When I come home from work, the last thing I feel like doing is cooking. Sometimes it's so tempting to just pick something up from a fast food restaurant. These wraps, however, come together so quickly and effortlessly that I make them often. They taste better than fast food meals and they're much better for you too.

1 (15 ounce) can black beans, drained and rinsed
1 (11 ounce) can mexicorn, drained
2 ounces shredded monterey jack cheese
1/4 cup chopped fresh cilantro
1/4 cup bottled salsa
4 (8 -9 inch) jalapeno-cilantro tortillas

Steps:

  • Heat oven to 350 degrees F.
  • In a medium bowl, combine black beans, corn, cheese, cilantro and salsa; mix well.
  • Spoon 1/4 of bean mixture down center of each tortilla.
  • Fold in ends and then roll up each tortilla; wrap each in aluminum foil.
  • Bake at 350 degrees F for 10 minutes or until heated through and cheese is melted.
  • Serve with guacamole and additional salsa.

I threw this together one day before a picnic with things that I wanted to use up. Everyone at the picnic really enjoyed them.

1 (16 ounce) jar corn and black bean salsa
1/2 cup cheddar cheese, shredded
4 ounces cream cheese
2 tablespoons taco seasoning
1 frozen pie crust, thawed

Steps:

  • Drain salsa so that most of the liquid is removed. Stir in the cheese.
  • Combine the cream cheese and taco seasoning.
  • Roll out pie crust to thin so it is easier to roll. Spread cream cheese mixture over entire crust. Spread salsa mixture on top of cream cheese.
  • Roll up crust like you would a cinnamon roll.
  • Cut into pieces about 1/2" wide.
  • Bake at 425 degrees for 14 minutes. I served these at room temperature.

8 ounces softened cream cheese
1 cup sour cream (low fat is fine)
1 cup shredded monterey jack cheese
1/4 cup chopped pimento stuffed olive
1/4 cup chopped red onion
1/2 teaspoon salt
1/2 teaspoon garlic powder, to taste
1 (15 ounce) can black beans, drained
5 flour tortillas

Steps:

  • Beat cream cheese and sour cream until well blended.
  • Stir in Monterey Jack cheese, olives, onion, salt, and garlic powder.
  • Cover and refrigerate for 2 hours.
  • Process beans in a food processor until smooth.
  • Spread each tortilla with a thin layer of beans.
  • Spread layer of cream cheese mixture over beans.
  • Roll up tightly, wrap in plastic wrap and refrigerate until well chilled.
  • Cut into 3/4 inch slices (on a bias?).
  • Serve with salsa.

1 can (11 ounces) whole kernel corn with red and green peppers, drained
1/2 cup shredded Monterey Jack cheese (2 ounces)
1/4 cup chopped fresh cilantro
1/4 cup Old El Paso™ salsa (any variety)
4 jalapeño-flavor flour tortillas (8 to 10 inches in diameter)
Additional Old El Paso™ salsa (any variety), if desired

Steps:

  • Heat oven to 350°F. Mix beans, corn, cheese, cilantro and 1/4 cup salsa in medium bowl.
  • Spoon one-fourth of the bean mixture down center of each tortilla. Roll up each tortilla; wrap each in aluminum foil. Place on cookie sheet.
  • Bake about 10 minutes or until thoroughly heated and cheese is melted. Serve with additional salsa.
