BIRTHDAY CAKE COOKIES
Birthday Cake Cookies are soft, chewy, buttery, and filled with white chocolate chips and sprinkles. These cookies have that classic birthday cake flavor, without the need for a boxed cake mix - they're made entirely from scratch!

Steps:
- In a large bowl, cream together butter and sugars. Add eggs, vanilla extract, and almond extract. Beat for 1-2 minutes, mixture will look fluffy.
- In a separate bowl, whisk (or sift) together the flour, salt, and baking soda.
- Gradually stir dry ingredients into butter mixture until just combined.
- Add white chocolate chips and sprinkles and stir until just combined.
- Cover bowl or wrap dough in wax paper. Chill for at least 1 hour (up to 24 hours) in the refrigerator. Refrigerating will help the flavors meld and also create a firmer dough to roll into balls.
- Preheat oven to 350 degrees.
- Remove dough from refrigerator. Scoop dough using a 1.5 tablespoon scoop or shape by hand into 1.5 inch balls.
- Place cookie dough balls 2 inches apart onto a parchment lined baking sheet. Bake for 10-12 minutes, or until lightly browned around edges. Allow to cool for 5 minutes before removing to a wire rack to cool completely.

I got this out of my JC Penny/United Way Cookbook 1996. I've made this several times when the boys were younger - they loved it and they loved helping decorate them.

Steps:
- Cream butter and sugars.
- Add egg and vanilla.
- Mix on low speed, add dry ingredients.
- Mix well. Stir in Chocolate Chips or M&Ms.
- Spray a 12 inch round pizza pan with Pam and spread cookie dough evenly to the edges.
- Bake at 325 degrees F for 15 to 20 minutes, or until light golden brown.
- When cool, decorate as desired.

- Mix cake mix, eggs, and vegetable oil together in a large bowl to form a dough.

- Heat oven to 350°F. In large bowl, stir cake mix, rainbow candy sprinkles, butter, milk and egg until soft batter forms. Scoop 20 tablespoonfuls of batter onto ungreased large cookie sheet.
- Bake 8 to 10 minutes or just until cookies are set. Remove from cookie sheet; cool completely.
- Spread frosting on bottom of 1 cookie; top with second cookie, bottom side down.
- Roll edges of frosting in confetti candy sprinkles. If desired, top each with a birthday candle.

- Heat oven to 350°F.
- In large bowl, beat cream cheese, softened butter and 1/2 cup of the frosting with electric mixer on medium speed about 1 minute or until well blended; scrape side of bowl. Beat in egg and vanilla until smooth. On low speed, beat in cake mix until blended. Stir in 1/4 cup of the sprinkles. Drop dough by rounded tablespoonfuls 2 inches apart on ungreased cookie sheets.
- Bake 11 to 14 minutes or until edges are light golden brown. Cool on cookie sheet 2 minutes; remove to cooling rack. Cool completely, about 20 minutes.
- In small microwavable bowl, microwave remaining 1/2 cup frosting uncovered on High 5 to 10 seconds, stirring until melted and smooth. Drizzle with fork over tops of cookies. Add remaining sprinkles over tops. Let stand until frosting is set, about 1 1/2 hours. Store in airtight container at room temperature.
