1/2 cup instant brown rice, cooked
1/2 cup fat-free Italian salad dressing
1/2 cup plain low-fat feta or 1/2 cup goat cheese, crumbled
12 large lettuce leaves

Steps:

  • Set beans and chives in separate shallow bowls.
  • Combine rice, salad dressng and cheese in small bowl.
  • Set leaves on plate and allow guests to create own lettuce wraps or assemble and serve.
  • Wheat crackers may be substituted for lettuce wraps. Spoon bean mixture onto crackers just before serving.

1/4 cup salted peanuts, chopped (optional)

Steps:

  • In medium bowl, combine all ingredients except lettuce and peanuts. Cover and chill for at least 1 hour.
  • Spoon about 4 tablespoons beef mixture into each lettuce leaf. Top with peanuts. Roll up leaves and serve.

  • Heat a large nonstick skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes. Stir in corn, black beans, diced tomatoes, and taco seasoning. Bring to a simmer and cook until heated through, 10 to 12 minutes.

1 large onion, diced
1 pinch sea salt
1 pinch cayenne pepper
1 pound lean ground turkey
1 dash garlic powder
1 (15 ounce) can black beans, drained and rinsed
1 cup water
1 large green bell pepper, diced
1 (4 ounce) can chopped green chiles
6 tablespoons taco seasoning mix
1 cup cooked brown rice

Steps:

  • Heat a large skillet over medium-high heat. Saute onion with sea salt and cayenne pepper until softened, about 7 minutes. Add ground turkey and garlic powder; cook and stir until turkey is no longer pink, about 5 minutes. Add black beans, water, green bell pepper, green chiles, and taco seasoning. Mix well. Reduce heat to low and let simmer with the lid on until flavors blend, 10 to 15 minutes.
  • Stir cooked rice into the turkey mixture; simmer until heated through, 3 to 5 minutes. Remove from heat and let stand for 10 minutes.

  • Divide it into 4 patties. Place a pan over medium heat and lightly coat with olive oil or nonstick cooking spray. Place patties in the pan and cover and grill for about 4 minutes on each side. Re-oil in between flips to prevent sticking. Continue cooking and flipping until they become firm and browned but not dry.
  • Place half of one patty and half of each ingredient and slices of avocado and tomato onto lettuce leaves, creating around 8 wraps total. Sprinkle with just a pinch of salt & pepper to taste.
  • Wrap the leaves into tight rolls and then slice in half. I found that my leaves weren’t quite big enough for the amount of filling I wanted so I just tied them up with Baker’s twine.
