2 cups all-purpose flour
4 teaspoons baking powder
1 tablespoon white sugar
½ teaspoon salt
½ cup shortening
1 egg, beaten
⅔ cup milk
1 tablespoon butter, melted
1 (16 ounce) package bulk pork breakfast sausage (such as Jimmy Dean®)
¼ cup butter
¼ cup all-purpose flour
1 (12 fluid ounce) can evaporated milk
1 ½ cups water
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Whisk 2 cups flour, baking powder, sugar, and salt together in a bowl; cut shortening into flour mixture with a pastry cutter until mixture is crumbly. Mix in egg and milk until incorporated. Turn dough out onto a well-floured work surface and knead for 1 minute.
  • Roll dough out to a thickness of 3/4 to 1-inch thick, cut with a biscuit cutter, and place biscuits onto prepared baking sheet. Brush tops of biscuits with melted butter.
  • Bake in the preheated oven until biscuits are golden brown, 8 to 10 minutes.
  • Cook and stir sausage in a large skillet over medium heat until browned and crumbly, about 10 minutes. Drain excess grease. Stir 1/4 cup butter into sausage until butter has melted and mix in 1/4 cup flour until thoroughly combined. Pour evaporated milk and water into sausage mixture, bring gravy to a simmer, and reduce heat to low; simmer gravy until thickened, about 5 minutes. Season gravy with salt and black pepper to taste.
  • Serve biscuits with sausage gravy.

1 pound 6 ounces high-gluten flour
10 ounces vegetable shortening
5 ounces sugar
2 1/2 ounces baking powder
Pinch salt
1 quart buttermilk
Biscuit Gravy, recipe follows
1 pound pork breakfast sausage, meat removed from casings
2 tablespoons butter
4 ounces high-gluten flour
2 quarts plus 1 cup whole milk
1 ounce chicken base, preferably R. L. Schreiber
1/2 teaspoon dried thyme
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Combine cake flour and high-gluten flour in bowl of a stand mixer. Add vegetable shortening, sugar, baking powder and salt. Slowly add buttermilk and mix on low speed with a dough hook for 2 minutes.
  • Portion out 2 dozen 4-ounce biscuits. Bake until golden brown, 25 to 30 minutes. Serve hot and fresh with Gravy or as a side.
  • Cook breakfast sausage in a large braising pan over medium heat, stirring constantly, until fully cooked, approximately 15 minutes.
  • Add butter and let melt. Add flour and cook, stirring slowly, to make a roux. Add milk and cook, continuously whisking, to thicken the gravy. Add chicken base, thyme and pepper and cook, whisking, until gravy thickens, 4 to 5 minutes. Serve as a side or over biscuits.

  • In a large skillet, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles. Remove with a slotted spoon; discard drippings, reserving 1/4 cup in pan. Stir in flour until blended; cook and stir until golden brown (do not burn), 1-2 minutes. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Stir in sausage, pepper, paprika and chili powder. Pour into a greased 13x9-in. baking dish. Cool completely., Meanwhile, in a large bowl, mix baking mix, sour cream and melted butter until moistened. 6 eggs
½ cup milk

1 lb cooked sausage
1 cup shredded cheese

2 cups milk

Steps:

  • Cut each biscuit into 8 pieces. Set aside.
  • In a bowl, mix the eggs, milk, pepper, and salt. Set aside.
  • For the gravy: melt the butter in a saucepan, over medium heat. Stir in flour, salt, and pepper, and slowly add the 2 cups of milk.
  • Increase to medium-high, bring to a simmer, stirring until gravy is thickened.

4 ounces chopped fresh mushrooms
1 small yellow onion, chopped
1 teaspoon garlic powder
1 tablespoon italian seasoning

1/4 cup flour
4 -5 cups milk
1 tablespoon butter
2 tablespoons olive oil
2 (19 ounce) cans Pillsbury Grands refrigerated buttermilk biscuits

Steps:

  • Preheat oven to 350°F for biscuits.
  • Bake biscuits as directed.
  • Sauté onions and mushrooms in olive oil, till soft, about 5 minutes. Add sausage and cook till browned. Add seasonings.
