2 eggs
⅔ cup milk
2 teaspoons salt
¼ teaspoon ground black pepper
3 slices bread, crumbled
1 ½ pounds ground beef
1 onion, chopped
1 cup shredded Cheddar cheese
½ cup shredded carrot
¼ cup brown sugar
¼ cup ketchup
1 tablespoon prepared yellow mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk eggs, milk, salt, and ground black pepper in a large bowl. Add crumbled bread and stir until dissolved. Mix ground beef, onion, Cheddar cheese, and carrot into bread mixture; transfer mixture to a 9x5-inch loaf pan. Combine brown sugar, ketchup, and mustard in a small bowl; spread over meat mixture.
  • Bake in the preheated oven until no longer pink in the center, 1 to 1 1/4 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

½ cup milk
1 cup soft bread crumbs
1 ½ pounds ground beef
1 ¼ teaspoons salt
ground black pepper to taste
1 egg, slightly beaten
3 tablespoons steak sauce, (e.g. Heinz 57)
1 onion, chopped
½ cup diced green bell pepper
¼ cup steak sauce, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
  • Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
  • In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
  • Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
  • Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing.

1/2 cup dry breadcrumbs
1 cup milk
6 slices white sandwich bread
3 pounds ground beef
1 cup grated Parmesan
1 1/2 teaspoons seasoned salt, such as Lawry's
1/2 cup minced fresh flat-leaf parsley
Freshly ground black pepper
4 large eggs, beaten
1 cup ketchup
1/2 cup brown sugar
2 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
6 slices regular bacon, cooked crisp, cooled and chopped
Mashed potatoes and chopped fresh flat-leaf parsley, for serving

Steps:

  • For the meatloaf: Preheat the oven to 400 degrees F. Coat a half-sheet pan with cooking spray and sprinkle with the breadcrumbs, which will absorb the juices during cooking.
  • Pour the milk over the bread in a bowl and allow it to soak up the milk. Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, parsley and pepper in a large mixing bowl. Pour in the eggs. With clean hands, mix the ingredients until well combined.
  • Pat the mixture evenly into the prepared sheet pan, spreading all the way to the edges and corners.
  • Next, make the glaze: Whisk together the ketchup, brown sugar, balsamic vinegar and Worcestershire sauce in a bowl until well combined. Brush the mixture evenly over the top of the meatloaf. Sprinkle with the bacon.
  • Bake until the meat is cooked through and slightly browned, 20 to 25 minutes.
  • Remove from the oven, then cut into squares and serve with the mashed potatoes. Garnish with the chopped parsley.

1/2 red bell pepper
18 ounces ground chuck
18 ounces ground sirloin
1 1/2 teaspoon kosher salt
1 egg
1/2 cup catsup
1 teaspoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce
1 tablespoon honey

Steps:

  • Heat oven to 325 degrees F.
  • In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.
  • Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.
  • Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

1 large egg
2/3 cup milk
1 tablespoon mustard
1 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon dried basil leaves, crumbled
1/4 teaspoon dried thyme leaves, crumbles
1 onion, chopped
1/2 cup chopped celery, including leaves
1/4 cup chopped fresh parsley leaves
2 pounds ground beef

Steps:

  • Pre-heat oven to 350 degrees. Place bread cubes in a large bowl. Beat egg and milk together in a small bowl, then pour over bread cubes. Let stand until bread absorbs milk, about 15 minutes. Mash and stir mixture until bread is in very small chunks. Add mustard, salt, pepper, basil, thyme, onion, celery and parsley. Mix well. Add ground beef and mix well. Turn mixture into an 8 x 5-inch loaf pan. Place in oven and bake for 55 minutes. Let stand 5 minutes before slicing.;

3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Well, I can't call it Meat Loaf, as I HATE meatloaf. Everyone that I have met that hates meatloaf, loves my meat brick! It isn't your mother's/grandmother's meatloaf! It really is easy to make too.

2 -6 lbs family sized package ground beef (it MUST be cheap or it will be dry)
1 medium onion, chopped
2 -6 eggs (or how ever many it will take...you will understand later)
25 saltine crackers, crushed (per 2 pounds of ground meat, adjusted as needed)
2 garlic cloves, crushed (per 2 pounds of ground beef, adjust to your taste)
2 teaspoons dried sage (per 2 pounds, adjust accordingly)
2 teaspoons poultry seasoning (per 2 pounds beef, adjust to taste)
1/4-1 cup brown sugar (white sugar can be used if that's all you have)
1 (16 ounce) bottle hickory flavored barbecue sauce (any brand will do, but make sure it is either of the 2 varieties) or 1 (16 ounce) bottle mesquite smoke barbecue sauce (any brand will do, but make sure it is either of the 2 varieties)
salt and pepper
12 ounces brown sugar (I use a 12 oz coffee mug to measure it in) or 12 ounces white sugar (I use a 12 oz coffee mug to measure it in)

Steps:

  • I NEVER make a 2 pound meat-brick. I am giving the majority of these directions as if I was though. You will have to adjust some of them to the amount you are making.
  • In the coffee mug of sugar, pour in enough BBQ sauce to make a glaze. You can mix it together in a separate bowl. This will be used at the end of the cooking.
  • In a very large bowl, combine everything but the BBQ sauce, eggs,and sugar.
  • Next measure in the 1/4 cup of sugar (you may need to add a little more if you are using more than 2 pounds of beef), 1 eggs per pound of ground beef, and 1/4 cup of BBQ sauce per 2 pounds of beef. Mix. To know when you have this at the right consistancy, shape the mixture into a ball in the bowl. If you can.
  • pick it up, but it oozes over your hands, it is right. If it stays in a ball and seems "stiff", you need to add another egg first and then more BBQ sauce. You want to add the egg first as it will help the brick to hold together. You may also add more spices as needed here.
  • When the meat-brick is to your consistancy (and it is VERY important that it be kinda "runny") put it in a baking dish (NOT a bread loaf pan) large enough to streach it out. If you are making a very large one, you may need to use 2 pans. Place the "blob" in the pan. Streach it out like a "loaf". Be careful not to make it too narrow, or too wide. If it is too narrow, it will dry out, if it is too wide, it be medium-rare in the middle. I don't mind it medium-rare, but my family won't eat it that way.
  • Bake at 350 degrees for 1 hour. Check on it once in a while, and make sure that it isn't drying out. When the hour is up, take your glaze, and pour it over the meat-brick. Cook an additional 5 minutes, or until the glaze is bubbly.
  • I normally serve this with mashed potatoes and green beans.
  • If you hate meatloaf, I can almost bet you will love this!

1 large clove garlic, minced
Salt and pepper to taste
4 thick slices bacon

Steps:

  • Preheat oven to 425 degrees
  • In a bowl, thoroughly combine the ground beef and pork. In a separate bowl, beat the eggs. Stir in the milk and oats. Pour into the meats. Mix thoroughly.
  • Add Worcestershire sauce, tomatoes, celery, onion, green pepper, salt, pepper, herbs and garlic. Mix well.
  • Form into oval loaf in a roasting pan. Sprinkle with salt and pepper to taste and lay the bacon lengthwise on top. Bake 50 minutes.

½ cup ketchup
¼ cup brown sugar
2 tablespoons cider vinegar
cooking spray
1 onion, chopped
½ green bell pepper, chopped

1 teaspoon seasoned salt
½ teaspoon ground black pepper
2 teaspoons prepared mustard
2 teaspoons Worcestershire sauce

⅔ cup quick cooking oats
1 pound ground beef
½ pound ground pork
½ pound ground veal

Steps:

  • Combine ketchup, brown sugar, and cider vinegar in a bowl; mix well.
  • Preheat oven to 350 degrees F (175 degrees C). Spray two 9x5-inch loaf pans with cooking spray or line with aluminum foil for easier cleanup (see Cook's Note).
  • Place onion and green pepper in covered microwave container and cook until softened, 1 to 2 minutes. Set aside to cool.
  • In large mixing bowl, combine garlic, eggs, thyme, seasoned salt, black pepper, mustard, Worcestershire sauce, hot sauce, milk, and oats. Mix well. Stir in cooked onion and green pepper. Add ground beef, pork, and veal. With gloved hands, work all ingredients together until completely mixed and uniform.
  • Divide meatloaf mixture in half and pat half of mixture into each prepared loaf pan. Brush loaves with half of the glaze; set remainder of glaze aside.
  • Bake in preheated oven for 50 minutes. Remove pans from oven; carefully drain fat. Brush loaves with remaining glaze. Return to oven and bake for 10 minutes more. Remove pans from oven and allow meatloaf to stand for 15 minutes before slicing.
