The Best Crispy French-Fries image

This is not so much a recipe as it is technique. Get ready for some of the best fries you've ever eaten! The oregano is a must, IMHO, but if you haven't got it, do without. Your loss.

2 lbs unpeeled russet potatoes, cut lengthwise into 1/3 inch thick sticks
vegetable oil, for frying, about 8 cups
fine sea salt
Greek oregano

Steps:

  • In a large bowl, cover the potatoes with water.
  • In a deep fryer fitted with a basket or a heavy medium saucepan, heat 3 inches of vegetable oil to 340°F.
  • Drain the potatoes and pat dry with paper towels.
  • Add half the potatoes to the oil and cook until they begin to blister and turn golden, about 15 minutes.
  • Shake up the basket every once in a while (not too often - especially in the beginning when the fries are still soft), or run a fork through the saucepan to make sure fries are not sticking together.
  • Spread the fries on paper towels to drain and cool.
  • Repeat with remaining fries.
  • (Fries can be made to this point up to 4 hours in advance of serving).
  • Heat the oil to 375°F.
  • Add a quarter of the fries and cook until browned and crisp, 1 to 2 minutes.
  • Drain on paper towels and repeat with remaining fries.
  • Sprinkle with sea salt and some oregano.

4 medium potatoes
1 tablespoon olive oil
2-1/2 teaspoons paprika
3/4 teaspoon salt
3/4 teaspoon garlic powder

Steps:

  • Preheat oven to 400°. Cut each potato into 12 wedges. In a large bowl, combine oil, paprika, salt and garlic powder. Add potatoes; toss to coat., Transfer to a greased 15x10x1-in. baking pan. Bake until tender, 40-45 minutes, turning once.

The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

cooking spray
6 Yukon Gold potatoes, cut into thick fries
1 tablespoon white sugar
¼ cup extra-virgin olive oil
1 teaspoon garlic powder, or more to taste
1 teaspoon salt, or more to taste
1 teaspoon ground black pepper, or more to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
  • Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
  • Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
  • Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.

In a nutshell, here it is: Soak potatoes, dry potatoes, fry potatoes, drain potatoes, then fry again!

5 pounds russet potatoes
Vegetable or peanut oil, for frying
Sea salt

Steps:

  • Peel and rinse the potatoes. Then cut them into sticks by cutting the potato in 4 or 5 vertical pieces, and then cutting each piece into sticks.
  • Place them in a large bowl and cover with cold water. Allow them to soak, 2 to 3 hours. (You can also stick them in the fridge and let them soak overnight.)
  • When you're ready to make the fries, drain off the water and lay the potatoes on 2 baking sheets lined with paper towels. Blot with paper towels to dry them.
  • Heat a few inches of oil in a heavy pot to 300 degrees F. In 3 or 4 batches, cook the potatoes until soft, 4 to 5 minutes per batch. They should not be brown at this point! You just want to start the cooking process. Remove each batch and drain on new/dry paper towels.
  • Once all the potatoes have been fried at 300 degrees F, turn up the heat until the oil reaches 400 degrees F. When the oil's hot, start frying the potatoes in batches again, cooking until the fries are golden and crisp. Remove the potatoes from the oil and drain on paper towels.
  • Sprinkle with sea salt and dive in!

4 russet potatoes (about 2 pounds), peeled and cut into a 3/4-inch pieces
Kosher salt
5 slices bacon (about 4 1/2 ounces)
3 tablespoons vegetable oil, like soy, peanut, or corn
1 medium yellow onion, thinly sliced
Freshly ground black pepper
1 tablespoon chopped fresh parsley leaves, optional
Pinch cayenne pepper, optional

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Season with salt. Bring to a boil, lower the heat, and simmer until just tender, about 6 minutes. Drain and set aside.
  • Cook the bacon in a large cast iron skillet over medium heat until crisp, about 4 to 5 minutes. Transfer to a paper towel-lined plate. Pour all but 1 tablespoon of the bacon drippings into a small bowl and set aside. Add the onion and cook, stirring, until golden brown, about 8 minutes. Transfer to a bowl.
  • Wipe out the skillet and return to medium-high heat. Heat the remaining bacon fat and 2 tablespoons vegetable oil in the skillet. Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on 1 side, about 4 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, about 6 minutes or until well browned. Stir in the onions, heat through, and sprinkle with the parsley and cayenne, if desired. Transfer to a warm platter and crumble the bacon on top, serve. Copyright 2005 Television Food Network, G.P. A heap of these perfectly crisp, golden, double-cooked fries makes the perfect accompaniment to any sandwich.

6 medium russet potatoes, peeled and cut into 1/2-inch-thick sticks
8 cups safflower oil
Coarse salt

Steps:

  • Place potatoes in a large bowl, and cover with cold water. Refrigerate for 8 hours. Drain, rinse, and pat dry.
  • Heat oil in a large pot over medium heat until it registers 310 degrees on a deep-fry thermometer. Line 2 baking sheets with paper towels. Carefully add potatoes to oil in small batches. Cook for 3 to 4 minutes, turning occasionally. (They will not color much.) Using a slotted spoon, transfer fries to paper towels to drain. Let cool.
  • Increase heat so oil reaches 350 degrees. Fry potatoes in small batches until golden brown, 3 to 4 minutes. Transfer fries to paper towels to drain. Season with salt, and serve immediately.

8 potatoes (highest quality you can find, will work with any potatos, but the better they are the better these)
olive oil
spices (Lawrey's or any other kind of spices you enjoy)

Steps:

  • Preheat oven to 475°.
  • Scrub and clean potatos - don't peel!
  • Slice potatos into long 1/8's.
  • Drizzle a cooking sheet with olive oil and brush to cover.
  • Season oil with any seasonings you like, we use salt, pepper, garlic powder and cayenne, or Lawrey's Seasoned Salt.
  • Layer potato wedges on oil.
  • Cover with foil (important!).
  • Put in oven as close to lower element as possible for 5 minutes.
  • Remove foil and return to oven for 10 minutes.
  • Remove from oven and flip potato wedges.
  • Bake for 10 more minutes.
  • Enjoy hot with wonderful dipping sauces, great with burgers, steaks or even by themselves!
