CHICKEN PARMESAN

My version of chicken parmesan is a little different than what they do in the restaurants, with less sauce and a crispier crust.

4 skinless, boneless chicken breast halves
salt and freshly ground black pepper to taste
2 eggs
1 cup panko bread crumbs, or more as needed
½ cup grated Parmesan cheese
2 tablespoons all-purpose flour, or more if needed
1 cup olive oil for frying
½ cup prepared tomato sauce
¼ cup fresh mozzarella, cut into small cubes
¼ cup chopped fresh basil
½ cup grated provolone cheese
¼ cup grated Parmesan cheese
1 tablespoon olive oil

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/2-inch. Season chicken thoroughly with salt and pepper.
  • Beat eggs in a shallow bowl and set aside.
  • Mix bread crumbs and 1/2 cup Parmesan cheese in a separate bowl, set aside.
  • Place flour in a sifter or strainer; sprinkle over chicken breasts, evenly coating both sides.
  • Dip flour coated chicken breast in beaten eggs. Transfer breast to breadcrumb mixture, pressing the crumbs into both sides. Repeat for each breast. Set aside breaded chicken breasts for about 15 minutes.
  • Heat 1 cup olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken until golden, about 2 minutes on each side. The chicken will finish cooking in the oven.
  • Place chicken in a baking dish and top each breast with about 1/3 cup of tomato sauce. Layer each chicken breast with equal amounts of mozzarella cheese, fresh basil, and provolone cheese. Sprinkle 1 to 2 tablespoons of Parmesan cheese on top and drizzle with 1 tablespoon olive oil.
  • Bake in the preheated oven until cheese is browned and bubbly, and chicken breasts are no longer pink in the center, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 (16 ounce) package skinless, boneless chicken breasts (such as Perdue®)
4 slices Fresh Mozzarella Cheese BC
2 cups tomato sauce, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a baking pan with cooking spray. Place chicken on the prepared pan.
  • Bake in the preheated oven for 20 minutes, flipping chicken after 12 minutes. Remove from the oven, add desired amount of sauce, and top each breast with mozzarella cheese.
  • Bake until cheese is melted and chicken is no longer pink in the center and the juices run clear, about 12 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 tablespoon cooking oil
2 -3 chicken breasts, boneless & skinless, cut into 1-inch pieces
1/2 cup chopped green onion
2 tablespoons Worcestershire sauce
355 ml ginger ale
salt and pepper

Steps:

  • Heat the oil in a frying pan and add chicken. Cook until the chicken starts to brown. Add worcestershire sauce and green onion, and stir. Gradually add gingerale, letting it boil down and brown further. Serve with rice or potatoes and your favorite veggies.

Simply delicious. The shredded chicken and rice in this roux-based soup almost tastes like risotto.

1 quart low-sodium chicken broth
3 cups low-fat milk
4 tablespoons butter, divided
1 medium onion, cut into small dice
2 stalks celery, cut into small dice
1 cup uncooked white long-grain rice
1 teaspoon poultry seasoning
½ teaspoon dried thyme
4 tablespoons all-purpose flour
2 cups shredded cooked chicken
2 teaspoons salt
½ teaspoon ground white pepper

Steps:

  • In a microwave safe glass bowl, heat chicken broth until steamy hot. Heat milk in a microwave safe glass bowl until steamy hot as well.
  • Heat 1 tablespoon of butter in a Dutch oven or small soup kettle over medium heat. Add onions and celery; saute until tender, about 5 minutes. Stir in rice, broth, poultry seasoning and thyme; cook until rice is tender, about 15 to 20 minutes.
  • Heat remaining butter in a saucepan over medium-high heat. Whisk in flour; cook until golden, about 1 minute. Stir in hot milk, and bring it to a simmer; stirring occasionally, cook until smooth and thick. Add milk mixture and chicken into cooked rice; heat through, about 2 to 3 minutes. Season soup with salt and pepper, and serve.

2 tablespoons olive oil
2 cloves garlic, crushed
1 ½ pounds skinless, boneless chicken thighs
1 pinch Ground black pepper
¼ cup apple cider vinegar
¼ cup low-sodium soy sauce
¼ cup water
2 leaf (blank)s bay leaves

Steps:

  • Heat oil and garlic in a large skillet over low heat. Place chicken in a medium bowl; season with pepper, vinegar and soy; toss to coat.
  • Increase heat under skillet to medium and cook garlic cloves until they turn golden brown. Remove garlic and add marinated chicken to the hot oil; cook, until well browned on both sides, about 3 to 4 minutes per side. Add reserved marinade, water and bay leaves. Cover pan, reduce heat and simmer until chicken is fully cooked, about 8 minutes. Remove lid and continue to simmer about 2 minutes longer.
  • Remove chicken to serving dish, top with sauce and serve.

4 cups cubed or shredded cooked chicken meat
1 teaspoon ground cumin
1 teaspoon ground coriander
⅓ cup chopped fresh cilantro
2 (15 ounce) cans black beans, rinsed and drained
2 (4.5 ounce) cans diced green chile peppers, drained
2 (10 ounce) cans enchilada sauce
12 (6 inch) corn tortillas
4 cups shredded Mexican blend cheese
2 cups regular or light sour cream

Steps:

  • Adjust oven rack to center position and preheat oven to 400 degrees F (200 degrees C).
  • Mix chicken, cumin, coriander, cilantro, black beans and chiles in a medium bowl; set aside.
  • Spread 1/2 can of the enchilada sauce over the bottom of a 9 x 13 inch baking dish. Make 3 layers in the following order: 4 tortillas, overlapping if necessary, 1/2 can of enchilada sauce, 1/3 of the chicken mixture, 1/3 of cheese, and 1/3 of sour cream. Cover with aluminum foil coated with vegetable oil cooking spray.
  • Bake in the preheated oven until casserole is bubbly, about 30 minutes. Remove foil, set oven to broil; cook until cheese is spotty brown, about 5 minutes longer. Let stand 5 minutes before serving.

1 tablespoon olive oil
2 boneless skinless chicken breast halves, cut into strips
1 medium onion, chopped
2 garlic cloves, chopped
1 large sweet potato, peeled and cubed
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon red pepper flakes
1 1/2 cups chicken broth
salt and pepper
1 (15 1/2 ounce) can garbanzo beans, undrained
1/4 cup peanut butter

Steps:

  • In a large skillet with a tight-fitting lid, heat oil over medium high heat. Add chicken, and brown quickly. Remove chicken from pan.
  • Reduce heat to medium low, and add garlic, onion and sweet potato to the pan; cook for 5 to 7 minutes. Season with cumin, coriander, red pepper, and salt and pepper.
  • Mix in chicken broth and browned chicken. Place lid on skillet and simmer, stirring occasionally, for 10 to 15 minutes.
  • Remove lid, and stir in the peanut butter and garbanzo beans. Make sure the peanut butter is blended well. Replace lid to simmer for 2 more minutes.
