UNITED NATIONS BEER CAN CHICKEN



United Nations Beer Can Chicken image

Number Of Ingredients 9

1 whole chicken, (preferably fresh slaughtered) 4 to 5 pounds
3 tablespoons paprika
1 tablespoon brown sugar
2 tablespoons Welch sea salt
1 teaspoon South African hot spice mix
3 tablespoons olive oil
1 tablespoon ground mustard
1 tablespoon ground black pepper
1/2 can beer, from South America, if available

Steps:

  • Add coals to one half of grill. Clean chicken, remove head and innards. Rub paprika, sugar, salt, spice mix, oil, mustard, and pepper into chicken, under skin and inside cavity.
  • Open the beer and add any remaining seasoning to beer can. Place chicken over the beer can, inserting the can gently into the cavity of chicken.
  • Place chicken on opposite side of coals on grill. Make sure chicken is covered - use large pot if your grill cover is too small. Add coals to maintain high heat if it cools down. Make sure chicken is not directly over coals. Use an instant-read thermometer to test temperature, it should read 165 degrees F under thigh. Remove carefully and carve.

This dish is wonderful done on the grill. It was inspired by the wonderful ingrediants found across the world in ZWT III. Serve with a crispy green salad (try Easy (Mostly Traditional) Caeser Salad for something different; and a crusty baquette. **Cooking time includes marinading time.

3 boneless skinless chicken breasts
1/2 cup low-fat mayonnaise
1 tablespoon Dijon mustard
2 teaspoons garlic, minced
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon ground cayenne pepper
1/2 teaspoon ground turmeric
1/2 teaspoon ground thyme

Steps:

  • Mix all marinade ingrediants in small bowl and place in a large ziplock bag.
  • Add Chicken(zip shut tight!), toss to coat and refrigerate 4 to 6 hours.
  • Cook on hot grill, 4 to 6 minutes per side, depending on thickness of your breasts.

Steps:

  • Combine paprika, salt, onion powder, garlic powder, oregano, basil, thyme, black pepper, white pepper, and cayenne pepper.
  • Store in an airtight container.
