A great barbecue dish, and a nice alternative to steaks. Really quick to prepare! You can also fry them in a pan. ENJOY!

1 ⅓ pounds ground beef
1 tablespoon plain yogurt
2 teaspoons dried thyme
salt and pepper to taste
4 ounces feta cheese

Steps:

  • Preheat grill for indirect heat.
  • In a large bowl, mix together ground beef, yogurt, thyme, and salt and pepper. Form meat into 8 patties, about 2 to 3 inches in diameter.
  • Cut the cheese into 4 slices. Place one cheese slice between two patties, and seal the edges. Repeat with remaining beef patties and cheese slices. Set bifteki aside.
  • Brush grate with oil, and arrange bifteki on hot grate. Cover, and cook for 15 to 20 minutes, or until meat is cooked through and cheese is melted.

Made from ground meat marinated with aromatic herbs, biftekia are the Greek version of hamburgers, and one of the most traditional dishes in Greek cuisine.

10 oz. ground beef
4 tablespoons breadcrumbs
1 egg
1 teaspoon oregano
½ teaspoon cinnamon
¼ teaspoon dried mint (, reduced to powder)
1 onion (, chopped)
Salt

Steps:

  • In a bowl, combine all the ingredients, kneading the mixture with the hands for 5 minutes.
  • Place the bowl in the refrigerator for 1 hour.
  • Divide the meat into 8 portions and roll them up.
  • Flatten each meatball to form the biftekia, a kind of small hamburger.
  • Cook the biftekia on each side in a lightly oiled grill or cast iron pan over medium to high heat.
  • Serve with a green salad and fries.

Who doesn't love a good burger? Especially if it's homemade, healthy and Paleo-friendly - infused with traditional Greek flavors and spices.

1 lb 85% lean ground grass-fed beef
¼ cup almond meal / flour
1 egg
¼ t garlic powder
¼ t onion powder
1 t dried oregano
1 t dried basil
½ t black pepper
½ t sea salt
2 T fresh dill, finely chopped
5 oz package of spinach
2 T grass-fed butter
2 T olive oil

Steps:

  • In a large mixing bowl, combine beef, egg, almond meal and seasonings.
  • Mix well with hands to combine.
  • Form mixture into patties using a ⅓ cup measuring scoop.
  • Heat olive oil in a large pan over medium heat. Place beef patties on pan and cook five minutes on each side.
  • While patties cook, melt butter in a separate pan. Add spinach and sauté five minutes.
  • Serve patties over spinach.

1 small onion grated
3-4 tablespoons breadcrumbs

1 teaspoon dry mint
1 teaspoon dry oregano

Steps:

  • Place the beef in a bowl.
  • Add all the ingredients to the beef and knead with your hands until all the ingredients are well mixed and blended with the meat for about 5 minutes.
  • Cover the bowl and let the meat sit in the refrigerator for about an hour.
  • Remove the beef 10 minutes before cooking. Form in 5 patties (these are made slightly smaller than a hamburger). Flatten them.
  • Heat the grill pan, Place the patties and cook for about 4 minutes on each side.
  • Serve with a squeeze of lemon.

2 small onions, finely chopped
2 garlic cloves
1 bunch parsley (1/2 cup chopped)
1 and ½ cups unseasoned bread crumbs
1 cup milk
½ cup shredded parmesan cheese, optional
2 eggs
2 teaspoons dried oregano
Salt and freshly ground black pepper, to taste
¼ teaspoon crushed red pepper flakes, optional
8 potatoes, cut into ¾ inch thick slices, soaked in cold water
½ cup olive oil
¼ cup fresh lemon juice
1 tablespoon mustard
1-2 teaspoons salt, or to taste
Freshly ground black pepper
2 teaspoons dried oregano
Pinch of crushed red pepper flakes
¼ teaspoon cumin powder
2 cups of water
fresh parsley leaves, or chopped

Steps:

  • Directions Preheat the oven to 400 °F, 200 °C. To Make the Meatballs: Chop the garlic in the food processor until minced. Add the parsley and pulse until finely chopped. Add the onions to the food processor and pulse until finely chopped. Whisk the milk and egg together. In a large mixing bowl, combine all of the meatball ingredients and knead well to combine and evenly distribute everything. Form golf-sized meatballs or into burger patties. To put it all together: Drain the water from the potatoes and place the slices in a 9 by 13-inch baking dish or lasagna pan. Combine the olive oil, mustard, grated garlic, and lemon juice in a mixing bowl. Whisk well to combine. Pour this marinade over the potatoes. Season them with salt, pepper, cumin, and oregano. Toss to coat. Pour the water over the potatoes making sure that they are covered halfway. Add more water if needed. Place the meatballs/patties on top of the potatoes. Cover with foil and bake for 40 minutes. Remove the foil and bake an additional 35-40 minutes, uncovered, or until the potatoes are fork-tender and the meatballs/patties are golden. Garnish with fresh parsley. Enjoy!

1 teaspoon dried oregano
1-pound ground beef
1 medium onion, quartered
3/4 cup Panko bread crumbs
1/2 cup milk
1/4 cup shredded parmesan cheese, optional
1 bunch fresh parsley
1 garlic clove, minced
1 egg, beaten
1 teaspoon dried oregano
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
28 ounces canned tomatoes, pureed
½ cup olive oil
1 small onion, finely chopped
1 garlic clove, grated
¾ teaspoon sugar, or more
1 bay leaf
½ teaspoon ground cinnamon
½ teaspoon dried oregano
Salt and black pepper, to taste
Pinch of crushed red pepper flakes
fresh basil or parsley, chopped

Steps:

  • Preheat the oven to 400 °F, 200 °C.
  • To Make the Sauce:
  • In a saucepan, combine the chopped onions and oil and cook over medium heat for about 10 minutes or until they are soft and golden. Add the grated garlic and stir to warm through.
  • Add all of the remaining sauce ingredients and cook over medium heat until thickened. About 10-15 minutes.
  • Taste and adjust seasoning if needed.
  • To Make the Meatballs:
  • Chop the garlic in the food processor until minced. Add the parsley and pulse until finely chopped.
  • Add the onions to the food processor and pulse until finely chopped.
  • Whisk the milk and egg together.
  • In a large mixing bowl, combine all of the meatball ingredients and knead well to combine and evenly distribute everything.
  • Form golf -sized meatballs or into burger patties.
  • To put it all together:
  • Place the potato wedges in a 9 by 13-inch baking dish or lasagna pan. Season them with salt, pepper, and dried oregano.
  • Pour half of the tomato sauce over the potatoes.
  • Place the meatballs over the potatoes and pour the remaining sauce over them.
  • Cover with foil and bake for 40 minutes.
  • Remove the foil and bake an additional 35-40 minutes, uncovered, or until the potatoes are fork tender.
  • Enjoy!

1 cup shredded cucumber, seeds discarded
2 cups plain Greek yogurt (see Cook's Notes)
2 to 3 cloves garlic, minced
6 sprigs fresh dill, chopped
3 tablespoons white wine vinegar
4 tablespoons extra-virgin olive oil
Salt and pepper, optional
1 1/2 pounds ground beef, 15 to 25-percent fat (the fattier, the tastier)
1 medium red onion, finely chopped
35 fresh mint leaves, chopped
1/2 pound manouri cheese, crumbled, or feta cheese
2 long baguettes, each one cut into 3 equal pieces, sliced open
1 to 3 tomatoes, depending on type or size, sliced
1 medium red onion, thinly sliced
Salt and pepper
Spanish smoked paprika, optional

Steps:

  • For the tzatziki: Place the cucumber into a strainer or colander over a bowl and squeeze with your hands the shredded cucumber to release the liquid. When the liquid comes to a slow drip, set the strainer into a bowl and set the bowl in the refrigerator to continue to slowly drip for 30 minutes. Make sure the bottom of the strainer does not touch the bowl. (The purpose of straining the cucumber is important to retain the thick consistency of tzatziki sauce. You can either discard the cucumber liquid or reserve it to make a refreshing cucumber water drink.)
  • Empty the yogurt into a medium bowl. Add the strained cucumber along with the garlic, dill, vinegar and oil into the bowl and gently mix with a whisk. When all the ingredients are equally distributed, your tzatziki sauce is ready. Season with salt and pepper, if using. (Sauce can be prepared a day in advance and refrigerated.)
  • For the bifteki: In a medium bowl, add the ground beef, red onion and mint leaves. With your hands, work in all the ingredients until everything is equally distributed. Then add the crumbled cheese and mix, being careful not to overwork the mixture. You want the cheese to stay relatively chunky. Form into a loaf and cut into 6 equal pieces, about 5 ounces each. Form each piece into an oval-shaped meatball and then pat down to form an oval shaped patty. (Patties can be prepared a day in advance and refrigerated.)
  • For the sandwich: Cook each patty on a hot charcoal grill or broiler for 2 to 3 minutes on each side until desired temperature is reached. (I like this patty cooked to medium, unlike my burgers that I prefer on the rare side.)
  • Lightly toast the baguettes on the grill, if desired. Remove from the heat and then spread 1 tablespoon of tzatziki sauce on the top half of each baguette piece. When the patties are ready, remove from the heat and cut on a bias into 3 equal parts. Spread the cut pieces over the bottom half of the toasted baguette. Top the patty with sliced tomatoes and sliced red onions. Sprinkle some salt and pepper and Spanish smoked paprika, if using. Press both sides of the baguette together and enjoy.

  • To prepare this Greek bifteki recipe, add in a large bowl the minced beef along with the rest of the ingredients and mix thoroughly with your hands. If the mixture is too sticky add some more breadcrumbs (or some water if it is to dry), till the mix is solid. If you have the time, it is better to knead the mixture for about 10 minutes, until all the ingredients combine. Alternatively, you can mix it using an electric mixer, with the dough hook at low speed.
  • When done, put the mixture for the burgers (bifteki) in the fridge to rest for about 10 minutes, whilst preheating the oven to 200C.
  • Knead the mixture in flat round burgers. Place the biftekia on a large baking tray and cook in the oven for 18 minutes, flipping the burgers, mid-through cooking time. Top each bifteki with a slice of tomato and a small block of feta cheese and bake further for 7 minutes.
  • Serve the biftekia, while still hot with a drizzle of extra virgin olive oil and sprinkle a pinch of dried oregano. Enjoy!

  • Combine the ground meat(s), garlic, mint, oregano, salt and pepper in a mixing bowl and knead well.   • Divide the ground meat mixture into 8 equal parts. Rub the palms of your hands with a little olive oil and shape each portion into a burger. Using your thumb, make an indentation in each burger and fill with the spicy feta ball. Pinch together the meat to seal the indentation, so that the feta is not exposed.
