BIRD'S NEST PIE
When we were kids, our favorite dessert at Grandma's house was Bird's Nest Pie. Maybe we were fascinated by the name of the treat, but that can't be the only reason we liked it-there were never any leftovers! This family recipe was handed down from my great-grandmother.

Steps:
- Divide apples evenly between two greased 9-in. pie plates; set aside. In a bowl, combine flour, sugar, baking soda, cream of tartar, buttermilk and egg; mix well. Divide batter and pour over apples. Bake at 350° for 25-30 minutes or until pies are lightly browned and test done. Invert onto serving plates (so apples are on the top). Combine all topping ingredients; sprinkle over apples. Serve warm.

BIRD'S-NEST PUDDING PIE
We like to think of this dessert as the turducken of pies -- spiced, cranberry-stuffed apples are baked in a pie shell, surrounded by cake batter. It's inspired by the bird's-nest pudding in Laura Ingalls Wilder's classic "Farmer Boy."

- Preheat oven to 375 degrees. On a lightly floured work surface, roll out dough 1/8 inch thick. Cut out a 13-inch round. Fit into bottom and up sides of a 9-inch springform pan. Freeze 15 minutes.
- Blind-bake crust: Line chilled crust with parchment and then foil, pressing into corners to hold up sides. Fill with baking beans or rice. Bake until sides are set and beginning to turn golden, 45 minutes to 1 hour. Remove paper and beans from crust and continue baking until bottom crust is golden brown and dry, about 10 minutes more.
- Meanwhile, stir together 1/2 cup sugar, 1/2 cup cranberries, cinnamon, nutmeg, and 1/4 teaspoon salt. Peel apples; scoop out cores from stem ends with a melon baller or a sharp-tipped spoon, leaving bottom ends intact. Fill hollows with 1 heaping tablespoon cranberry mixture, pressing down to fit as much in as possible and mounding slightly over tops. Transfer to an 8-by-8-inch baking dish. Dot with room-temperature butter. Thirty-five minutes before crust is done, place in oven and bake 25 minutes, turning apples halfway through so sides facing edge of dish face in. Cover with foil and bake until apples are just barely tender when pierced with the tip of a knife, 5 to 10 minutes more. Toss remaining 1/4 cup cranberries with juices in bottom of dish.
- Meanwhile, whisk together flour, baking powder, and remaining 1/4 teaspoon salt. In a separate bowl, whisk egg yolk with remaining 1/2 cup sugar until combined. Whisk in flour mixture, then melted butter and milk. Beat egg whites until stiff peaks form, then gently fold into batter.
- Pour batter into warm crust. Nestle apples into batter, spooning cranberries and 2 tablespoons of juices from dish over top. Return to oven; bake until pie is puffed and beginning to turn golden on edges, and springs back when pressed in center, 30 to 40 minutes. Let cool at least 45 minutes. Serve warm, with ice cream.

- In a large saucepan over medium heat, melt butter and marshmallows until smooth, stirring occasionally. Add the peanut butter and chocolate chips; heat and stir for 2 minutes or until smooth. Remove from the heat; stir in chow mein noodles until well coated. , Divide into 12 mounds on a waxed paper-lined baking sheet. Using fingers, shape each into a nest; press an indentation in the center of nest. Fill each nest with three or four jelly beans or candy eggs. Cool.

BIRDS' NESTS IV

- Separate the eggs. Chop the nuts fine.
- Cream together 1 cup softened butter and sugar. Add the yolks, and beat well. Add the flour, and mix well.
- Make small balls out of dough. Roll balls in egg white, and then in the nuts. Place balls on greased cookie sheets, and press center of cookie with thumb. Bake at 350 degrees F (175 degrees C) for 8 minutes. Press center of cookie again, bake until lightly browned 4 to 6 minutes. Cool cookies on racks.
- To make frosting, begin by blending the water, shortening, vanilla, and 1/4 cup softened butter or margarine together thoroughly. Slowly add confectioners' sugar, and mix until smooth and creamy. More water may be needed to make desired consistency.

Steps:
- Break spaghetti in half, and cook as directed on package until al dente; drain.
- While spaghetti is warm, combine with flax seed, 6 tablespoons water, and Parmesan chees.
- Use a spoon to press spaghetti into bottom and up sides of a well-greased, 10-inch pie plate.
- Saute onion in margarine, mix with sour cream, and spread over crust.
- At same time, brown sausage in a large skillet; drain fat.
- Stir in tomato paste and water. Bring to a boil; reduce heat. Simmer, uncovered, for 10 minutes, stirring occasionally.
- Spoon over sour cream mixture.
- Cover dish with foil and freeze. Put cheese slices in a 1-quart bag; attach to side of dish.
- To prepare for serving, thaw pie and cheese, preheat over to 350 degrees. Bake pie, uncovered for 25 miutes. Arrange mozzarella slices on top; return pie to oven until cheese melts.
BIRDS NEST PIE
Here's an easy one for ya. Plain and simple. I usually thinly slice the apples with the slicing disc on my food processor and away they go. Enjoy with a dip of your favorite ice cream.

- Place a very large nonstick skillet over low heat. Add the oil and garlic clove into the skillet and gently infuse the garlic flavor into the oil. In the meantime, using a round cookie cutter or an empty can, cut out the center of all 6 slices of bread. Add the prepared bread slices to the garlic infused oil. Crack the eggs 1 at a time and drop them into their "nests" or, the center of each slice of bread. Drain and slice red pepper. Add a strip or 2 of red pepper to each nest. Season the birds in their nests with salt and pepper and sprinkle a little cheese into each nest. Gently turn the birds in their nests and turn off the heat. Let the eggs sit in their nests 5 minutes more, then transfer to a platter and serve.

- 1. Preheat oven to 300 degrees. Spread coconut on non-greased cookie sheet. Toast in oven, stirring occasionally, until it turns light golden, about 25 minutes.
- 2. Remove coconut from cookie sheet and set aside.
- 3. Increase oven temperature to 350 degrees. In large bowl, add butter and sugar and whip until light and fluffy; beat in egg and vanilla.
- 4. In medium bowl, combine flour and salt. Blend into creamed mixture.
- 5. Form dough into 1-1/4-inch balls. Roll heavily into toasted coconut.
- 6. Place coconut cookies 2 inches apart on lightly greased cookie sheets. Make indentation with thumb in center of each cookie. Bake 12 to 14 minutes or until golden brown.
- 7. Remove cookies and cool completely. Fill indentations with M&M'S® Brand Speckled Milk Chocolate Eggs.

- In a medium bowl, mix together spaghetti, cauliflower puree, cheese, cornstarch, salt, and flaxseed.
- Set a large nonstick skillet over medium-high heat. Add 1/2 teaspoon canola oil. Take one sixth of the pasta and form into an "O" shape, leaving a 2 1/2-inch opening in the center. Cook until brown, 2 to 3 minutes.
- Carefully turn spaghetti mixture over and crack 1 egg into the center of the "O," taking care not to break the yolk. Cover and cook until egg is set and cooked to desired degree of doneness, 2 to 3 minutes more.
- Keep warm and repeat process with remaining pasta mixture and eggs. Sprinkle with salt before serving.

PISTACHIO BIRD'S NESTS
Make these pistachio 'bird's nests', made with kataifi pastry (a very finely shredded filo pastry available online) and a lemon sugar syrup for a sweet treat

- Soak the pistachios in water for 30 mins. Dissolve the sugar in 500ml water in a pan over a medium heat, then bring to a boil and bubble for 15-20 mins or until reduced and lightly syrupy. Stir in the lemon and boil for a minute more.
- Cover the kataifi with a damp cloth so it doesn't dry out. Take a finely twisted 30cm length of pastry and wrap it in a circular motion around two fingers into a nest shape. Transfer to a baking tray, then repeat with the rest of the pastry.
- Drain the pistachios and gently press four or five into the middle of each nest. Cover the nests with a layer of baking parchment, then put another baking tray on top and put a 1kg weight on top. Leave at room temperature for 1 hr, then remove the parchment and leave for another hour to dry out.
- Heat the oven to 220C/200C fan/gas 7. Pour the butter over and around the nests, so that they're sitting in a layer of melted butter. Cook for 20-25 mins until golden brown, turning the tray from time to time to make sure the nests are evenly coloured. Leave to cool for 10 mins, then transfer to a clean baking tray and pour over the syrup. Leave to cool completely in the syrup, then serve.
