Black Bean Chorizo Casserole with Pickled Onions image

You've probably made some kind of Mexican casserole layered with tortillas, beans, and plenty of melted cheese before (and if you haven't, now is the time). But this one is bolder, brighter and more deeply flavored, thanks to pasilla chiles in the sauce, lime zest in the luscious crema topping, and chorizo in the beans. If you'd prefer a vegetarian version, leave out the chorizo. But do seek out the pasilla chiles (also called negra chiles), which add their inimitable smoky, fruity spice. This casserole reheats perfectly and will keep for at least five days in the fridge.

1 cup Mexican crema, crème fraîche or sour cream
Zest of 1 lime and 1/4 cup fresh lime juice
1 red onion, halved root to tip and thinly sliced into half moons
2 1/4 teaspoons kosher salt, more as needed
2 1/2 teaspoons sugar
2 ounces dried pasilla (also called negro) chiles rinsed, seeded and stemmed (6 to 8 chiles)
6 tablespoons vegetable oil
1 pound cured (cooked) chorizo, finely diced
1 white onion, diced
1 small bunch cilantro, leaves and stems separated
2 teaspoons ground cumin
3 cups cooked or canned black beans, rinsed and drained
4 cups chicken stock
8 garlic cloves, unpeeled
12 6-inch corn tortillas
12 ounces Monterey Jack cheese, grated (3 cups)
1/2 cup roasted pumpkin seeds (optional)

Steps:

  • Make the lime crema: In a small bowl, whisk together sour cream and lime zest. Cover and refrigerate until ready to use.
  • Make the pickled onions: In a separate bowl, combine red onion, lime juice, 1 teaspoon salt and 1/2 teaspoon sugar. Let the onion pickle at room temperature for at least 1 hour.
  • Meanwhile, toast the chiles for the sauce: Heat a very large skillet (or use a Dutch oven) over medium-high heat until hot. Lay chiles flat in skillet and toast until fragrant and pliable and color darkens, 10 to 15 seconds a side; do not let them burn and turn bitter. Transfer chiles to a large bowl, cover with hot water and let stand 30 minutes. Wipe out skillet.
  • Make the bean-chorizo mixture: While chiles soak, heat 2 tablespoons oil in the skillet over medium-high heat. Add chorizo and cook until golden, about 5 minutes. Transfer to a paper-towel-lined plate.
  • Stir white onion into skillet and cook until softened, about 7 minutes. Finely chop 1/4 cup cilantro stems and add to pan, along with cumin. Cook 1 minute.
  • Return chorizo to pan. Stir in beans, 1 cup stock and 3/4 teaspoon salt. Bring to a simmer; reduce heat to medium-low and cook gently 10 minutes. Taste and add more salt if needed.
  • Make the chile sauce: Heat broiler. Place garlic cloves (in skins) on a baking sheet. Broil, turning once, until very tender, 5 to 10 minutes. Peel garlic when cool enough to handle.
  • Drain chiles and place in a blender or food processor. Add peeled garlic and 2 cups stock. Purée until smooth.
  • Heat 4 tablespoons oil in a large skillet over medium-high heat. Add chile purée and simmer vigorously, stirring often, for 5 minutes or until sauce has thickened. Add remaining 1 cup stock, reduce heat to medium-low, and simmer gently, stirring often, until sauce reduces to 1 1/2 cups, about 25 minutes. Stir in remaining 2 teaspoons sugar and 1/2 teaspoon salt and remove from heat.
  • Assemble the casserole: Heat oven to 350 degrees. Spread a quarter of the chile sauce over bottom of a 9-by-13-inch baking dish. Place a layer of 6 overlapping tortillas on top of the sauce, followed by another layer of sauce, half the bean mixture and half the cheese. Cover with another layer of 6 tortillas, a layer of sauce, remaining bean mixture and remaining cheese. Spoon remaining sauce on top. Cover pan tightly and bake 20 minutes. Uncover and continue baking until casserole is bubbly around edges and cheese is melted, 20 minutes more.
  • Let casserole rest 10 minutes, then serve topped with dollops of lime crema, some pickled onion, pumpkin seeds and cilantro leaves.

1 cup beef stock
2 dried ancho chiles, stemmed and seeded
2 poblano chiles
16 corn tortillas, cut into 1-inch strips
All natural cooking spray, for spraying tortilla strips
Salt
2 tablespoons vegetable or olive oil
1 pound Mexican chorizo, casings removed
1 pound ground beef
One 15-ounce can black beans, drained
1 tablespoon ground coriander
1 tablespoon ground cumin
2 cloves garlic, chopped
1 onion, chopped
2 1/2 cups shredded Cheddar or a blend of Monterey Jack, pepper Jack, Cheddar, Chihuahua, asadero or any easy melting cheeses of choice (about 12 ounces)
1 cup sour cream
1 ripe avocado, chopped
1 lime, juiced
Pickled jalapeno slices, for garnish
Chopped romaine or iceberg lettuce, for garnish
Chopped tomatoes, for garnish
Chopped red onions, for garnish

Steps:

  • For the casserole: Preheat the oven to 375 degrees F.
  • Bring the beef stock to a simmer in a pot; add the ancho chiles and just enough water to cover and cook to reconstitute them. When softened, transfer to a food processor and puree.
  • Char the poblanos evenly over a flame or under the broiler. Cool in a covered bowl, and then peel, seed, chop and reserve.
  • Arrange the tortilla strips on baking sheets, spray with cooking spray and season with salt. Bake to deeply golden brown, 10 to 15 minutes.
  • Heat the oil, 2 turns of the pan, in a large, deep skillet over medium-high heat. Add the chorizo and brown, crumbling the meat. Add the beef and continue to brown and crumble the meat. Add in the beans, coriander, cumin, garlic, onions, poblanos and ancho puree and cook together a few minutes to combine the flavors.
  • Layer half of the tortilla strips in a casserole dish and top with the chorizo and beef mixture. Cool and store for a make-ahead meal (store the remaining tortilla strips in a foil pouch until using), or bake to serve. To bake, top the room-temperature casserole with the remaining tortilla strips and the cheese and bake at 375 degrees F until bubbly and hot through, 40 to 45 minutes.
  • For the avocado cream: Whiz up the sour cream, avocado and lime juice in a food processor.
  • Top the casserole with the pickled jalapenos, lettuce, tomatoes and onions and dollop the avocado cream over top (or pass at table).

This recipe is from Every Day with Rachael Ray, which I modified to try to reduce the sodium. It's really quite tasty, and the egg is a nice touch - don't be afraid to try it!

1 tablespoon olive oil or 1 tablespoon vegetable oil
1/2 lb raw chorizo sausage (removed from casings and crumbled or chopped)
1 onion, chopped
2 serrano peppers (thinly sliced or chopped) or 2 jalapenos (thinly sliced or chopped)
3 -4 garlic cloves (thinly sliced or chopped)
1 tablespoon dried ancho chile powder
1 teaspoon ground cumin
1 teaspoon ground coriander
salt and pepper (optional, I did not use)
4 cups cooked black beans (or use canned)
3 cups low sodium chicken broth
4 eggs
shredded queso fresco or other mild cheese
diced tomato
sliced scallion
tortilla chips
pickled jalapeno pepper
chopped cilantro

Steps:

  • Heat oil in Dutch oven or heavy pot and add the chorizo, cooking until it it crisps around the edges.
  • Add the onion, chili peppers, garlic, and spices. Cook, stirring, for a few minutes to bloom the spices.
  • Note: the recipe requires 4 cups beans. I cannot enter 2 15 oz cans, but that's what is meant.
  • Puree 2 cups of the beans (or one of the cans -rinsed and drained) with 1 cup of the chicken broth. I used my stick blender. Add to the pot with the remaining beans and broth and simmer over medium heat for a few minutes to thicken.
  • Meanwhile, poach or fry the eggs (easy over).
  • To serve, line the sides of the bowls with a few tortilla chips. Pour in the soup, top with the eggs and with the optional garnishes you desire.

1 poblano pepper, fresh
1 medium avocado, halved, seeded, and peeled
1 tablespoon fresh cilantro leaves, chopped
1 teaspoon mayonnaise
1 medium red onion, thinly sliced
2 limes, juice of (4 Tbsp.)
1 tablespoon white vinegar
1/2 teaspoon ground cumin
kosher salt or sea salt, to taste
fresh ground black pepper, to taste
6 ounces chorizo sausage, uncooked
1 1/4 lbs ground beef
6 hamburger buns

Steps:

  • Poblano-Avocado Spread.
  • Hold poblano pepper with tongs over gas flame of burner or broil until charred on all sides. (Or place pepper on a foil lined baking sheet. Bake in a 425 degree F oven for 20 to 25 minutes or until skin is bubbly and browned.) Wrap in foil and lets stand for 20 to 30 minutes or until cool enough to handle.
  • When cooled slip off blackened skin, twist off stem, and scoop out seeds and discard.
  • Coarsely chop and transfer to small bowl.
  • Add half of the avocado and coarsely mash with a fork.
  • Slice the remaining half of the avocado and add to the bowl.
  • Stir in lime juice, cilantro and mayonnaise. Season to taste with salt.
  • Refrigerate until time to assemble burgers.
  • Pickled Onions.
  • In medium saucepan of boiling water, heat onion slices 30 seconds. Transfer to bowl of ice water to cool. Drain.
  • In second bowl combine cooled onions, lime juice, vinegar, cumin, salt, and pepper. Toss to coat. Let stand 30 minutes.
  • Chorizo-Chile Burger.
  • In large skillet over medium-high heat, cook chorizo about 5 minutes, until slightly browned and becoming crisp, breaking up meat with a spatula. Remove from heat.
  • Spread on plate lined with paper towels to cool.
  • Start charcoal fire or preheat gas grill for direct cooking.
  • In bowl combined cooled chorizo with ground beef.
  • Form into six 3/4-inch thick patties.
  • Indent center of each patty.
  • Grill over medium heat, covered, for 10 to 12 minutes, until done (160 degrees F), turning once midway through grilling time.
  • Spread Poblano -Avocado Spread on buns.
  • Layer patties and pickled onions on buns. Makes 6 burgers.
