OATMEAL COOKIES
Big, soft, classic oatmeal cookies that taste like they came fresh from a bakery!Be sure to check out the how-to VIDEO below the recipe (and don't judge me too harshly because it was my first ever time in front of the camera!).

Steps:
- Beat butter in the bowl of a stand mixer (or using an electric beater) for about 30 seconds. Add sugars and beat until light and fluffy (pause to scrape down sides and bottom of bowl, if needed).
- Add eggs, one at a time, beating until combined.
- Stir in vanilla extract.
- In a separate bowl, whisk together flour, cornstarch, baking soda, salt, and cinnamon.
- Gradually add flour mixture to butter mixture until completely combined. Be sure to scrape the sides and bottom of the bowl so ingredients are well-mixed.
- Gradually stir in oats until completely combined. If using raisins or chocolate chips, stir them in at this point.
- Chill dough in refrigerator for 30 minutes.
- Preheat oven to 375F (190C) and prepare cookie sheets by lining with parchment paper.
- Drop cookie by rounded 2-3 Tablespoon-sized ball onto parchment paper, spacing at least 2" apart.
- Bake on 375F (190C) for 10-12 (edges should be slightly browned, centers may still be slightly underbaked but shouldn't be raw, they'll bake completely as they cool).
- Allow cookies to cool completely on cookie sheet before serving and enjoying.

OLD FASHIONED OATMEAL COOKIES
Steps:
- HEAT oven to 350 degrees F. Coat baking sheets lightly with no-stick cooking spray.
- COMBINE shortening, brown sugar, egg, milk and vanilla in bowl of electric mixer; beat at medium speed until well blended.
- COMBINE oats, flour, baking soda, salt and cinnamon. Mix into shortening mixture at low speed just until blended. Stir in raisins and walnuts. Drop by rounded measuring tablespoonfuls of dough 2 inches apart onto prepared baking sheets.
- BAKE 8 to 10 minutes or until lightly browned. Cool 2 minutes on baking sheets. Place on cooling racks to cool completely.
GRANDMOTHER'S OATMEAL COOKIES
This is the best Oatmeal Cookie I have ever tasted and is my family's favorite. This is a recipe that I have had for years that a friend of mine gave me.

- Beat eggs, and stir in raisins and vanilla. Refrigerate for at least an hour.
- Preheat oven to 350 degrees F (175 degrees C).
- Cream together shortening, brown sugar, and white sugar until light and fluffy. Combine flour, baking soda, salt, and cinnamon; stir into the sugar mixture. Mix in raisins and eggs, then stir in oats and walnuts. Roll dough into walnut sized balls, and place 2 inches apart on ungreased cookie sheets.
- Bake for 10 to 12 minutes in preheated oven, or until edges are golden. Cool on wire racks.

Steps:
- Heat oven to 350°F - you will need 3 baking sheets lined with parchment paper (again the parchment keeps the cookie from burning and makes clean up faster).
- Whisk together flour, baking powder, soda and salt.
- Beat together with mixer at low speed - butter and sugar until the sugar granules are not visible. Increase speed and beat 1 minute longer, scrape sides as needed and add egg, beat another 30 seconds. Add flour mixture 1/3 at a time and incorporate well over med speed until mixture is smooth. Add oatmeal and stir into the dough using your rubber spatula.
- Divide into 24 equal portions and bake for 13 to 16 minutes placing only one cookie sheet in the oven at a time and rotating the cookie sheet half way through your cooking time -- these are the best and the thinnest cookies and very crispy.

- In a saucepan, cook raisins in water over medium heat until plump, about 15 minutes. Drain, reserving liquid. Add enough water to liquid to measure 1/2 cup. In a bowl, cream shortening, sugar, eggs and vanilla. Stir in raisin liquid. Blend in dry ingredients. Stir in raisins and oats. Add nuts if desired. , Drop by teaspoonfuls about 2 in. apart onto ungreased baking sheets. Bake at 375° for 10 to 12 minutes or until light brown.

BIG OLD FASHIONED OATMEAL COOKIES
Came across this recipe on www.crisco.com. I reduced sugar to 1 cup, substituted sunflower seeds for chopped pecans, and added raisins. I make these bi-weekly and that's just enough time in between. Really good tasting, I store in freezer bags for the lunch-box, and so I don't eat all of them! Enjoy! :)

- Heat oven to 350ºF
- In the bowl of an electric mixer combine shortening and sugar. Beat at medium speed until well blended. Beat in eggs and vanilla.
- In a medium bowl combine flour, salt, baking powder, cinnamon and baking soda. Mix into creamed mixture at low speed until blended. Stir in oats, sunflower seeds, sesame seeds, coconut and raisins with spoon.
- Drop rounded tablespoonfuls of dough 2 inches apart onto ungreased baking sheets lined with parchment, and flatten with fork -- 6 to a sheet, these expand and are large.
- Bake for 10 to 13 minutes, or until lightly browned. Remove immediately to cooling rack.
