Steps:
- Heat oven to 350*.
- Blend all ingredients in large mixer bowl on low speed 1/2 minute, scraping bowl frequently. Beat 4 minutes at medium speed.
- Pour batter into greased and floured square pan, 8x8x2", or round layer pan, 9x1 1/2".
- Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean.
- Simply marvelous warm from the oven. Serve it right from the pan at the table.

- Prepare and bake cake mix according to package instructions using a 9x13" pan. While cake is baking, blend together cream of coconut and condensed milk. While cake is still hot, poke holes throughout the cake. Pour liquid over cake. Cool completely. Top with whipped topping and sprinkle with coconut. Store in refrigerator.
BISQUICK VELVET COCONUT CAKE
This came from the side of a Bisquick box, but I must admit it is about 30 yrs. old or better. My grandmother used to make this cake often because it was fast and my grandfather loved coconut. It is really "velvety" in texture and you'll love this too! This recipe is still seen on boxes of Bisquick called Velvet Crumb Cake ... after all these years, it must be good to others beside me!

Steps:
- Grease and flour a 8"x8"x2" square cake pan or 9" x 1-1/2" round pan.
- Beat all ingredients (except topping) on low speed, scraping bowl constantly 30 seconds.
- Beat on medium speed, 4 minutes.
- Pour into pan.
- Preheat oven to 350 degrees.
- Bake for 30-35 minutes or until wooden pick in center comes out clean.
- Cool slightly and spread topping.
- FOR TOPPING: In a small bowl, mix all ingredients together by hand and set aside until cake is cooked and cooled slightly.
- Set oven control to broil.
- Broil about 3 inches from the heat until topping is golden brown about 3 minutes.

- Preheat oven to 350°. Line bottoms of two greased 9-in. round baking pans with parchment or waxed paper; grease paper., In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In another bowl, mix flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 22-27 minutes. Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely., In a small bowl, mix filling ingredients until blended. Using a long serrated knife, cut each cake layer horizontally in half. Place one cake layer on a serving plate. Top with a third of the filling. Repeat twice. Top with remaining cake layer. Refrigerate while preparing frosting., For frosting, in a large heavy saucepan, combine sugar, water, egg whites and cream of tartar. Beat on low speed for 1 minute. Place pan over low heat; continue beating on low until a thermometer reads 160°, 8-10 minutes. Transfer to a large bowl. Add vanilla; beat on high until stiff glossy peaks form, about 7 minutes., Spread over top and sides of cake. If desired, sprinkle with additional coconut. Refrigerate, covered, until serving.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a deep 9-inch pie pan.
- Combine baking mix, milk, sugar, egg, and cinnamon in bowl; mix well. Spread into the bottom of the prepared pan.
- Mix baking mix, brown sugar, butter, and cinnamon together in a separate bowl using a fork or pastry blender until crumbly. Spread topping mix over cake batter; drag a butter knife across the top as if making a tic-tac-toe board several times.

- In a small bowl, cream the sugar, shortening and butter until light and fluffy. Beat in egg and yolk. Add vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. Beat just until combined., Pour into two 6-in. round baking pans coated with cooking spray.
