STEELERS GAME DAY SAUSAGE

Steelers Game Day Sausage image

This recipe appeared in the January 29, 2006, Post-Gazette Food Section - "Pittsburgh Super Bowl Recipes" - and ran in the Seattle papers. What Pittsburgh Eats is Sausage - stacked with peppers, onions and sauce, on a great Mancini's Italian sausage bun. When the sauce starts to drip down your chin, the bun can work as a sponge so you don't lose a drop! The amounts of the sausage and spices can be adjusted to suit individual taste.

salt and freshly ground pepper to taste
8 links of Italian Sausage, sweet, hot, or a combination of the two
4 club, hero or wedge rolls, split

  • First, slice your mushrooms, your peppers into strips, and onions into petals. Once they are all cut, add them into a big pot with the oil over Med-Low heat. Sprinkle your frank's red hot sauce and red pepper flakes all around. Also, add in your salt and garlic powder. Let this cook until veggies are tender. Then add in canned tomatoes. *Note: if you're using a pressure cooker, add oil and veggies in and use the brown sear option until tender.
  • Next in a separate pan, brown your sausage over Med heat. Once your sausage is browned, add a little bit of water and a lid to finish the cook on them.
  • After the hot sausage is cooked, add them into the pot with the veggies. Take about a cup of water and put it into the pan you used to cook your sausage in. Dump the water from the sausage skillet into the vegetable pot. *Note: if using the pressure cooker, the sausage does not have to be fully cooked as long as you have browned it.
  • Then, let this cook for about an hour in the pot. *Note: if using the pressure cooker, use the stew/soup option for 30 minutes.
