Aperol, a popular Italian spirit, is often served on the rocks.

Ingredients

Crushed ice
2 ounces (1/4 cup) Aperol (bitter orange aperitif)
1 1/2 ounces (3 tablespoons) white rum
1 teaspoon fresh lemon juice
2 dashes orange bitters
1/2 to 1 teaspoon sugar
Garnish: 1 (1 1/2-inch-long) lemon twist

Steps:

Fill an 8- to 10-ounce highball glass with crushed ice. Stir together Aperol, rum, lemon juice, and bitters in a small glass measuring cup. Add sugar to taste, stirring until sugar is dissolved, then pour over ice.

1 1/2 ounces Scotch
1 ounce blanc vermouth
3/4 ounce amaro
1/2 ounce fresh lemon juice
Ice
Lemon peel, for serving

Steps:

In a shaker, combine the scotch, blanc vermouth, amaro and lemon juice. Add ice, cover and shake vigorously until the drink is well chilled, about 15 seconds. Strain into a chilled cocktail glass. Holding a lemon peel by its long edges, skin facing down into the glass, pinch the peel to release the citrus oils. Add it to the glass and serve.

Ingredients

2 cups caster sugar (440grams)
2 cups dry white wine (500ml)
2 cups water (500ml)
1 1/2 cups lemon juice (375ml)
1/2 cup lime juice (125ml)
1 teaspoon angostura aromatic bitters
3 egg whites

Steps:

Combine sugar, wine and water in a large heavy-based pan, stir over heat, without boiling, until sugar dissolves.
Bring to boil, simmer, uncovered, without stirring, for about 20 minutes or until syrup is thickened slightly (syrup must not change colour), cool to room temperature.
Stir in juices and bitters.
Pour mixture into 23cm square cake pan, cover with foil and freeze until firm.
Beat lemon mixture in large bowl with electric mixer until smooth.
Beat egg whites in a small bowl with an electric mixer until firm peaks form.
Fold egg whites into lemon mixture in 2 batches.
Return mixture to cake pan, cover and freeze until firm.
