SLOW-COOKER BLACK BEAN SOUP WITH CHORIZO



Slow-Cooker Black Bean Soup with Chorizo image

1 1-pound bag dried black beans (about 2 cups), picked over and rinsed
4 cups low-sodium chicken broth
2 tablespoons apple cider vinegar
1 yellow onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 bay leaf
2 teaspoons ground cumin
1/2 teaspoon dried oregano
Kosher salt and freshly ground pepper
2 fully cooked (not dried) smoked chorizo sausages (about 6 ounces), halved lengthwise and sliced 1/2 inch thick
Hot sauce, chopped red onions, cubed avocado, pico de gallo and/or crumbled Cotija cheese and chopped fresh cilantro, for topping

Steps:

  • Combine 2 cups water, the beans, chicken broth, vinegar, onion, bell pepper, garlic, bay leaf, cumin, oregano, 1 1/2 teaspoons salt and a few grinds of pepper in a 6- to 8-quart slow cooker. Cover and cook on low until the beans are tender, about 8 hours.
  • Discard the bay leaf. Working in small batches, puree about half of the soup in a blender. Stir the pureed soup back into the slow cooker. Season with salt and pepper.
  • Cook the chorizo in a small nonstick skillet over medium heat, stirring occasionally, until lightly browned, about 5 minutes. Top each serving of soup with the chorizo and toppings.

1 cup refried black beans, warmed
1/4 lb. crumbled Mexican chorizo, cooked, drained
1/2 cup sour cream
1 cup KRAFT Shredded Sharp Cheddar Cheese
1/4 cup chopped fresh cilantro

Steps:

  • Heat nonstick griddle to medium heat. Meanwhile, shape masa into 24 balls, using 1 Tbsp. for each; flatten each slightly into disk.
  • Add in batches, to griddle; cook 1-1/2 min. or until lightly browned on both sides, turning every 30 sec. Cool slightly.
  • Use your thumb or forefinger to make 1/4-inch border around edge of each sope. Serve topped with remaining ingredients.

You've probably made some kind of Mexican casserole layered with tortillas, beans, and plenty of melted cheese before (and if you haven't, now is the time). But this one is bolder, brighter and more deeply flavored, thanks to pasilla chiles in the sauce, lime zest in the luscious crema topping, and chorizo in the beans. If you'd prefer a vegetarian version, leave out the chorizo. But do seek out the pasilla chiles (also called negra chiles), which add their inimitable smoky, fruity spice. This casserole reheats perfectly and will keep for at least five days in the fridge.

1 cup Mexican crema, crème fraîche or sour cream
Zest of 1 lime and 1/4 cup fresh lime juice
1 red onion, halved root to tip and thinly sliced into half moons
2 1/4 teaspoons kosher salt, more as needed
2 1/2 teaspoons sugar
2 ounces dried pasilla (also called negro) chiles rinsed, seeded and stemmed (6 to 8 chiles)
6 tablespoons vegetable oil
1 pound cured (cooked) chorizo, finely diced
1 white onion, diced
1 small bunch cilantro, leaves and stems separated
2 teaspoons ground cumin
3 cups cooked or canned black beans, rinsed and drained
4 cups chicken stock
8 garlic cloves, unpeeled
12 6-inch corn tortillas
12 ounces Monterey Jack cheese, grated (3 cups)
1/2 cup roasted pumpkin seeds (optional)

Steps:

  • Make the lime crema: In a small bowl, whisk together sour cream and lime zest. Cover and refrigerate until ready to use.
  • Make the pickled onions: In a separate bowl, combine red onion, lime juice, 1 teaspoon salt and 1/2 teaspoon sugar. Let the onion pickle at room temperature for at least 1 hour.
  • Meanwhile, toast the chiles for the sauce: Heat a very large skillet (or use a Dutch oven) over medium-high heat until hot. Lay chiles flat in skillet and toast until fragrant and pliable and color darkens, 10 to 15 seconds a side; do not let them burn and turn bitter. Transfer chiles to a large bowl, cover with hot water and let stand 30 minutes. Wipe out skillet.
  • Make the bean-chorizo mixture: While chiles soak, heat 2 tablespoons oil in the skillet over medium-high heat. Add chorizo and cook until golden, about 5 minutes. Transfer to a paper-towel-lined plate.
  • Stir white onion into skillet and cook until softened, about 7 minutes. Finely chop 1/4 cup cilantro stems and add to pan, along with cumin. Cook 1 minute.
  • Return chorizo to pan. Stir in beans, 1 cup stock and 3/4 teaspoon salt. Bring to a simmer; reduce heat to medium-low and cook gently 10 minutes. Taste and add more salt if needed.
  • Make the chile sauce: Heat broiler. Place garlic cloves (in skins) on a baking sheet. Broil, turning once, until very tender, 5 to 10 minutes. Peel garlic when cool enough to handle.
  • Drain chiles and place in a blender or food processor. Add peeled garlic and 2 cups stock. Purée until smooth.
  • Heat 4 tablespoons oil in a large skillet over medium-high heat. Add chile purée and simmer vigorously, stirring often, for 5 minutes or until sauce has thickened. Add remaining 1 cup stock, reduce heat to medium-low, and simmer gently, stirring often, until sauce reduces to 1 1/2 cups, about 25 minutes. Stir in remaining 2 teaspoons sugar and 1/2 teaspoon salt and remove from heat.
  • Assemble the casserole: Heat oven to 350 degrees. Spread a quarter of the chile sauce over bottom of a 9-by-13-inch baking dish. Place a layer of 6 overlapping tortillas on top of the sauce, followed by another layer of sauce, half the bean mixture and half the cheese. Cover with another layer of 6 tortillas, a layer of sauce, remaining bean mixture and remaining cheese. Spoon remaining sauce on top. Cover pan tightly and bake 20 minutes. Uncover and continue baking until casserole is bubbly around edges and cheese is melted, 20 minutes more.
  • Let casserole rest 10 minutes, then serve topped with dollops of lime crema, some pickled onion, pumpkin seeds and cilantro leaves.

This was my first introduction to Chorizo sausage. When I make home-made chili, this is the recipe I use. Adapted from a recipe I got from some magazine years ago. Usually buy my chorizo, but have also made my own. I like that you don't have to be so exact when chopping the ingredients, since it's going to be pureed anyway.

2 tablespoons vegetable oil
1/2 lb chorizo sausage
1 medium onion, chopped
1 bell pepper, chopped
3 garlic cloves, minced
2 -3 chipotle chiles in adobo, chopped
2 tablespoons ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 (10 ounce) can rotel, undrained
2 (15 ounce) cans black beans (1 drained, 1 undrained)
2 cups chicken broth
1/2 cup frozen corn

Steps:

  • In large skillet, cook chorizo sausage over medium heat until cooked through (5-10 minutes). Remove from the pan.
  • Add vegetable oil and cook peppers & onions until soft. (About 8-10 minutes).
  • Add garlic, chipotle peppers & spices. Stir in rotel (undrained), broth & 1 can black beans (undrained).
  • Increase heat to medium-high and bring to a boil.
  • Reduce to simmer and cook 10 minutes.
  • Puree in blender or food processor in batches until you have blended it all.
  • Return to the skillet. Add the cooked chorizo, the drained can of black beans and the frozen corn.
  • Cook over medium heat until reaches desired consistency. (About 5-10 minutes).

1 tablespoon chicken broth, or more as needed
1 teaspoon olive oil
1 red onion, chopped, divided

This chili-like stew relies on spicy, fresh green chorizo for its bright, zesty flavor. It only takes half an hour to make your own green chorizo, but you can substitute any kind of fresh (uncured) store-bought sausage, as long as it's got a kick. Then add some chopped garlic, along with minced parsley and roasted poblano pepper for the green factor. Serve it over rice, or with corn or flour tortillas on the side. 1/2 batch (12 ounces) homemade green chorizo (see recipe), or use another spicy fresh sausage

1 (28-ounce) can diced plum tomatoes with their juices

Steps:

1 lb black beans, sorted and rinsed
1 medium onion, sliced
1/4 cup lard, plus
2 teaspoons lard (or 1/4 c. plus 2 T.solid vegetable shortening)
2 large garlic cloves, halved
2 sprigs epazote or 2 teaspoons dried oregano
1 cup diced red onion
5 jalapenos, seeded, deveined and minced
1 lb chorizo sausage, casing removed
salt
4 1/2 ounces grated cheddar cheese (about 1 1/8 cups) or 4 1/2 ounces monterey jack cheese (about 1 1/8 cups)
finely chopped green onions (to garnish) or red onion, to garnish
minced fresh cilantro leaves (garnish)

Steps:

  • Bring water,beans,sliced onion,2 tablespoons lard and garlic to boil in heavy Dutch oven.
  • Reduce heat and simmer 1 1/2 hours.
  • Add epazote (or oregano) and simmer until beans are tender, adding water as needed, about 30 minutes.
  • Puree bean mixture through medium disc of food mill or coarsely chop in food processor using on/off turns; return to Dutch oven.
  • Heat remaining 1/4 cup lard in heavy large skillet over medium-low heat.
  • Add 1 Celsius red onions and 1 tablespoon minced chilies.;cover and cook until onion is translucent, stirring occasionally, about 10 minutes.
  • Increase heat to medium-high, add sausage and cook until no longer pink, breaking up with fork or potato masher, about 10 minutes.
  • Add to beans and bring to a boil; reduce heat,cover and simmer until mixture thickens, stirring occasionally, about 15 minutes.
  • Add salt to taste.
  • Cool completely, then refrigerate overnight.
  • Bring beans to room temperature; taste and adjust seasoning.
  • Preheat oven to 350 degrees.
  • Grease a large casserole and fill with beans.
  • Sprinkle with cheese, cover and bake until bubbling, about 20-30 minutes.
  • Serve immediately, passing remaining chilies, green onion and cilantro separately.
