MINI ROSEMARY-GARLIC FOCACCIAS
Olive oil and rosemary are the classic ingredients you'll find in easy-to-make Bisquick® mix focaccia.

Steps:
- Heat oven to 450°F. In medium bowl, mix Bisquick mix and milk until soft dough forms; beat 30 seconds. If dough is too sticky, gradually mix in enough Bisquick mix (up to 1/4 cup) to make dough easy to handle.
- Place dough on surface generously dusted with Bisquick mix; gently roll in Bisquick mix to coat. Shape into a ball; knead 10 times. Roll 1/4 inch thick. Cut with 2-inch cutter dipped in Bisquick mix. On ungreased cookie sheet, place dough rounds about 2 inches apart. Brush with oil. Sprinkle with rosemary and garlic powder.
- Bake 8 to 10 minutes or until golden brown. Serve warm.

Steps:
- Position the rack in the center of the oven and preheat to 375 degrees F.
- Lightly grease a baking or cookie sheet.
- Open the biscuit package and separate into 10 biscuits.
- Split each biscuit in half to make 20 rounds.
- Arrange the rounds on the baking sheet.
- Brush with the egg, and top with the cheese and the pizza seasoning.
- Bake for about 8-12 minutes, or until the cheese has melted.
- Remove from the oven and serve.
- Note: Although dried Parmesan cheese can be used, it doesn't work as well.

BASIL FOCACCIA
This is my mother-in-law's recipe. It's easy and delicious. You can make it with an olive oil topping or tomato sauce topping.

- Whisk together 3 cups flour, sugar, yeast, and salt in a mixing bowl. Add warm water and mix well. If dough is too sticky, mix in another 1/2 cup flour.
- Oil a bowl. Fill another, larger bowl halfway with hot water.
- Turn dough onto a floured surface and knead until smooth. Form into a ball and place in the oiled bowl, turning to coat all sides with oil. Place the oiled bowl in the bowl of hot water. Cover and let rise until doubled in size, about 1 hour.
- Preheat the oven to 375 degrees F (190 degrees C). Oil a 9x13-inch baking pan.
- Turn dough out onto a floured surface and let rest for 5 minutes. Transfer dough to the prepared baking pan. Press and dimple with your fingers to even out the thickness and work it into the corners to fit. Brush lightly with olive oil, then sprinkle with garlic salt, Parmesan cheese, and finally basil.
- Bake in the preheated oven until deep golden brown, 25 to 30 minutes. Cut into 8 squares.

- In a large bowl, combine 1/2 cup of the flour, the 1/2 cup warm water, and the yeast. Beat with a wooden spoon until smooth. Cover bowl loosely with plastic wrap. Let sponge stand at room temperature for 2 to 8 hours to ferment.
- Gradually stir in the 1 cup warm water, the 2 teaspoons salt, and just enough of the remaining flour to make a dough that pulls away from the sides of the bowl. Turn dough out onto a lightly floured surface. Knead in enough of the remaining flour to make a soft dough that is smooth and elastic (3 to 5 minutes total). Place dough in a lightly greased bowl, turning once. Cover; let rise in a warm place until double in size (about 1 hour).
- Grease two large baking sheets; set aside. Punch dough down. Let rest 10 minutes. Divide dough into six equal pieces, using oiled hands, if needed. Place three dough pieces on each baking sheet. Press each piece of dough into a 5-inch circle, making sure there are 2 to 3 inches of space between each dough circle. Brush dough circles with the olive oil. Using the tips of your fingers, make 1/2-inch deep indents over the surface of the dough. Cover with plastic wrap and let stand in a warm place for 30 minutes.
- Preheat oven to 400°F. If necessary, re-indent tops of dough rounds. Sprinkle dough rounds lightly with freshly ground black pepper and, if desired, additional coarse salt.
