PORK TENDERLOIN WITH ROSEMARY BISCUIT PUFFS



Pork Tenderloin with Rosemary Biscuit Puffs image

Our chopped challenge this week was biscuit dough. We wanted to something besides baking them, so we sauteed them in rosemary butter, which - well, we all knew how well biscuits and butter go together, but we didn't expect them to be this good. Chopped Basket Ingredient: biscuit dough

Number Of Ingredients 10

1 1/2 pounds pork tenderloin
Kosher salt and finely ground black pepper
2 tablespoons plus 1 stick unsalted butter
3 large shallots, thinly sliced
1 cup chicken broth
1 1/4 cup cherry preserves
All-purpose flour, for dusting
4 large refrigerated/canned biscuits
1 clove garlic
1 tablespoon chopped fresh rosemary

Steps:

  • Preheat the oven to 425 degrees F.
  • Sprinkle the pork with 1 teaspoon salt and 3/4 teaspoon pepper. Heat 2 tablespoons of the butter in a large, heavy nonstick skillet over medium-high heat until hot. Brown the pork on all sides, about 5 minutes total. Add the shallots and cook, stirring occasionally, until golden, about 4 minutes. Stir in the broth and preserves along with 3/4 teaspoon salt and 1/2 teaspoon pepper. Transfer the skillet to the oven and roast until an instant-read thermometer registers 135 degrees F, 12 to 14 minutes.
  • Transfer the pork to a cutting board and let rest 10 minutes. Bring the skillet to a boil over high heat and reduce the sauce to a glaze, about 6 minutes.
  • Flour the top and bottom of the biscuits and cut into 3/4-inch cubes (about 16 cubes per biscuit). Toss the cubes in flour to prevent them from sticking.
  • Melt the remaining butter in a large skillet over medium-high heat. When butter has fully melted, turn the heat to high. Add the biscuit cubes and toss in the butter to coat all sides, stirring frequently, until the dough has puffed and begins to color. Add the garlic and continue cooking until golden brown. Then add the rosemary and continue cooking until the cubes are browned and the rosemary is fragrant, 6 to 8 minutes total. Remove the cubes to a paper-towel-lined baking sheet and season liberally with salt.
  • Slice the pork into 1-inch medallions and serve with cherry glaze and rosemary puffs.

This is from a Pillsbury cookbook of Bake-Off Favorites. It was a 1971 finalist. I have often reduced the recipe to 2 or 3 pork chops (and kept the "stuffing" amount the same). I found that butermilk-type biscuits work better than the layer-type. Also, most cream soups (mushroom or celery) can be subbed for the cream of chicken. This is hearty main dish that can paired with a vegetable side and fresh fruit for a complete meal.***Editted to add that I have tried the recipe using boneless, skinless chicken breasts instead of the pork chops. Yum!! I did add a bit of chicken broth to the soup mixture prior to pouring it over the chicken, though. I thought that the chicken wouldn't release as much liquid as the chops did. It was a great meal.

1 (10 3/4 ounce) can condensed cream of mushroom soup
1 cup celery, chopped
1 cup onion, chopped
1 egg
1/4 teaspoon pepper
1/8 teaspoon poultry seasoning or 1/8 teaspoon sage
1 (7 1/2 ounce) can refrigerated biscuits

Steps:

  • Heat oven to 350°F.
  • In large skillet, brown pork chops in oil.
  • Place in ungreased 13x9 inch pan.
  • In medium bowl, combine soup, celery, onions, egg, pepper and poultry seasoning; mix well.
  • Seperate dough into 10 biscuits; cut each into 8 pieces.
  • Stir biscuit pieces into soup mixture; spoon over pork chops.
  • Bake for 45 to 55 minutes or until biscuit pieces are golden brown.

1 can (15-3/4 ounces) pork and beans
3/4 cup barbecue sauce
2 tablespoons brown sugar
1 tablespoon dried minced onion
1/2 teaspoon salt
1 tube (12 ounces) refrigerated buttermilk biscuits
1/2 to 1 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Add the beans, barbecue sauce, brown sugar, onion and salt; mix well. Bring to a boil. , Transfer to a greased 2-qt. baking dish. Separate biscuits and arrange over the hot beef mixture. Sprinkle with cheese. , Bake, uncovered, at 400° for 18-20 minutes or until biscuits are golden brown.
