The zucchini make the brownies very moist and no one ever knows what the secret is to these brownies until you tell them.

1 1/2 cups sugar
1/2 cup margarine
2 eggs
1 teaspoon vanilla
2 cups flour
1/2 teaspoon cinnamon
1 teaspoon baking soda
2 tablespoons cocoa
2 1/4 cups shredded zucchini
1 cup chocolate chips

Steps:

  • Cream sugar & margarine. Add eggs and vanilla.
  • Add remaining ingredients. Stir in shredded zucchini last.
  • Spread in a 13 x 9 greased pan. Sprinkle 1 cup chocolate chips on top along with 1 Tbls sugar.
  • Bake @ 350 for 25 to 30 minutes.

1 box (18.3 oz) Betty Crocker™ fudge brownie mix
Water, vegetable oil and eggs called for on brownie mix box for cakelike brownies
1 cup coarsely shredded zucchini (about 1 medium)
1/2 cup miniature chocolate chips
1 container Betty Crocker™ Rich & Creamy chocolate frosting

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray. Make brownie batter as directed on box for cakelike brownies. Stir in zucchini and chocolate chips. Spread in pan.
  • Bake 23 to 27 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely, about 1 hour.
  • Spread frosting over top. Cut into 6 rows by 4 rows. Store covered in refrigerator.

6 ounces chocolate chips (note use more if desired)
8 ounces cream cheese
1 egg, unbeaten
1/8 teaspoon salt
1/3 cup sugar
1 1/2 cups flour
1/4 cup cocoa
1/2 teaspoon salt
1/3 cup vegetable oil
1 teaspoon vanilla
1 cup sugar
1 teaspoon baking soda
1 cup water
1 tablespoon vinegar

Steps:

  • Combine cheese/chip mix except for the chips. Beat well. Then stir in chocolate chips. Set mix aside.
  • Mix Dough mix. Pour batter into a greased 9x13 inch pan.
  • Drop teaspoonfuls of cream cheese mix randomly over the batter.
  • Bake 15 to 20 minutes at 350°F.
  • Cool and refrigerate.

6 tablespoons unsweetened cocoa powder
1/4 cup margarine
2 cups confectioners' sugar
1/4 cup milk
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread evenly into the prepared pan.
  • Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched. To make the frosting, melt together the 6 tablespoons of cocoa and margarine; set aside to cool. 2 cups shredded zucchini
FROSTING:
2/3 cup semisweet chocolate chips
1/2 cup creamy peanut butter

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in yogurt and vanilla. In another bowl, combine flour, cocoa, baking soda and salt; gradually add to creamed mixture. Stir in zucchini. , Pour into a greased 13x9-in. baking pan. 1 egg

Steps:

  • Preheat oven to 350 degrees; grease and flour a 9x13-inch pan or spray with nonstick cooking spray.
