HERB-LOADED CHICKEN NOODLE SOUP

Herb-Loaded Chicken Noodle Soup image

Kick your classic homemade chicken noodle soup up a delicious notch by loading it up with loads of fresh Italian herbs. (Suggestions included below for dried herbs, too, in case fresh herbs are not available!)

Provided by Ali

Time 35m

Number Of Ingredients 14

2 tablespoons olive oil
1 small white onion, peeled and diced
2 medium carrots, peeled and diced
2 stalks celery, ends trimmed and diced
4 cloves garlic, minced or pressed
8 cups (64 ounces) good-quality chicken stock
3 sprigs fresh rosemary*
3 sprigs fresh thyme*
1 sprig fresh sage*
6 ounces wide egg noodles
2 cups shredded cooked chicken
salt and pepper
1/2 cup loosely-packed chopped fresh parsley
1/3 cup loosely-packed chopped (or julienned) fresh basil

Steps:

  • Heat oil in a large stockpot over medium-high heat. Add onion and sauté for 4 minutes, stirring occasionally. Add carrots and celery and sauté for an additional 3-4 minutes, or until the carrots are softened a bit, stirring occasionally. Add garlic and sauté for an additional 1-2 minutes, or until fragrant, stirring occasionally. Add chicken stock, rosemary, thyme and sage, and gently stir until combined. Continue cooking until the soup reaches a simmer.
  • Reduce heat to medium-low, and stir in the egg noodles and chicken. Continue cooking for 8-10 minutes or until the egg noodles are al dente. (The longer they cook, the more broth they will soak up. Feel free to add more chicken stock if needed.)
  • Remove and discard the rosemary, thyme, and sage sprigs (no worries if some of the leaves have dropped off). Taste the soup, and season with salt and pepper to taste.
  • Serve warm, garnished with extra black pepper, fresh parsley and fresh basil.

CREAMY CHICKEN SOUP

Creamy Chicken Soup image

Provided by Mel

Time 1h

Number Of Ingredients 18

1 teaspoon olive oil
1 1/2 cups peeled diced carrots (about 3-4 medium carrots)
3/4 cup diced celery (about 3 stalks)
1/2 cup diced onion (about 1 small onion)
4 cups chicken broth (I use low sodium)
2 cubes chicken bouillon or 1 tablespoon chicken bouillon paste or granules (optional (see note))
3 bay leaves
1 tablespoon dried parsley
1 1/2 teaspoons herbs de provence (see note)
1 teaspoon turmeric
1/2 teaspoon garlic powder or 2-3 cloves garlic (finely minced)
1/2 teaspoon coarsely ground black pepper
3 1/2 cups milk or half-and-half or a combo (see note)
3-4 cups cooked chopped chicken
Shredded parmesan, asiago or gruyere cheese, for topping (optional)
6 tablespoons all-purpose flour
3 tablespoons olive oil
3 tablespoons butter

Steps:

  • For the soup, in a 4-quart or larger saucepan, heat the olive oil over medium heat. Add the carrots, celery and onion. Pour in the broth and add the chicken bouillon, bay leaves, parsley, herbs de provence, turmeric, garlic powder, and pepper. Stir to combine.
  • Bring the mixture to a simmer and cook, uncovered or partially covered, for 12-15 minutes until the vegetables are tender.
  • For the roux, while the soup simmers, in a small saucepan, add the olive oil and butter and cook on medium heat until the butter is melted. Add the flour and whisk to combine until a smooth paste forms. Remove from the heat.
  • Add the milk (and/or half-and-half) to the soup and heat through. Add the roux to the soup and cook, stirring or whisking constantly, over medium heat until the soup thickens and gently simmers, 5-7 minutes.
  • Stir in the chicken, season to taste with salt and pepper (this is important for flavor!) and heat through.
  • Remove the bay leaves and serve with a sprinkle of Parmesan, asiago or gruyere on top.

THE 9 BEST SPICES FOR CHICKEN SOUP - FOODS GUY

From foodsguy.com
Estimated Reading Time 8 mins
  • Onion Powder/Flakes. Onion powder and flakes can be used in place of freshly chopped onion. It gives a deeper flavor to the chicken soup that really does make a world of difference.
  • Garlic Powder. Overall, garlic powder is such a great spice to keep in your pantry. Garlic powder adds that distinctive garlic flavor, more powerfully than fresh garlic, and gives a chicken soup a richer flavor.
  • Paprika. A little touch of paprika in a chicken soup makes such a difference. It adds a smoky depth of flavor to the chicken soup that no other spice or ingredient can achieve and just adds to the flavor profile of the soup overall.
  • Dried Parsley. Dried parsley adds a subtle flavor to chicken soup and only needs to be added in near the end of the soup preparation. It is the most popular dried herb used in chicken soup, as it is not an overpowering flavor, but still gives that herb taste.
  • Bay Leaf. Dried bay leaf can be added to your soup to give a subtle flavor of mint and pine, which gives an earthier flavor to the chicken soup. You might not be able to distinguish the flavor of the bay leaf from the other ingredients, but it does make a difference to the overall flavor.
  • Dried Thyme. Dried thyme should be added to the chicken soup as it starts cooking. It is a Mediterranean herb that has a strong flavor and is most commonly used with chicken.
  • Dried Oregano. Dried oregano is perfect for hearty chicken soup. It has a wonderfully strong flavor, and pairs well with thyme in many dishes. Use a little bit to add more of a herby flavor to your chicken soup.
  • Dried Marjoram. Dried marjoram should not be used with dried oregano, but the two can be substituted for each other. It also has a strong taste, so use a little bit, and only if you do not have oregano.
  • Dried Rosemary. Rosemary and chicken are like a match made in heaven, and the two pair well together in chicken soup as well. Not only with the dried rosemary enhance the chicken, but it complements the vegetables in the soup as well.
