BEEF AND BLACK BEAN CHILI WITH GREEN ONION CORN CAKES



Beef and Black Bean Chili with Green Onion Corn Cakes image

2 pounds ground beef sirloin, 90 percent lean
1 tablespoon extra-virgin olive oil, 1 turn of the pan
Salt and pepper
1 tablespoon Worcestershire sauce, eyeball it
1 medium onion, finely chopped
4 to 6 cloves garlic, finely chopped
1 red bell pepper, finely chopped
1 jalapeno pepper, seeded and chopped
3 tablespoons dark chili powder, 2 palm fulls
1 tablespoon cumin, 1/2 palm full
1 cup beef stock or broth, 1/2 a 14-ounce can or paper container
1 (14 1/2 ounce) can diced tomatoes
1 (8-ounce) can tomato sauce or tomato puree
2 (15-ounce) cans black beans, drained
2 tablespoons chopped fresh cilantro, a handful, optional
2 (8 1/2-ounce) packages, corn muffin mix
1 cup milk
2 eggs, beaten
2 tablespoons vegetable or corn oil
3 scallions, thinly sliced
Butter, for greasing griddle pan

Steps:

  • In a large deep skillet or pot, brown ground beef in oil over high heat. Season meat with salt and pepper, then add Worcestershire sauce. Reduce heat to medium high when the meat is browned and crumbled, then add onion, garlic, red peppers, jalapeno. Season veggies and meat with chili powder and cumin. Cook veggies and meat together 5 minutes. Stir in broth and scrape up pan drippings. Stir in diced and pureed tomatoes and black beans. When the mixture comes to a bubble, reduce heat to simmer and stir in cilantro, optional.
  • Mix together 2 packages of corn muffin mix with 1 cup milk, 2 beaten eggs, 2 tablespoons vegetable oil and sliced scallions. Batter should be thick. Heat a nonstick skillet or griddle pan over moderate heat. Nest a pat of butter into folded paper towel and wipe hot pan surface with it to lightly grease. Pour corn cake batter into the hot griddle pan or skillet in 3 or 4-inch rounds. Cook 2 or 3 minutes on each side, until golden. Transfer to a plate and repeat with remaining batter.
  • To serve, top bowls of beef and black bean chili with green onion corn cake toppers. Eat the chili and corn toppers as you would a pot pie, grabbing some of the corn cake with each spoonful of chili.

2 lb boneless beef sirloin, cut into 1-inch cubes
1 large onion, coarsely chopped (1 cup)
1 medium green bell pepper, coarsely chopped (1 cup)
2 cans (28 oz each) Muir Glen™ organic diced tomatoes, undrained
1 can (15 oz) pinto beans, drained, rinsed
1 can (19 oz) Progresso™ red kidney beans, drained, rinsed
1 can (15 or 19 oz) Progresso™ black beans, drained, rinsed
1 cup Progresso™ beef flavored broth (from 32-oz carton)
1 1/2 tablespoons ground cumin
1 tablespoon chili powder

Steps:

  • In 4-quart Dutch oven, heat oil over medium-high heat. Cook 1 pound of beef at a time in oil, stirring occasionally, until brown; remove from Dutch oven.
  • Add onion and bell pepper to Dutch oven. Cook 2 to 3 minutes, stirring occasionally, until crisp-tender. Stir in remaining ingredients except beef.
  • Cover and cook over medium heat 10 minutes. Stir in beef. Cook uncovered 3 to 8 minutes or until beef is tender.

This hearty chili features beef, tomatoes and Progresso® black beans - a flavorful slow cooked dinner.

2 tablespoons vegetable oil
2 lb boneless beef top sirloin, cut into 1-inch cubes
3 cans (15 oz each) Progresso™ black beans, drained, rinsed
2 cans (14.5 oz each) diced tomatoes with green chiles, undrained
1 bag (10 to 12 oz) frozen onions, celery, bell pepper and parsley seasoning blend, thawed
1 bottle (12 oz) dark beer, room temperature
2 tablespoons chili powder
3 teaspoons ground cumin
1 teaspoon salt
1 medium tomato, chopped
1 cup crumbled queso fresco cheese
Sliced green onions, if desired
Sliced red jalapeño chiles, if desired
Lime wedges, if desired

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. In 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Add half of the beef; cook 3 to 4 minutes, stirring frequently, until browned on all sides. Place beef in slow cooker. Repeat with remaining 1 tablespoon oil and beef.
  • Stir black beans, diced tomatoes, seasoning blend, beer, chili powder, cumin and salt into slow cooker.
  • Cover; cook on Low heat setting 8 hours. Top individual servings with chopped tomato and cheese. Garnish with green onions, jalapeños and lime wedges.

HEARTY SIRLOIN CHILI



Hearty Sirloin Chili image

I made this recently using chopped sirloin, it was really good! If you have any dried chipotle chili powder then throw in a tablesoon. You can use wine in place of the beer if desired. Serve this with crusty buns and a side salad, this dish is delicious! I strongly advise to make this a day ahead and refrigerate, the flavors will blend together to create a more intense flavor.

3 -5 tablespoons vegetable oil (more as needed)
3/4 cup flour
2 teaspoons seasoning salt
1/4 teaspoon cayenne pepper
2 lbs sirloin, cut into 1-inch cubes
2 onions, chopped
2 tablespoons fresh minced garlic
1 -2 teaspoon dried chili pepper flakes (optional, add in if you like extreme heat!)
1 large green bell pepper, seeded and chopped
1 large red bell pepper, seeded and chopped
2 jalapenos, seeded and finely chopped (I just use the ones packed in the jar)
2 -4 tablespoons chili powder (or to taste)
2 -3 tablespoons cumin (or to taste)
2 teaspoons dried oregano
2 cups consomme or 2 cups beef broth
1 (12 ounce) bottle beer
4 cups crushed tomatoes
2 cups canned black beans, drained and rinsed
2 cups red kidney beans, drained and rinsed
salt and pepper
shredded cheddar cheese
chopped onion
sour cream

Steps:

  • In a shallow dish mix together flour, seasoning salt and cayenne pepper.
  • Heat oil in a large Dutch oven or pot.
  • Toss the sirloin with the flour mixture to coat, then brown well on all sides shaking off any excess flour then remove to a plate or bowl.
  • In the same pot saute the onions and dried chili flakes (if using) for about 3 minutes.
  • Add in green and red bell peppers with jalapeno peppers and garlic; cook for about 3-4 minutes.
  • Add in chili powder, cumin and oregano, then return the browned beef back to the pot along with any juices from the plate or bowl.
  • Pour in beer and consumme or beef broth; stir with a wooden spoon and bring to a boil.
  • Cover and reduce heat to a simmer; cook 1-1/2 hours or until the beef is tender.
  • After the 1-1/2 hours, add in the crushed tomatoes and cook for another 35-40 minutes.
  • Add in black beans and kidney beans, season with salt and pepper; simmer for another 20 minutes.
  • Ladle into bowls then top with sour cream cheese and onions.
  • Delicious!

I never knew what I was missing until my mother-in-law made this! Everyone begged her for the recipe. A nice and easy way to feed a crowd. Thanks to my mother-in-law this has become a favorite dish! Can be frozen very well and doubled for a larger crowd. Top with your favorite shredded cheese.

1 onion, diced
2 cloves garlic, minced
