MIDDLE EASTERN NACHOS

Steps:
- Preheat the oven to 350 degrees F.
- In a small saute pan over moderate heat, cook the lamb until browned and cooked through, about 10 minutes. Season with salt and pepper. Using a slotted spoon, transfer the lamb to a small bowl. Brush the pita bread using the fat in the pan. Cut each pita into 8 wedges and place on a sheet pan. Bake until golden, about 10 minutes.
- In a shallow baking dish, layer half the pita wedges, half the lamb, half the hummus and half the feta. Make 1 more layer in the same order. Bake the nachos in middle of the oven until the cheese is melted, 5 to 7 minutes. Remove from the oven and sprinkle with parsley. Serve immediately.
- BYOC: Use your favorite hummus; try lemon or garlic if you prefer no heat.
MIDDLE EASTERN-STYLE MARZIPAN
An extremely delicious, sweet, and exotic Middle Eastern almond treat. Also quick and dead easy to make.

Steps:
- Place almonds in a large skillet over low heat. Toast, stirring occasionally, until shells crack open easily, about 30 minutes. Cool until easily handled, about 15 minutes.
- Shell almonds; place in a food processor. Add cardamom, cinnamon, and salt. Process, slowly pouring in honey, until marzipan mixture lumps together.
- Cut and form marzipan into desired shapes. Dust with confectioners' sugar before serving.

Steps:
- Place a large, heavy bottomed pot over medium heat. Stir in the cumin, ginger, cloves, cayenne, cardamom, coriander, and allspice; gently toast until fragrant, about 2 to 3 minutes. Stir in oil and onion, cook until softened. Stir in the bell pepper, and zucchini; cook for 5 minutes. Stir in the raisins, salt, zest, and garbanzos.
- Pour in the chicken broth and orange juice; turn heat to high and bring to a boil. When the mixture is boiling, stir in the couscous and remove from heat; cover, and let stand 5 minutes. Fluff with a fork, and fold in chopped mint.

- Cook macaroni according to package directions; drain and rinse with cold water. Cool completely. Meanwhile, in a small skillet, cook lamb over medium heat until no longer pink, 6-7 minutes, breaking into crumbles; drain. Set aside to cool completely. , For dressing, in a small bowl, combine mayonnaise, sugar, mustard, salt and pepper. In a large bowl, combine chickpeas, onion, za'atar seasoning, macaroni and lamb. Add dressing; gently toss to coat. , Refrigerate until serving. Top with yogurt and lemon zest if desired.
