1 1/2 pounds lean ground beef
1 yellow onion (chopped)
1/4 cup flour
3 tablespoons chili powder (NOT cayenne pepper (see notes))
1 tsp EACH ground cumin, garlic powder, ground coriander, salt
1/2 tsp EACH smoked paprika, dried oregano
1/4 teaspoon cayenne pepper (will not make it spicy)
1/3 cup tomato paste
4-6 garlic cloves (minced)
3 1/2 cups reduced sodium chicken broth
1 14.5 oz. can fire roasted diced tomatoes, (with juices)
1 4 oz. can mild chopped green chiles
1 teaspoon unsweetened cocoa powder
1 teaspoon sugar
a pinch of cinnamon
1 15 oz. can pinto beans, rinsed and drained (may sub black beans )
1 1/2 cup frozen sweet corn (no need to thaw)
1 6 oz. can chopped black olives (drained)
1/2 tablespoon apple cider vinegar
15 regular lasagna noodles (NOT no boil)
2 cups freshly grated Monterrey Jack cheese
2 cups freshly grated sharp cheddar cheese
1 cup sour cream or Greek yogurt
8 oz. Cream Cheese (softened)
1/2 cup mild salsa verde (I like Herdez)
1/4 teaspoon salt

Steps:

  • SOAK NOODLES: Place lasagna noodles in the bottom of a long pan. Pour hot tap water over the noodles until they are submerged. Let them soak while you prep the filling - at least 30 minutes. Agitate the noodles with your hands occasionally to prevent them from sticking together.
  • PREP: Preheat oven to 350 degrees F. Lightly grease a deep 9X13-inch pan; set aside. Whisk together the flour and all Meat Filling seasonings (through cayenne pepper); set aside.
  • COOK BEEF: Brown beef and onions in a Dutch oven or very large skillet until almost cooked through. Sprinkle in flour/seasonings mixture and cook for two minutes. Reduce the heat to low and stir in the tomato paste and garlic and cook for one minute.
  • FILLING INGREDIENTS: Stir in chicken broth, diced tomatoes, green chiles, cocoa powder, sugar and cinnamon. Bring the sauce to a simmer and continue to simmer, stirring often, until thickened, 10-15 minutes. After the sauce has thickened, stir in beans, corn, olives and apple cider vinegar then remove from heat.
  • CREAMY FILLING: Meanwhile, whisk all of the Creamy Filling ingredients together in a medium bowl, set aside. Combine cheeses in a separate bowl; set aside.
  • ASSEMBLE: Spread 1 cup of meat sauce in the bottom of the prepared pan (layer will be thin). Place 4 noodles lengthwise and part of a 5th noodle on top to cover. Spread ¾ cup Cream Filling evenly over top followed 1 cup combined cheeses. Repeat layers using two cups meat mixture, 4+ noodles, 3/4 Creamy Filling and 1 cup cheeses two more times for a total of 3 complete layers. To finish, top with remaining meat sauce followed by remaining cheese.
  • BAKE: Cover the pan with foil and bake at 350 degrees F for 30 minutes. Remove the foil and bake uncovered for an additional 20 more minutes or until the cheese is melted and casserole is heated through. Remove pan from oven and let stand 15 minutes before serving. Garnish with fresh tomatoes, olives, avocados, cilantro and sour cream if desired.

  • Preheat the oven to 425 degrees F.
  • Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil - twice around the pan. Add chicken and season with chili powder, cumin, and red onion. 2 tablespoons white sugar
1/2 cup chopped fresh basil
1 teaspoon fennel seeds

1/4 cup chopped fresh parsley
1 pound lasagna noodles
30 ounces ricotta cheese
2 tablespoons chopped fresh parsley
1 large egg
1/2 teaspoon salt

1 pound thinly sliced mozzarella cheese (about 24 slices)
1 cup freshly grated Parmesan cheese

Steps:

  • In a large pot over medium heat, add in ground sausage and ground beef. Use a spoon to break up the meat into small pieces. Add in onion and garlic and cook until meat is well browned, stirring constantly. Stir in sugar, fresh basil, fennel, oregano, 1/2 teaspoon salt, pepper, and 1/4 cup chopped parsley. 12 lasagna noodles
1 lb sweet Italian sausage link
1 lb ground beef
2 tablespoons garlic (pressed or minced)
2 tablespoons sugar
1/2 tablespoon salt
1 1/2 tablespoons sweet basil
pepper (to taste)
2 tablespoons parsley
20 ounces diced tomatoes
2 (6 ounce) cans tomato paste
2 (16 ounce) containers ricotta cheese (may use one container)
3/4 lb mozzarella cheese
3/4 cup parmesan cheese
1 egg

Steps:

  • Preheat oven to 375°F.
  • Boil noodles and drain (you may also use uncooked noodles).
  • Sauté garlic, sugar and salt.
  • Add sausage and ground beef and brown, breaking into small crumbles.
  • Add basil, pepper, tomatoes and paste; simmer 20-30 minutes until sauce thickens.
  • Mix together in bowl, ricotta, egg and parsley (add milk if it's too thick).
  • Layer sauce to cover bottom of pan, noodles 1/2 of ricotta mixture, 1/4 c of parmesan, noodles, ricotta, mozzarella, sauce and parmesan.
  • Bake covered for 25 minutes.
  • Uncover and bake another 25 minutes.
  • Let cool about 10-15 minutes then cut and serve.
  • Leftovers may be frozen and then heated in the oven until hot and melty.
  • Goes great with crusty garlic toast and a salad.

She tested several, and finally found her ideal in a mash-up of recipes from Giuliano Bugialli and Elodia Rigante, both Italian cookbook authors. "If there were central casting for casseroles, this one deserved the leading role. But its beauty was more than cheese deep. This was the best lasagna I had ever eaten. The sauce was intensely flavored, the cheeses melted into creaminess as if they were bechamel, the meat was just chunky enough, and the noodles put up no resistance to the fork. Most important, the balance of pasta and sauce was positively Italian. At last I could understand why my neighbor Geoff had told me, as I dragged home more bags in our elevator, that all-day lasagna is the only kind worth making."

1 cup extra virgin olive oil
2 medium red onions, finely diced
2 large cloves minced garlic
8 ounces pancetta, diced

1 1/2 cups good red wine, preferably Italian
2 28-ounce cans Italian plum tomatoes
3 tablespoons tomato paste
3/4 pound ground sirloin
1/4 cup freshly grated pecorino Romano
2 eggs
10 sprigs fresh parsley, leaves only, washed and dried
2 large whole cloves garlic
1/2 cup flour
1 pound Italian sausage, a mix of hot and sweet
1 15-ounce container ricotta cheese
2 extra-large eggs
2 cups freshly grated pecorino Romano
1/2 cup chopped parsley
1 pound mozzarella, grated
16 sheets fresh lasagna noodles, preferably Antica Pasteria

Steps:

  • For the sauce, heat 1/2 cup oil in a large heavy Dutch oven or kettle over low heat. Add the onions, minced garlic and pancetta, and cook, stirring, for 10 minutes, until the onions are wilted. Season liberally with salt and pepper. Raise heat slightly, add the wine and cook until it is mostly reduced, about 20 minutes. Crush the tomatoes into the pan, and add their juice. Add the tomato paste and 2 cups lukewarm water. Simmer for 1 hour.
  • Combine the sirloin, cheese and eggs in a large bowl. Chop the parsley with the whole garlic until fine, then stir into the beef mixture. Season lavishly with salt and pepper. Using your hands, mix until all the ingredients are well blended. Shape into meatballs and set aside.
  • Heat the remaining oil in a large skillet over medium-high heat. Dust the meatballs lightly with flour, shaking off excess, and lay into the hot oil. Brown the meatballs on all sides (do not cook through) and transfer to the sauce.
  • In a clean skillet, brown the sausages over medium-high heat. Transfer to the sauce. Simmer 1 1/2 hours.
  • Heat the oven to 350 degrees. In a large bowl, combine the ricotta, eggs, pecorino Romano, parsley and all but 1 cup of the mozzarella. Season well with salt and pepper. Mix thoroughly.
  • Remove the meatballs and sausage from the sauce, and set aside to cool slightly, then chop coarsely. Spoon a thick layer of sauce into the bottom of a 9-by-12-inch lasagna pan. Cover with a layer of noodles. Spoon more sauce on top, then add a third of the meat and a third of the cheese mixture. Repeat for 2 more layers, using all the meat and cheese. Top with a layer of noodles, and cover with the remaining sauce. Sprinkle reserved mozzarella evenly over the top. Bake 30 minutes. Let stand 10 minutes before serving.

Steps:

  • Bring a large pot of salted water to a boil.
  • Preheat oven to 350 degrees.
  • Meanwhile, in a large skillet or saucepan, combine ground beef, sausage, and garlic.
  • Cook over medium-high heat until browned.
  • Drain half the fat; less if you're feeling naughty.
  • Add tomatoes, tomato paste, 2 tablespoons parsley, basil and salt.
  • Set aside.
  • In a medium bowl, mix cottage cheese, beaten eggs, grated Parmesan, 2 more tablespoons parsley, and 1 more teaspoon salt.
  • Stir together well, set aside.
  • Cook lasagna until "al dente" (not overly cooked).
  • To assemble:.
  • Arrange 4 cooked lasagna noodles in the bottom of a baking pan, overlapping if necessary.
  • Spoon half the cottage cheese mixture over the noodles, spread evenly.
  • Cover cottage cheese with a layer of mozzarella cheese.
  • Spoon a little less than half the meat mixture over the top.
  • Repeat, ending with meat mixture.
  • Sprinkle top generously with extra Parmesan.
  • Either freeze, refrigerate for up to two days, or bake immediately:

2/3 cup canned diced tomatoes and green chiles

1 (10 3/4-ounce) can cream of mushroom soup
1 (10-ounce) can enchilada sauce
9 (6-inch) corn tortillas

1 cup (4 ounces) shredded Monterey Jack cheese
1 medium tomato, seeded and diced
4 green onions, chopped
1/4 cup chopped fresh cilantro
1 medium avocado, chopped

Steps:

  • Cook sausage and ground beef in a large skillet over medium-high heat, stirring until meat crumbles and is no longer pink. Drain. Stir in beans and next 5 ingredients; cook until thoroughly heated.
  • Stir together soups and enchilada sauce in a saucepan; cook until thoroughly heated.
  • Spoon one-third of sauce onto bottom of a lightly greased 13- x 9-inch baking dish; top with 3 tortillas. Spoon half of beef mixture and one-third of sauce over tortillas; sprinkle with half of Cheddar cheese. Top with 3 tortillas; repeat layers ending with tortillas. Sprinkle with Monterey Jack cheese and next 3 ingredients.
  • Bake at 350° for 30 minutes. Top with avocado.

12 oz lasagna noodles ((12 sheets dry lasagna noodles))
1 lb mozzarella cheese (shredded)
8 oz parmesan cheese (freshly grated)
3 tbsp olive oil
6 cloves garlic (minced)
2 tbsp tomato paste ((See Note 1))
1/2 cup dry red wine (optional)
1/2 tsp sugar
1/2 tsp dried oregano
1/2 tsp kosher salt
1/4 tsp red pepper flakes
28 oz crushed San Marzano tomatoes ((See Note 2))
12 fresh basil leaves (finely chopped)
1/4 cup butter (or oil or fat drippings)
1/4 cup all purpose flour
1/8 tsp kosher salt
1 dash white pepper
3 cups milk (any variety)
1 lb lean ground beef
1 lb hot Italian sausages (casings removed)
1 tbsp olive oil
1 tbsp fennel seeds
2 tsp red pepper flakes
6 cloves garlic (minced)
1 large white onion (chopped)
1 marinara sauce (entire batch of above recipe)

Steps:

  • In a large skillet, heat the oil over a medium-high flame and add the minced garlic and sauté for 2 minutes.
  • Reduce the heat to medium and add the wine (optional), tomato paste, sugar, dried oregano and salt and red pepper flakes, sauté for 2 minutes.
  • Add the tomatoes, stir and simmer until reduced slightly, about 20 minutes. In last 10 minutes of simmering, add the basil and stir. Season the sauce with more salt to taste.
  • At this point you could leave it chunky or for a smooth sauce you could use a hand blender and puree or put in a blender and blend until smooth. Set aside.
  • Warm the milk in a saucepan or microwave in measuring cup.
  • In a medium sauce pan melt equal parts butter and then the flour.
  • Whisk the flour and butter together and allow to simmer on low to cook the flour 1-2 minutes. The lightest (white color) roux will be slightly puffed.
  • Gradually add the warm milk and whisk to incorporate until a smooth sauce forms on low heat. Cook several minutes, sauce will thicken. Set aside.
  • In a large skillet or Dutch oven over medium-high heat, add olive oil. Add the fennel seeds and red pepper flakes. Saute for 30 seconds and add the onion. Continue cooking on medium-high heat until the onion is soft, 2 minutes. Add the garlic, stirring constantly for 30 seconds.
  • Add the ground beef and sausage and brown meat over medium-high heat, breaking the meat apart into pieces with spoon. When cooked drain excess grease and transfer to food processor. Pulse several times until crumbly and nearly pureed.
  • Return mixture to the skillet or Dutch oven and add the Marinara Sauce (recipe above). Stir to combine the meat and marinara sauce.
  • Cover and allow the sauce to simmer for about 20 minutes on low heat, stirring occasionally. Add 1 cup of water if it gets too thick and continue cooking to reduce.
  • In a 9x13" baking dish add the dry lasagna noodles and cover with hot water. Allow to rest for 20 minutes. Drain into a large colander.
  • Preheat the oven to 350°F. Grease the 9x13" baking dish with cooking spray.
  • We will be making 3-4 layers of lasagna, so divide accordingly.
  • Start by spreading some of the meat sauce on bottom of greased dish. Layer on top with 3 lasagna noodles or more to cover bottom.
  • Spread more meat sauce over the noodles, followed by the Bechamel Sauce (recipe above), then mozzarella and parmesan cheeses, spreading all to the edges.
  • Repeat this 3-4 times to use up all noodles, sauces and ending with cheeses on top.
  • Bake for 30 minutes until top is golden brown and cheeses are bubbling. Allow the lasagna to rest for 15 minutes before serving.

1 pound shredded mozzarella ((4 cups))
5 tablespoons unsalted butter ((may sub half olive oil))
8 garlic cloves (minced)
1/3 cup all-purpose flour
2 cups low sodium chicken broth
3 cups half and half
1 tsp EACH onion powder, dried parsley, dried basil, dried oregano, salt
1/2 tsp EACH dried thyme, pepper, chicken bouillon, red pepper flakes
2 cups freshly grated Parmesan cheese
3 cups shredded Rotisserie chicken
2 eggs
3 cups whole milk ricotta cheese
1 cup full fat sour cream
1/2 cup freshly grated Parmesan cheese
1/4 cup chopped fresh basil (or 1 tablespoon dried)
1/2 tsp EACH salt, pepper
1/4 teaspoon nutmeg
1 14 oz. can artichoke hearts (chopped, patted VERY DRY)
16 oz. frozen chopped spinach (thawed, patted VERY DRY)

Steps:

  • NOODLES: Place lasagna noodles into the bottom of a long pan. Pour hot tap water over the noodles until they are submerged. Let them soak while you prep the lasagna - at least 30 minutes. Agitate the noodles with your hands occasionally to prevent them from sticking together.
  • FILLING: Add all of the Ricotta Filling ingredients to a large bowl and mix until combined. Set aside.
  • Preheat oven to 350 degrees F.
  • ALFREDO SAUCE: Melt 5 tablespoons butter in a large skillet over medium heat then whisk in flour and garlic. Cook, while stirring for 2 minutes. Turn heat to low then gradually whisk in half and half, chicken broth and all spices/seasonings.
  • Bring to a boil, whisking constantly then reduce heat to medium and simmer, whisking occasionally until thickened (but not overly thick), about 5 minutes. Remove from heat and whisk in Parmesan cheese until melted. Stir in chicken until well combined. Add additional milk if needed to thin.
  • ASSEMBLE: Lightly grease a deep 9x13 pan. Spread 1 cup Alfredo sauce in the bottom of the prepared pan (layer will be thin). Place 4 noodles (dried off) lengthwise and part of a 5th noodle on top to cover. Spread with 1/3 of the ricotta cheese mixture. Top with 1 cup mozzarella cheese.
  • Repeat these layers 2 more times: Alfredo sauce (use one third of remaining Alfredo per layer, about 2 cups), noodles, ricotta, and mozzarella for a total of 3 complete layers. To finish, top with remaining third Alfredo sauce and remaining mozzarella (1 cup).
  • BAKE: Cover lasagna with foil and bake in preheated oven for 30 minutes. Remove foil, and bake an additional 30 minutes or until hot and bubbly. Turn the oven to broil (550 degree F) without moving the lasagna. Broil until the top is golden in spots, about 3 minutes, watching closely so it doesn't burn. Let stand 15 minutes before slicing.

  • In a large dutch oven, heat the olive oil over medium heat. Once it's hot, add the diced onion and minced garlic. Toss around with a wooden spoon and cook until onions are softened and slightly browned, about 5-6 minutes. Be careful as the garlic can easily burn.
  • Once the onions are cooked, add the Italian sausage and ground beef. Cook until it's no longer pink, breaking it up with a wooden spoon.
  • Once meat is browned, drain any juices in the pot. Return to heat and pour in the crushed tomatoes and tomato sauce and add a little water to the jars, shake a bit and pour into the pot.
  • Add tomato paste, sugar, salt, pepper, dried basil, Italian Seasoning, fennel seeds and red pepper flakes. Stir to make sure everything is combined. Turn the heat to low and simmer for at least 1 and 1/2 to 2 hours to reduce the water and enhance the flavour. Skim the fat on top and stir occasionally, tasting the sauce and adjusting the seasonings to your preference.
