VEGETARIAN FREEZER BURRITO



Vegetarian Freezer Burrito image

This Vegetarian Freezer Burrito is an easy, make-ahead, veggie-packed freezer meal you can have ready when you need it for busy work or school days.

For the cilantro lime rice
1 1/2 cups white rice
2 tablespoons chopped cilantro
1/2 fresh lime, juiced
For the freezer burrito
2 tablespoon olive oil, divided
3 assorted bell peppers, chopped
1 red onion, chopped
1 teaspoon salt, divided
1 teaspoon chili powder
2 cups corn kernels, frozen or fresh
1 (15-ounce) can black beans, drained and rinsed
4 tomatillos, peeled, washed and chopped
1 cup salsa
1 teaspoon ground cumin
8 large (12-inch) flour tortillas
16 ounces pepper jack or cheddar cheese
To serve
Sour cream, for serving
Guacamole , for serving

Steps:

  • Making the cilantro lime rice: Place rice in a fine mesh sieve and rinse well with cold water and add to a medium pot. Cover with 1 inch of cold water and place over medium heat. Once the rice is simmering, give it a stir, turn heat down to low, and cover. Cook until rice has absorbed the water and is tender, 15-20 minutes. There may be extra water, which you should drain off by leaving a space between the lid and pot, then pouring the remaining water out into the sink. Return to the stove off heat, cover, and let the rice steam for 5 minutes. Stir in cilantro and lime juice. Set aside.
  • Freeze the burritos: Transfer burritos to a freezer safe plastic bag or container and store in the freezer for up to 6 months, but ideally use within 3 months.
  • To reheat frozen burritos: To reheat a burrito in the microwave, unwrap it from foil and place on a microwave safe plate. Microwave on defrost for 7 minutes per side or until the burrito is completely thawed. Transfer burrito a nonstick skillet over medium heat-low heat and cook for 3-4 minutes per side or until burrito is nice and crispy. To reheat in an oven, preheat to 400°F. Place the wrapped burrito on a baking sheet and directly in the oven for 45 minutes. Remove and unwrap burrito. Return back to oven for 10 minutes for a crispy tortilla.

4 to 5 drops hot pepper sauce
8 ounces sharp cheddar cheese shredded (about 2 cups) or 2 cups shredded cooked chicken

  • 1. In a medium bowl, mix refried beans, green chilies, onion and garlic, and hot pepper sauce until well blended.2. Meanwhile, wrap tortillas in foil and heat in a preheated 350° oven for 10 minutes or until very soft and pliable.*Using one tortilla at a time, spread about 1/2 cup of the bean mixture on center one-third of tortilla. Sprinkle bean mixture with 1/4 cup of the cheese or chicken. Fold up bottom side, then fold in sides of tortilla to make an "envelope" and roll up. Wrap each burrito individually in foil. Refrigerate up to 24 hours.Bell: Place wrapped burritos on a baking sheet. Bake in a preheated 400° oven for 10 to 15 minutes or until heated through. Freezer Storage: Wrapped burritos can be frozen up to 3 months. Thaw before baking.Microwave Heating: Flour tortillas can be softened in the microwave. Wrap tortillas in a damp towel and microwave at 100% power (700 watts) for 1 1/2 minutes. To heat individual burritos, unwrap as many as desired. Place, one at a time, on a microwavable plate. Microwave at 100% power (700 watts) for 2 minutes or until heated through and cheese melts.

  • Heat oil in a skillet over high heat. Add garlic and onion, cook for 2 minutes until onion is lightly browned. Add beef and cook, breaking it up as you go, until it turns from red to brown.
  • Add Taco Seasoning (or use 1 packet store bought) and cook for 1 minute. Then add tomato paste and water, cook for 3 minutes until the water is mostly evaporated but the beef is still juicy, not dried out. Set aside to cool for 10 minutes – piping hot filling will steam the burrito, making the tortilla soggy.
  • Place a burrito on a work surface. Place 1/4 - 1/3 cup of rice just below the centre. Top with 1/4 - 1/3 cup beef, then some lettuce, corn, black beans, tomato, a sprinkle of red onion, coriander and cheese.
