! This method for baked fries is so easy and results in crispy, tender french fries that are perfectly seasoned every time.

Steps:
- Preheat oven to 425 degrees F.
- Bring a large stockpot of water to a boil.
- While you're waiting for the water to boil, slice the potatoes into your desired french fry shape. I like a thickness of about 1/2 inch.
- Once the water is boiling, add kosher salt 1 tbsp at a time. Taste between tbsp. Salt until the water is salty like the ocean (noticeably salty on your tongue).
- Add the potatoes to the boiling, salted water and boil for about 8 minutes, until fries are just fork tender but not falling apart.
- Strain and rinse with cold water. Lay out paper towels. Set the potatoes on top of the paper towels and pat dry with additional paper towels.
- Once dry, add the potatoes to a rimmed baking sheet. Toss with olive oil and about 1 tsp kosher salt.
- Bake for 15 minutes, flip the fries, and bake for an additional 10-15 minutes until golden brown.

- Preheat oven to 450°F/230°C. Line two rimmed baking sheet pans (commercial grade half-sheet pans) with parchment paper and lightly coat with nonstick spray.
- Peel potatoes and cut into 3/8 inch (1 cm) slabs lengthwise, then stack a few slabs at a time and cut into classic French fry shapes 3/8 inch (1 cm) wide. Place potatoes in bowl, drizzle with oil and toss to coat well. Sprinkle lightly with salt (you can add more after, if you like) and toss again to coat evenly.
- Scatter the fries on both pans, spacing evenly so that none are touching one another; don't get lazy here or you will end up with flaccid fries. Bake for 12 to 15 minutes, or until the bottoms of the fries are golden, then flip fries over and continue to bake for about 12 to 15 minutes more or until fries are golden brown on both sides and crispy. The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
- Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
- Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.

PERFECT FRENCH FRIES

- Peel and rinse the potatoes. Then cut them into sticks by cutting the potato in 4 or 5 vertical pieces, and then cutting each piece into sticks.
- Place them in a large bowl and cover with cold water. Allow them to soak, 2 to 3 hours. (You can also stick them in the fridge and let them soak overnight.)
- When you're ready to make the fries, drain off the water and lay the potatoes on 2 baking sheets lined with paper towels. Blot with paper towels to dry them.
- Heat a few inches of oil in a heavy pot to 300 degrees F. In 3 or 4 batches, cook the potatoes until soft, 4 to 5 minutes per batch. They should not be brown at this point! You just want to start the cooking process. Remove each batch and drain on new/dry paper towels.
- Once all the potatoes have been fried at 300 degrees F, turn up the heat until the oil reaches 400 degrees F. When the oil's hot, start frying the potatoes in batches again, cooking until the fries are golden and crisp. Remove the potatoes from the oil and drain on paper towels.
- Sprinkle with sea salt and dive in!
OVEN FRIES
Steps:
- Preheat the oven to 425 degrees F.
- Preheat a baking sheet in the hot oven for at least 5 minutes.
- While the baking sheet is heating, toss the potatoes with the olive oil and 3/4 teaspoon salt in a large bowl. Then dump the potatoes out onto a baking sheet, spreading to a single layer. Roast for 30 to 35 minutes, shaking the pan every now and then, until the potatoes are cooked through, brown and crispy. Toss the fries in a big bowl with the parsley and cheese.
