HEALTHY APPLE & PEAR CRISP
An old favorite made healthy without losing any flavor. I could eat this all day long! I have left the skin on the apples and pears here but feel free to peel yours. Enjoy this classic!

- Preheat oven to 350 degrees F.
- Wash apples well. Slice, core and dice apples and pears.
- In a large bowl (or right in your baking dish), combine apples, pears, lemon juice, sugar and cinnamon. Mix well and layer into a 9 x 9 baking dish.
- In a medium size bowl, combine oats, almond meal, walnuts, maple syrup, coconut oil, vanilla and salt, mix well. Spread oat mixture evenly over the apples and sprinkle with a little cinnamon.
- Bake for 35 - 40 minutes, or until apples and pears are fork tender. Let cool 5 - 10 minutes before serving.
- Serves 6 generously

OATMEAL APPLE PEAR CRISP
I've been making this (or versions of it) since I was 12 years old. This is an evolved version of the "Quaker Oatmeal Apple Crisp". It is easy to make and to play with, try adding some chopped walnuts to the crisp or use a completely different fruit for the filling, such as peaches. It's great warmed up in the microwave but it's equally good straight out of the fridge. Wonderful comfort food for winter or exam time. Very easily converted into vegan by substituting margarine for butter.

- While peeling apples and pears, keep them in the lemon juice so they don't turn brown.
- Place apples in a greased shallow 9 square baking dish.
- Sprinkle (2 tbsp) brown sugar, ground cinnamon, ground nutmeg and water.
- Combine remaining dry ingredients in a separate bowl; add melted butter, mixing until crumbly.
- Sprinkle crumb mixture on top of the apples.
- Bake at 375°F for 30-40 minutes or until apples are tender.
- Serve with vanilla ice cream or yogurt, great by itself too.

- Preheat oven to 375 degrees F (190 degrees C).
- Spread apple slices into an 8-inch square pan.
- Mix brown sugar, flour, margarine, oats, walnuts, and cinnamon together in a bowl. Sprinkle topping over the apples.
- Bake in the preheated oven until topping is golden brown and apples are tender, about 30 minutes.

- In a medium bowl, combine the apples, pears, cinnamon, ginger, vanilla extract, vanilla powder or paste, coconut sugar and tapioca flour. Stir to combine and coat all of the fruit evenly. Pour all of the fruit filling into an 8×8” (or similarly sized) pan and set aside while preparing the crisp topping.
- In a separate bowl, combine the almond flour, coconut flour, and coconut sugar. Add the coconut oil and using a pastry cutter, two forks, or your hands, work the coconut oil into the flour until it comes together into a course meal with no dry flour remaining. Toss in the almonds and walnuts.
- Cover the fruit evenly with the crumble topping and bake for 35-40 minutes, or until golden brown and bubbling. If topping is browning too quickly, tent the pan with aluminum foil halfway through to prevent burning.

- Preheat the oven to 350º (180C or gas mark 4) and get a baking dish out that is approximately 8.5×4.5×2. In a small bowl, whisk together sugar, cornstarch, and cinnamon.
- Start layering the fruit in the bottom, first one layer of apple, and sprinkle roughly 1/2 teaspoon of sugar mixture over it. Then, add a layer of pear, and another sprinkle of sugar mixture. Repeat until all fruits have been layered.
- Place the oats, butter, pecans, sugar, vanilla, cinnamon, ginger, and salt in a medium-sized bowl, and crumble together with a fork (or use your hands). Make sure that the chunks of butter are pebble-sized at the largest, and stir together until it makes a crumbly, slightly even consistency.
- Spread the oat mixture over the top of the sliced fruit and bake for 35-40 minutes, or until the top starts to darken in color. Take out of the oven and let cool for 15 minutes until serving. This goes perfectly with some vegan vanilla ice cream!
