1 1/4 pounds ground beef (preferably chuck)
Kosher salt and freshly ground pepper
2 teaspoons extra-virgin olive oil, plus more for brushing
1 small red onion, halved and thinly sliced
1 8-ounce package sliced mixed mushrooms
1 tablespoon Worcestershire sauce
1/4 cup ketchup
2 teaspoons dijon mustard
4 thin slices gruyere cheese
4 sesame buns, split and toasted
Boston or Bibb lettuce, for topping
Potato chips and/or pickles, for serving (optional)

Steps:

  • Preheat the broiler and line the bottom of a broiler pan with foil. Lightly mix the beef with 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Gently form into 4 patties, about 3/4 inch thick. Arrange on the prepared pan and brush both sides with olive oil. Broil until browned, about 4 minutes per side for medium rare.
  • Meanwhile, heat 2 teaspoons olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring, 2 minutes. Add the mushrooms and cook 2 more minutes. Add the Worcestershire sauce and cook until the vegetables are tender, about 2 more minutes. Season with salt and pepper and remove from the heat. Combine the ketchup and mustard in a small bowl and set aside.
  • Top each patty with one-quarter of the mushroom mixture and 1 slice cheese. Return to the broiler to melt the cheese, about 1 minute.
  • Spread the buns with the ketchup mixture; sandwich with the patties and some lettuce. Serve with chips and/or pickles.

1 pound sliced fresh mushrooms
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup water
6 slices Swiss cheese
6 hamburger buns, split

Steps:

  • Shape beef into six patties. In a large skillet, cook patties over medium-high heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Remove to paper towels; drain, reserving 2 tablespoons drippings. Saute mushrooms in drippings until tender. , Meanwhile, in a microwave-safe bowl, combine soup and water. Cover and microwave on high for 2-1/2 to 3-1/2 minutes or until heated through. , Return patties to the skillet. Stir in soup mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 3 minutes. , Top each patty with a slice of cheese. Remove from the heat; cover and let stand until cheese is melted. Serve on buns topped with mushrooms.

¼ cup chopped onion
1 clove garlic
1 pound ground chicken breast
2 teaspoons chicken soup base (such as Better than Bouillon® Roasted Chicken Base)
salt and ground black pepper to taste
5 sandwich buns

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x13-inchbaking pan with avocado oil.
  • Combine mushrooms, spinach, onion, and garlic in the bowl of a small food processor or blender and pulse several times until chopped into very small pieces, but not pureed.
  • Place ground chicken in a bowl. Add chopped vegetables, chicken base, salt, and pepper. Mix until vegetable pieces are evenly distributed. Divide mixture into 5 evenly sized portions and shape into patties.
  • Place patties onto the prepared baking sheet and lightly brush with remaining avocado oil.

Steps:

1 shallot, finely chopped
2 tablespoons Dijon mustard
10 basil leaves, shredded (or torn)

2 tablespoons extra virgin olive oil
20 white button mushrooms, thinly sliced
2 garlic cloves, minced
1/2 cup dry white wine
4 slices swiss cheese
4 kaiser rolls or 4 sandwich-size sourdough english muffins, split and toasted
4 leaves red leaf lettuce
1 vine-ripe tomatoes, thinly sliced

Steps:

  • Preheat a large nonstick skillet over med-high heat.
  • Arrange the defrosted chopped spinach in the center of a kitchen towel; wrap the towel around the spinach and squeeze out the excess liquid.
  • Put the spinach in a bowl and combine with chicken, shallots, 2 tablespoons dijon mustard, basil, parsley, salt, and pepper.
  • Divide meat into 4 equal portions; make 4 large patties, ¾ to 1-inch thick.

3 tablespoons olive oil, plus more as needed
2 cloves garlic, sliced
1 shallot, minced
8 ounces fresh button mushrooms, roughly chopped
1/2 cup white wine or chicken stock
1 pound ground chicken
6 tablespoons dry breadcrumbs
2 large eggs, beaten
2 tablespoons chopped fresh basil
1 teaspoon kosher salt
Freshly ground pepper
1 beefsteak tomato
1/4 cup grated Parmesan
4 burger rolls
3 tablespoons unsalted butter, softened, to spread on the rolls
Dijon mustard, for spreading
Lettuce leaves, for serving

Steps:

  • Heat 2 tablespoons of the olive oil in a large saute pan over medium heat. Add the garlic and shallot and cook, stirring frequently, until softened, about 1 minute. Add the mushrooms and wine or stock and simmer until the pan is completely dry, about 7 minutes. Continue cooking until the mushrooms are lightly browned, about 1 minute. Set aside to cool.
  • Combine the cooled mushroom mixture, ground chicken, breadcrumbs, eggs, basil, salt and some pepper in a large bowl. Blend well and then form into 4 patties. Cook the patties in a saute pan over medium to medium-high heat with the remaining 1 tablespoon olive oil, 4 to 5 minutes per side. (Or cook on the grill, or roast in a 425 degree F oven, until cooked through, about 12 minutes.)
  • Cut the tomato into 4 thick slices and place on a baking sheet. Top each tomato slice with 1 tablespoon of the grated Parmesan. Split the 4 rolls, spread with softened butter and arrange cut-side up on the baking sheet with the tomatoes. Broil until the buns are toasted and the cheese is slightly melted, keeping a careful watch to prevent burning.
  • Spread one side of the toasted buns with Dijon mustard before assembling the burgers and topping with lettuce.

1 ounce dried porcini or shiitake mushrooms
4 ounces Parmesan (about 1 cup grated)
2 cloves garlic, peeled
1 teaspoon freshly ground black pepper
Pinch salt
1 1/2 pounds boneless, skinless chicken or turkey breasts
2 tablespoons olive oil or butter

Steps:

  • Put the dried mushrooms in a bowl, and cover with hot water.
  • Cut Parmesan into chunks; put it in container of food processor with garlic; process until grated (if Parmesan is already grated, just pulse a couple of times).
  • Add the pepper, salt and chicken or turkey and pulse the machine on and off until the mixture is chopped but not pureed.
  • Squeeze excess water from mushrooms, but do not wring them completely dry, and add to the machine. Pulse two or three more times, until mixture is more or less combined but, again, not pureed.
  • Put olive oil in a 12-inch nonstick skillet, and turn heat to medium. Wait a couple of minutes, then shape chicken mixture into 8 small burgerlike cakes. Cook 3 minutes a side, or until nicely browned. Do not overcook; when burgers are firm, they are done. Serve hot or at room temperature.

The burgers themselves were super easy to put together, I 'd even suggest doing so ahead of time. Ground chicken doesn't grill well because of the lack of fat, so stick with a frying pan.
