3 cups cubed cooked chicken
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup milk
1 jar (4-1/2 ounces) sliced mushrooms, drained
1/2 teaspoon dill weed
1/2 teaspoon paprika
TOPPING:
1/4 cup grated Parmesan cheese
1 tablespoon dried minced onion
1 teaspoon dried parsley flakes
1/2 teaspoon paprika
1 tube (12 ounces) refrigerated buttermilk biscuits

Steps:

  • In a large saucepan, combine the first six ingredients. Cook and stir over medium heat for 5-7 minutes or until heated through; keep warm., In a large resealable plastic bag, combine the cheese, onion, parsley and paprika. Separate biscuits and cut into quarters; add to bag and shake to coat. Place on an ungreased baking sheet. Bake at 400° for 5 minutes. , Transfer chicken mixture to a greased 8-in. square baking dish; top with biscuits. Bake, uncovered, for 10-13 minutes or until bubbly and biscuits are golden brown.

¼ cup butter
2 cloves garlic, minced
½ cup chopped onion
½ cup chopped celery
½ cup chopped baby carrots
½ cup all-purpose flour
2 teaspoons white sugar
1 teaspoon salt
1 teaspoon dried basil
½ teaspoon ground black pepper
4 cups chicken broth
1 (10 ounce) can peas, drained
4 cups diced, cooked chicken meat
2 cups buttermilk baking mix
2 teaspoons dried basil
⅔ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a skillet, melt the butter over medium-high heat. Cook and stir the garlic, onion, celery, and carrots in butter until tender. Mix in the flour, sugar, salt, 1 teaspoon dried basil, and pepper. Stir in broth, and bring to a boil. Stirring constantly, boil 1 minute, reduce heat, and stir in peas. Simmer 5 minutes, then mix in chicken. Transfer mixture to the prepared baking dish.
  • In a medium bowl, combine the baking mix and 2 teaspoons dried basil. Stir in milk to form a dough. Divide the dough into 6 to 8 balls. On floured wax paper, use the palm of your hand to flatten each ball of dough into a circular shape; place on top of chicken mixture.
  • Bake in the preheated oven for 30 minutes. Cover with foil, and bake for 10 more minutes. To serve, spoon chicken mixture over biscuits.

3 skinless, boneless chicken breasts
1 cup Italian seasoned bread crumbs
½ cup grated Parmesan cheese
1 teaspoon salt
1 teaspoon dried thyme
1 tablespoon dried basil
½ cup butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut chicken breasts into 1 1/2-inch sized pieces. In a medium bowl, mix together the bread crumbs, cheese, salt, thyme and basil. Mix well. Put melted butter in a bowl or dish for dipping.
  • Dip chicken pieces into the melted butter first, then coat with the breadcrumb mixture. Place the well-coated chicken pieces on a lightly greased cookie sheet in a single layer, and bake in the preheated oven for 20 minutes.

6 tablespoons butter
1 onion, chopped
½ cup flour
3 cups chicken broth
1 teaspoon salt
1 teaspoon pepper
1 cup heavy cream
2 ½ cups frozen mixed vegetable
1 rotisserie chicken, shredded
2 tubes biscuit dough, 8 biscuits each

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a large pot over medium-high heat, melt the butter.
  • Add the onion, stir until softened. About 1 minute.
  • Whisk in the flour, stirring constantly to prevent the flour from browning. About 1 minute.
  • Whisk in the chicken broth, salt, and pepper. Continue to whisk until no lumps remain.
  • Whisk in the heavy cream. Bring to a light simmer until the sauce has thickened slightly. Test for additional salt/pepper.
  • Add the mixed vegetables and shredded chicken, stir until fully incorporated.
  • Transfer to a 9x13-inch (23x33 cm) baking dish.
  • Evenly top with 12 pieces of biscuit dough (you will have extra biscuits, which can be baked off separately).
  • Bake in a preheated oven for 20 minutes, until the biscuits are golden and the gravy mixture is bubbling.
  • Cool slightly before serving.

2/3 cup mayonnaise
2 to 3 teaspoons Worcestershire sauce
4 cups cubed cooked chicken
3 cups chopped broccoli, cooked
1 medium onion, chopped
1 cup shredded cheddar cheese
2 tubes (12 ounces each) refrigerated buttermilk biscuits
2 large eggs
1/2 cup sour cream
2 teaspoons celery seed
1 teaspoon salt

Steps:

  • In a large bowl, combine the soup, mayonnaise and Worcestershire sauce. Stir in the chicken, broccoli and onion. Transfer to a greased 13x9-in. baking dish. Sprinkle with cheese. Accidentally the Best Baked Chicken Nuggets Ever image

Accidentally discovered this while playing around with Chinese restaurant classics. My nugget-expert daughter loved them. I use the marinade from http://www.recipezaar.com/Sweet-and-Sour-Pork-43587 (minus the extra salt) and the flouring and baking technique from http://www.recipezaar.com/Baked-Lemon-Chicken-With-Chinese-Lemon-Sauce-194890. The chicken works great with either sauce but my picky kid just loved the chicken by itself. Infact she liked it so much I had to post the recipe. All measurements are approximate; vary the spices based upon your own taste.

1 lb raw chicken tenderloins
1 egg
1 tablespoon cornstarch
1/2 tablespoon soy sauce
1 tablespoon water
1/3 cup flour
1/4 teaspoon chili powder
1/2 teaspoon pepper
cooking spray

Steps:

  • Pre-heat over to 450°F.
  • Marinade chicken for a minimum of 10 minutes in egg, corn starch, soy sauce and water.
  • Measure flour, chile powder and pepper into bowl or plastic bag.
  • Put one piece of chicken at a time (draining off as much of the marinade as possible first) into the flour, coat chicken.
  • Place on cookie sheet sprayed with cooking spray first.
  • After all the chicken is on cookie sheet (make sure they don't touch), spray chicken generously with cooking spray.
  • Cook 20 minutes at 450°F.

1/4 cup kraft grated parmesan cheese
1 tablespoon instant minced onion or 1/4 cup chopped onion
1 teaspoon parsley flakes or 1 tablespoon chopped parsley

Steps:

  • Heat oven to 375 degrees.
  • In medium saucepan, combine chicken,1/2 teaspoon paprika, dill weed, salt, milk, soup and mushrooms; heat until hot and bubbly.
  • Pour hot chicken mixture into ungreased 8-or 9-inch square baking dish.
  • Separate biscuit dough into 10 biscuits; cut each into 4 pieces.
  • In medium sized plastic bag, combine remaining 1/2 teaspoon paprika, Parmesan cheese, onion and parsley.
  • Shake biscuit pieces, 3 or 4 at a time, in cheese-herb mixture until coated; arrange over hot chicken mixture.
  • Sprinkle any remaining cheese mixture over biscuits.
