BLACK BEAN POPPERS



Black Bean Poppers image

Fried wontons filled with a mixture of whatever you have on hand are a good place to start. I made this for a Cinco de Mayo party and everyone loved them! No special deep fryer is needed, your standard 10 inch frying pan will work. You can dip them in your favorite salsa or salsa and sour cream mixture for a lighter dipping sauce.

Number Of Ingredients 8

2 tablespoons extra-virgin olive oil
1 small onion, finely chopped
1 green bell pepper, finely chopped
1 (15 ounce) can black beans, rinsed and drained
2 roma (plum) tomatoes, diced
2 jalapeno peppers, minced
1 (16 ounce) package wonton wrappers
1 quart vegetable oil for frying

Steps:

  • Heat the olive oil in a skillet over medium heat. Stir in the onion, and cook until the onion has softened and turned translucent, about 5 minutes. Add the bell pepper and black beans, bring to a simmer, then stir in the tomato and jalapeno peppers. Cook and stir until the tomatoes are hot and beginning to soften.
  • To make the wontons: Separate and place the wonton wrappers onto your work surface. Spoon about 1 tablespoon of the filling onto the center of each wrapper. Use your finger or a pastry brush to lightly moisten the edges of the wonton wrappers with water. Fold one corner of the wrapper over the filling onto the opposite corner to form a triangle. Press the edges together to seal.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Fry the poppers a few at a time until golden brown, 1 to 2 minutes. Drain on a paper towel-lined plate, and serve within 15 minutes.

1 tablespoon olive oil
1 each medium sweet yellow, orange and red pepper, chopped
1 large onion, chopped
2 garlic cloves, minced
2 cans (15 ounces each) black beans, rinsed and drained
1 package (8.8 ounces) ready-to-serve brown rice
1-1/2 teaspoons ground cumin
1/2 teaspoon dried oregano
1-1/2 cups shredded Mexican cheese blend, divided
3 tablespoons minced fresh cilantro

Steps:

  • In a large skillet, heat oil over medium-high heat. Add peppers, onion and garlic; cook and stir 6-8 minutes or until tender. Add beans, rice, cumin and oregano; heat through., Stir in 1 cup cheese; sprinkle with remaining cheese. Remove from heat. Let stand, covered, 5 minutes or until cheese is melted. Sprinkle with cilantro.

Cook the patties on a pan covered in cooking spray, or use a slightly more generous pour of cooking oil for a crispier finish.

2 cans black beans, rinsed and drained
1 onion, minced
3 cloves garlic, minced
2 carrots, shredded
½ cup quick-cook oats
1 tablespoon soy sauce
1 tablespoon olive oil
1 teaspoon cumin
½ teaspoon coriander
½ teaspoon chili powder
¼ teaspoon cayenne pepper
salt, to taste
pepper, to taste
4 buns, we did not use vegan buns, but you can

Steps:

  • Heat one tablespoon of olive oil in a pan. Combine onions, garlic, salt, and pepper and cook until onions are translucent.
  • Add carrots, cumin, coriander, chili powder, and cayenne pepper until carrots are tender. Remove pan from heat.
  • In a bowl, mash the beans and then add the contents of the pan along with the soy sauce and quick oats.
  • Mix and form four patties. Place in freezer for 30 minutes to set.
  • Cook patties on a pan coated in cooking spray over medium heat, flipping halfway.
  • Use patties to create your dream veggie burger.
  • Enjoy!

4 medium jalapenos, cut in half lengthwise and seeded
2 (15 ounce) cans black beans, drained and rinsed
2 large eggs
5 tablespoons olive oil or 5 tablespoons other vegetable oil
1 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon dried ancho chile powder or 1/8 teaspoon dried chipotle powder
1 cup panko breadcrumbs
1 red bell pepper, seeded and finely chopped
1/4 cup minced cilantro
1 shallot, minced
4 ounces cream cheese, softened
6 ounces cheddar cheese slices
6 hamburger buns

Steps:

  • Heat broiler to high. Place jalapenos, cut side down, on a foil-lined baking sheet and broil until totally blackened, about 10-15 minutes. Cover with the foil immediately upon removing from the oven and let sit for 5 minutes.
  • Remove the skin from the jalapenos and finely chop the flesh. Set aside.
  • Meanwhile, place 2 1/2 cups beans in a large bowl and mash until smooth. In a separate bowl, whisk together the eggs, 1 tbsp oil, cumin, salt and cayenne. Stir together the egg mixture, remaining beans, panko, bell pepper, cilantro and shallot. Mix into the mashed beans.
  • In a small bowl, whisk together the jalapenos and cream cheese.
  • Form the burger mix into 6 patties. Divide the cream cheese mixture among the patties and stuff inside them so that the black bean mixture completely surrounds them.
  • Heat 2 tbsp olive oil in a 12-inch nonstick skillet over medium heat until shimmering. Place 3 patties in the skillet. Cook until browned on both sides, about 4-5 minutes per side. Repeat with remaining oil and patties.
  • Serve warm topped with cheddar cheese on a toasted bun.
