CREAMY BLACK AND BLUE PASTA SALAD
The flavors of blue cheese and steak come together in this creamy pasta salad - a delicious dinner made using Betty Crocker® Suddenly Salad® ranch and bacon salad mix.

Steps:
- Fill 3-quart saucepan 2/3 full of water; heat to boiling. Add Pasta. Gently boil, uncovered, 12 minutes, stirring occasionally; drain. Rinse with cold water to cool; drain well.
- Meanwhile, in large bowl, combine Seasoning mix from packet, mayonnaise, sour cream, blue cheese and lemon juice. Stir in remaining ingredients except spinach. Refrigerate at least 1 hour.
- Just before serving, place 2 cups of the spinach on each of 4 plates; divide pasta salad evenly over spinach.

- Pour pasta (from Suddenly Salad box) into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally. Drain pasta. Rinse with cold water; drain well.
- In medium bowl, stir together seasoning (from Suddenly Salad box) and blue cheese dressing. Add cooked pasta, onion and black beans until well blended. Cover; refrigerate 1 hour.
- Meanwhile, heat gas or charcoal grill. Rub steak on both sides with garlic pepper. Place steak on grill over medium-high heat. Cover grill; cook steak about 6 minutes on each side or until meat thermometer inserted in center of steak reads 140°F.
- To serve, place pasta salad on large serving platter. Cut steak into thin slices; arrange over pasta salad. Sprinkle with blue cheese crumbles. Garnish with French-fried onions.

- Combine the first eight ingredients; set half of the dressing aside. Place pasta in a bowl; add remaining dressing. Toss to coat; cover and refrigerate. , Pierce steak with a fork. Combine rub ingredients; rub over steak. Cover and refrigerate for at least 15 minutes. Grill steak, uncovered, over medium heat for 9-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 10 minutes. , Meanwhile, add cucumber, cheese, olives, onion, parsley and pimientos to pasta; mix well. Spoon onto a lettuce-lined platter. Slice steak and arrange over salad. - Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. When cooked, drain, then toss with olive oil, and keep warm.
- Meanwhile, melt 1 tablespoon butter in a skillet over medium-high heat. Sear the rib-eye on both sides until rosy-pink in the center, 7 to 10 minutes depending on thickness. Remove steak from skillet and cut into bite-size pieces. Melt the remaining 1 tablespoon of butter in the skillet, and stir in the garlic and shallots. Cook 5 to 10 seconds until fragrant, then return the steak to the pan and cook for another 5 minutes or to desired doneness. Stir in the soy sauce, and cook a few seconds longer, allowing it to evaporate.
- Remove the skillet from the heat and stir in the sun-dried tomato pesto, olives, spinach, basil, parsley, feta cheese and sunflower kernels. Toss with the pasta in a large bowl and serve.

This is the best salad in the world, and I feel so strongly that way that I would better money on that. I've made allot of salads in my day, but NONE have come even slightly close to this one.

- In a small bowl, whisk together all the dressing ingredients, except the oil.
- Slowly whisk in the oil to incorporate, pour about 2 large tablespoons of the vinaigrette over the steak and mix; refrigerate the rest until needed.
- Heat a medium sauté pan over high/medium-high heat with a little oil in it.
- Add the mushroom slices, season with salt and pepper, and brown on both sides.
- Add the steak and sauté until browned.
- Place the European mixed greens on a large plate or bowl, sprinkle the onions over the top, pour the steak and mushrooms in the center, places the mandarin orange sections around the steak and mushrooms, sprinkle with blue cheese and salt and pepper, pour on dressing.

- Put a large pot of water on the stove to bring to a boil for pasta.
- Preheat broiler to high with rack on top shelf.
- Preheat medium skillet over medium-high heat.
- Add chopped bacon and cook until crisp.
- Salt water for pasta and add spaghetti to the pot.
- Cook to al dente, with a bite to it.
- Season the steaks with salt and pepper on both sides and arrange on slotted broiler pan.
- Remove bacon to paper towel lined plate with a slotted spoon and drain off most of the fat, return pan to heat and reduce heat to medium.
- Add extra-virgin olive oil, 2 turns of the pan and 1 tablespoon butter.
- When butter melts into extra-virgin olive oil, add in 2 cloves garlic and the shallots, sauté for 3 minutes.
- Arrange steaks on the broiler pan.
- Place under broiler - leave door to oven cracked ajar to limit flare ups and smoke.
- Cook 4 minutes on each side for medium rare, up to 5 to 6 minutes on each side for medium well doneness.
- To the garlic and shallots, add in flour and cook a minute more.
- Whisk in stock, bring to a bubble, about 30 seconds then stir in the cream.
- When cream comes to a bubble, add in blue cheese and sage and a few grinds of black pepper.
- Stir until cheese melts.
- Reduce heat to lowest setting.
- Soften 4 tablespoons butter in microwave on high for 15 seconds.
- Mix in chives and 2 cloves minced garlic and reserve.
- Remove steaks from oven and let rest 5 minutes.
- Place 1/4 of the chive and garlic butter mixture on each steak to melt down over the meat as they rest.
- Drain pasta and toss with sauce to coat and combine evenly.
- Taste to adjust seasoning.
- Serve steaks with pasta alongside.
- Scatter the arugula and bacon bits across the top of the pasta.
