JAMIE OLIVER BLACK COD RECIPE

Jamie Oliver Black Cod Recipe image

If you ever get the chance to prepare Black Cod or see it in a seafood shop, do yourself a favor and get a beautiful big chunk of it to create this Jamie Olivier Black Cod Recipe. I guarantee you'll fall in love with its buttery flavor and velvety texture.

Provided by Imen Dridi

Categories     Dinner     Jamie Oliver

Time 50m

Number Of Ingredients 9

1 clove of garlic, finely grated with a rasp-style grater
½ teaspoon lime zest
2 tablespoons lime juice
2 tablespoons agave syrup
1 tablespoon extra-virgin olive oil
1 1/2 teaspoon grated ginger root
1 teaspoon kosher salt
4 4-5 ounce portions of black cod or sablefish fillet, about 1 pound
2 tablespoons chopped cilantro

Steps:

  • In a small bowl, combine the garlic, lime zest, lime juice, agave syrup, olive oil, ginger, and salt.
  • Fill a big resealable plastic bag halfway with sablefish. Pour the lime mixture over the fish, close the bag, and press the air out. To coat the fish with the marinade, agitate the bag. Refrigerate for 30 minutes to 1 hour before serving.
  • Preheat the oven to 400 degrees Fahrenheit. Line a large rimmed baking sheet with parchment paper.
  • Remove the fish from the marinade and discard it. Place the fish on the parchment, skin side down, and place the baking sheet in the oven.
  • 12 to 15 minutes, or until the fish is cooked through and flakes apart when probed with the point of a knife. Garnish with cilantro before serving.

Categories     dinner, main course

Time 15m

Yield 4 servings

Number Of Ingredients 8

5 tablespoons extra virgin olive oil
1 5-inch sprig rosemary
3 tablespoons sliced garlic chives, or 3 tablespoons chives and 1 clove minced garlic
1/2 teaspoon grains of paradise (available at Fairway and specialty food stores), lightly crushed
Grated zest of two lemons
Coarse sea salt
4 8-ounce pieces black cod fillets, with skin

When hot, place the fillets skin-side down in pan. Sear for 3 minutes, then turn and sear the other side until it is browned and cooked to taste.

MISO-GLAZED BLACK COD

Miso-Glazed Black Cod image

This is my take on the oft requested miso-glazed, black cod, made famous by chef Nobu Matsuhisa. In addition to a taste and texture to die for, this is one of the easiest fish recipes of all time. A couple minutes to make the sauce, some brushing, a short wait, and you're broiling. By the way, I don't like to cook both sides. I like the heat to only penetrate from the top down. This makes for a lovely caramelized top, and a super juicy interior. Cooking times will vary, but simply broil the fish until the bones pull out with no effort, and the meat flakes.

Provided by Chef John

Categories     Seafood     Fish

Time 40m

Yield 2

Number Of Ingredients 6

3 tablespoons white miso paste
2 tablespoons water
2 tablespoons mirin (Japanese sweet wine)
2 tablespoons sake
1 tablespoon brown sugar
2 (7 ounce) black cod fillets

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil and lightly grease the aluminum foil.
  • Whisk miso paste, water, mirin, sake, and brown sugar together in a small skillet over medium heat until mixture simmers and thickens slightly, 1 to 3 minutes. Remove from heat and cool completely.
  • Place cod fillets on prepared baking sheet. Brush fillets all over with miso mixture. Rest fillets at room temperature to quickly marinate, 15 to 20.
  • Broil fillets in the preheated oven for 5 minutes. Turn the baking sheet 180 degrees and continue broiling until fish flakes easily with a fork, about 5 minutes more. Remove pin bones.
