JULIA'S SOUTHERN HOT DOG CHILI SAUCE
Delicious Southern style hot dog chili sauce is the perfect topping for hot dogs. Everyone enjoys my signature recipe for hot dog chili and I know you will too.

Steps:
- Cover the ground beef with water and break up the meat completely. Next, add the beer (if using), diced onion, Worcestershire, ketchup, hot sauce sauce and spices and start on Medium High to bring to a rapid boil.
- Reduce and simmer. You can cook it down faster if needed on a higher temperature, just until most water is reduced. Stir occasionally.
- When water is reduced, add tomato paste to thicken. Stir to incorporate.
- Serve as a hot dog topping.
- Leftover chili sauce freezes well.

Steps:
- In a large saucepan, brown the garlic and onion. Cook until fragrant and light brown.
- Add the ground beef and cook until there's no more pink in the meat.
- Once the meat is just cooked, add in the crushed tomatoes, beef broth, brown sugar, apple cider vinegar, cumin, garlic salt, and pepper. Stir to combine.
- Let the chili simmer on medium-low and reduce for 15 minutes.
- Serve the chili on top of hot dogs and garnish with shredded cheddar cheese and chopped red onions.

- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add beef broth to ground beef; bring to a boil. Reduce heat to medium-low and simmer until liquid is slightly reduced, about 30 minutes.
- Mix tomatoes with puree, chili powder, paprika, onion powder, garlic powder, salt, and cayenne pepper into ground beef mixture. Simmer, stirring occasionally, until mixture is very thick, about 1 1/2 hours.

WILD BILL'S HOT DOG CHILI

Steps:
- Heat a large pot over medium-high heat and add the olive oil and onions, stirring often until softened. Add the beef and brown, pouring off the excess fat if desired. Stir in 1 cup water, the chili powder, cumin and salt. Add another cup water and mix thoroughly. Cook on medium-high for 30 minutes, then add the saffron.
- Simmer uncovered, stirring occasionally, until the meat is tender and the sauce is reduced and thickened, 1 1/2 to 2 hours. Cover and let cool to room temperature and then blend thoroughly in a food processor. Top the hot dogs with the chili and serve.
