1 pound linguine
1/4 cup (1/2 stick) butter, room temperature
1 1/4 cups very finely grated Pecorino Romano
1 1/2 teaspoons freshly ground black pepper
1 cup coarsely chopped arugula

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the linguine and cook until it is al dente, stirring frequently, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
  • Immediately toss the hot pasta in a large bowl with the butter to coat. While tossing the linguine, gradually sprinkle the cheese, pepper, and enough of the reserved cooking liquid evenly over the linguine to moisten. Add the arugula and toss to combine. Season the pasta, to taste, with salt. Divide the pasta among 6 plates and serve.

a scant 1/4 teaspoon dried hot red pepper flakes
2 tablespoons olive oil
2 orange bell peppers, cut into thin strips
1 red bell pepper, cut into thin strips
3/4 cup dry white wine
1/2 cup chicken broth or water
1/2 pound black linguine, fettuccine, or spaghetti (squid or cuttlefish ink pasta)*
1/3 cup finely chopped fresh parsley leaves
Garnish: fresh flat-leafed parsley sprigs
*available at specialty foods shops

Steps:

  • In a 5-quart kettle bring 4 quarts salted water to a boil for pasta.
  • In a 12-inch heavy skillet cook garlic with pepper flakes in oil over moderate heat, stirring, until garlic begins to turn golden. Add bell peppers with salt to taste and cook, stirring, until softened. Add wine and boil, stirring occasionally until almost all liquid is evaporated. Add broth or water and simmer, covered, until bell peppers are tender, about 5 minutes. Pepper mixture may be made 1 day ahead and chilled, covered. Reheat mixture in skillet before proceeding.
  • In boiling water cook pasta until al dente and drain in a colander. Add pasta to pepper mixture with parsley and toss with salt and pepper to taste over moderate heat until combined well and heated through.
  • Divide pasta mixture among 6 small plates and garnish with parsley.

3 medium sized red peppers
3 tablespoons olive oil
1 big onion, cutted into thin slices
2 -4 garlic cloves
1/4-1/2 teaspoon chili pepper, cutted thinly (fresh, dry or ground)
1/2 cup cream (optional)
salt and pepper (to taste)
2 teaspoons fresh oregano, cutted (or dry oregano to taste)
500 g linguine (spinach pasta is a good option!) or 500 g spaghetti (spinach pasta is a good option!)

Steps:

  • Cut the red peppers in half, cut off the nerves (membranes) and take out the seeds. Put the red peppers (with the cutted side down)on a roasting pan in the oven and grill for about 8 minutes, until the skin singes and looks like it´s burned. Take them out of the oven, let them cool covered with a moist towel, then peel them and cut them in thin slices. Heat the olive oil in a casserole and cook the onion at low heat for about 8 minutes, until the onion is soft. Throw in the red peppers, the garlic, the chili and the cream, let cook for about 2 minutes, stirring from time to time. Season with salt and pepper to taste, and add the oregano. While the sauce is cooking, cook the linguines in a big casserole with boiling water until the linguines are "al dente". Drain well, then return the linguines to the casserole. Add the sauce over the hot pasta and mix. Serve the linguines on warm soup plates.
  • **You can use dried oregano if you dont have fresh, but in smaller quantities. You can adjust the hotness to your likeness (use as much chili as you want). If you want a sauce with a stronger pepper taste, don´t use the 1/2 cup of cream.**.

½ pound sweet Italian sausage, casings removed
2 red bell peppers, chopped
1 onion, chopped

1 cup white wine

  • Cook pasta in a large pot of boiling salted water until al dente.

1 pound fresh broccoli, chopped
3 tablespoons extra virgin olive oil
1 tablespoon butter

¼ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Steam broccoli with 2 tablespoons water in microwave for 6-7 minutes.
  • In 10-inch skillet, heat olive oil and butter over low heat. Stir in garlic (more or less to suit your tastes) and red pepper slices; saute gently.
  • Drain broccoli and add to skillet. Sprinkle lightly with garlic salt and saute broccoli and peppers until soft.
  • Toss vegetable mixture with hot pasta. Sprinkle with Parmesan cheese.

1 teaspoon olive oil
1 1/2 cups chopped sweet red peppers
1 garlic clove, crushed
2 tablespoons chopped fresh basil
2 tablespoons balsamic vinegar
1/8 teaspoon salt
1/8 teaspoon black pepper
6 ounces linguine, uncooked
fresh basil sprig (optional)

Steps:

  • Coat a nonstick skillet with cooking spray; add oil. Place over medium heat until hot. Add sweet red pepper and garlic; cook, uncovered, 30 minutes, stirring occasionally. Set aside, and cool slightly.

6 cloves garlic, minced

8 ounces Italian oil-packed tuna, drained and broken into chunks
1 1/2 pounds linguine
1 teaspoon minced fresh parsley
Freshly ground black pepper

Steps:

  • Remove the skin and pith of 10 oranges, then halve crosswise and break into sections. In a large sauté pan over medium-low heat, combine 1/2 cup olive oil, garlic and a pinch of salt. Sauté until garlic begins to soften.
  • Add half of the orange sections, mashing them a little with a fork. When the liquid starts to bubble, add the tuna, mashing it slightly with a fork so that the mixture has both paste and distinct chunks of tuna and orange. When the liquid bubbles again, squeeze in the juice of the 2 remaining oranges. Bring to a simmer and remove from heat.
  • Bring a large pot of lightly salted water to a boil. Add the linguine and cook until al dente. Drain the pasta and return the sauce to medium-high heat.
