BLACK-EYED PEA LUCKY DIP

Three ingredients and 20 minutes is all it takes to have a year of good-tasting good luck! I serve this every New Year's Day to a grateful family who otherwise turn up their noses at black-eyed peas. The rule is: You have to eat at least 3 peas for a year of good luck.

1 (15 ounce) can black-eyed peas, drained, rinsed
1 (15 ounce) can diced tomatoes with green chilies, drained, liquid reserved (Ro-Tel is one brand)
1 (1 lb) package Velveeta cheese or 1 (1 lb) package other process American cheese

Steps:

  • Combine the peas and tomatoes in a saucepan and set over low heat.
  • Cut the Velveeta into 1-inch hunks and add to the pan. Cook, stirring occasionally, until the Velveeta melts. This is a slow process -- for the first 10 minutes, it looks as if it will never happen. But don't be tempted to turn up the heat, as the mixture burns easily. (Trust me on this.).
  • Remove from heat and serve. The mixture may seem thin at first, but it thickens well over time, and as it is reheated. Serve with tortilla chips or scoop-shaped corn chips.
  • Eventually the dip gets so thick that chips break as you scoop it, so add a little of the reserved tomato liquid, if needed.

Black-eyed peas and tomatoes quickly prepared on the grill make an ideal side for Blackened Chicken.

2 teaspoons extra-virgin olive oil
2 garlic cloves, minced
2 scallions, white and green parts separated and thinly sliced
Coarse salt and ground pepper
3 tomatoes, chopped (about 4 cups)
2 cans (14.5 ounces each) black-eyed peas, rinsed and drained
1/4 cup water

Steps:

  • Place a large piece of foil directly over heat source on grill. Place a medium ovenproof pot on foil and heat until warm. Add oil, garlic, and scallion whites, and season with salt and pepper. Cook, stirring, until scallions begin to soften, about 2 minutes. Add tomatoes, black-eyed peas, and water. Season with salt and pepper. Cook, stirring occasionally, until tomatoes begin to break down, about 10 minutes. Add scallion greens and serve.

While I was watching the Florida-Cincinatti 2010 Bowl game annd eating Blackeyed peas and stewed Tomatoes. I was hit with this idea for a dip. I made it in less than 20 minutes and it was great. I hope you try it and add your own touches. This is really a orginal but man its good. Try it !

2 cups black-eyed peas
3/4 cup stewed tomatoes
1 slice white bread
8 ounces cream cheese
1 cup romano cheese, shredded
1 teaspoon cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon garlic salt

Steps:

  • Take bread and dip it in some black eye pea and stewed tomato combined juice and put it in Food Processor. Add remaining ingredients to food processor and mix till totally combined. Use Corn Chips, Bagel Chips, Potato Chips or Fritos and dip to your hearts content because the Blackeyed Peas are good for you. Enjoy all year long.
