Steps:
- Bring the orange juice, soy sauce, chicken stock, and orange zest to a boil in a saucepan. Reduce heat to medium-low and simmer until the sauce has reduced to half of its original volume, about 30 minutes.

BITTER ORANGE HOT SAUCE
This is pretty tasty with batter fried fish or chicken. Take it down to the union hall and sprinkle it on your fish fry. Yum! Recycle an old glass bottle with a plastic sprinkle cap on it to use. Sprinkle it, don't pour it on. Stores in fridge about a month or so.

- Add halved habaneros.
- Close bottle. Shake.
- Store in fridge at least 24 hours before using.

WARM ORANGE SAUCE
I created this because I had made Trishie's Chocolate and Orange Bread Pudding from this site, and felt like this would enhance her recipe and give me more of that orange flavor I was wanting. Use to serve on a warm bread pudding. Crepes or a pound cake would be good also.

Steps:
- Bring orange juice, sugar, butter, and salt to a simmer in a saucepan over medium heat.
- Whisk cold water and cornstarch in a small bowl; whisk cornstarch mixture into the simmering sauce until thickened and no longer cloudy.
- Remove sauce from heat and stir in orange peel and triple sec. Serve warm.

HOT ORANGE SAUCE FOR WILD GAME
I come from a long line of hunters and this sauce is quite often served over the Christmas Duck or New Year's Goose. I've even served it with my Smothered Pheasant or wild rice.

- Wash orange(s) and dry.
- Remove zest from orange with microplaner.
- Mix zest with other ingredients into a small saucepan. Heat till just comes to a boil. Turn heat down to a simmer and cook for 30 minutes. Stir after 15 minutes.
- Serve over wild duck, goose, pheasant or wild rice. Also very good for basting duck or goose.
