Buffalo Wings and Blue Cheese Omelet image

If you like wings and blue cheese, you'll love this omelet! Also a great way to use up leftover wings or a rotisserie chicken. Drizzle with Frank's RedHot® and if you don't like blue cheese, you can easily swap for Cheddar. Garnish with chopped celery and carrots and blue cheese dressing if you like.

3 eggs
1 splash water
salt and ground black pepper to taste
1 tablespoon butter
3 Buffalo wings, meat removed and cut into small pieces
1 teaspoon Buffalo wing sauce (such as Frank's RedHot®)
¼ cup crumbled blue cheese

Steps:

  • Whisk eggs together in a bowl. Whisk in water, salt, and pepper.
  • Melt butter in a large skillet over medium-high heat. Cook and stir chicken pieces in the hot butter until heated through, 1 to 2 minutes. Mix in Buffalo wing sauce; cook and stir for 30 seconds.
  • Pour eggs into the skillet. Swirl eggs with a fork several times, working clockwise from the outside in, until slightly scrambled. Flatten eggs out into an even circle. Reduce heat and cook until set, 1 to 2 minutes. Sprinkle blue cheese over eggs; cook for 1 minute. Fold omelet in half and cook for 1 minute. Flip and cook on the second side, 30 seconds to 1 minute more.

These yummy, spicy wings are awesome even if you are not a blue cheese lover. They are a must try! Since football season, I have been trying to come up with a homemade wing sauce -- and I have found it!

30 each chicken wings, cut apart at joints, wing tips discarded
2 teaspoons ground cayenne pepper
2 teaspoons seasoned salt
1 cup Louisiana-style hot sauce
⅓ cup molasses
1 teaspoon liquid mesquite smoke flavoring
½ cup chopped onion
½ cup chopped green bell pepper
4 cloves garlic, minced
2 cups prepared blue cheese dressing

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Sprinkle the chicken wings on all sides with cayenne pepper and seasoned salt, and spread in a single layer into a large baking dish.
  • Bake the wings in the preheated oven until the skin is browned and crisp, 30 to 40 minutes, turning the wings over halfway through cooking for even browning.
  • While the wings are baking, combine hot sauce, molasses, and liquid smoke flavoring in a saucepan over medium-low heat. Stir in the onion, green pepper, and garlic, and bring the mixture to a boil. Stir in the blue cheese dressing. Reduce heat to a simmer, and cook until the onions are translucent, about 5 minutes. Remove from heat.
  • Transfer the wings from the baking dish to paper towels to drain excess grease. Pour off any excess fat from the dish, and return the wings to the dish. Pour the sauce evenly over the wings, turning them over with a spatula or tongs to coat all sides with sauce.
  • Return to the oven and bake until the sauce has thickened and cooked onto the wings, about 20 minutes. Cool for about 5 minutes before serving.

1 pound salted butter
4 ounces sour cream
4 ounces mayonnaise
4 ounces bleu cheese crumbles, plus additional for sprinkling
0.5 ounce dry rub
64 ounces hot sauce
Canola oil, for frying
2 pounds chicken wings

Steps:

  • Combine the butter, sour cream, mayo, bleu cheese and dry rub in a saucepan on medium-high heat until melted, stirring occasionally. Add the hot sauce and let simmer for 5 minutes, then remove from the heat and pour into a blender. Blend until smooth.
  • Preheat the oil in a deep-fryer or Dutch oven fitted with a deep-fry thermometer to 375 degrees F.
  • Fry the wings, in batches, until brown and crispy, 6 to 8 minutes.
  • Toss the wings in a bowl with 3 ounces Spicy Bleu 17.
  • Plate the sauced wings, then add bleu cheese crumbles on top.

4 teaspoons balsamic vinegar
2 teaspoons granulated sugar
1/4 cup hot pepper sauce
1 lb whole chicken wings or 1 lb whole chicken drummettes
1/2 cup light salad dressing or 1/2 cup mayonnaise
1/4 cup crumbled blue cheese
1 tablespoon lemon juice
1/4 teaspoon onion powder
1 tablespoon garlic powder
1/2 teaspoon Worcestershire sauce
1/2 cup sour cream

Steps:

  • Combine first 4 ingredients in small cup.
  • Stir.
  • Discard tip and cut wings apart at joints.
  • Brush sauce over both sides of chicken pieces.
  • Place pieces in 3 1/2 Quart slow cooker.
  • Cover, Cook on low for 7 to 8 hours or on high for 3 1/2 to 4 hours until tender.
  • Serve from slow cooker.
  • Makes about 28 pieces of wing or 18 drumettes.
  • Blue Cheese Dip: Combine all seven ingredients in a bowl; Beat until smooth.
  • Makes 1 1/8 cups.
  • Serve with wings.

Buffalo wings were arguably one of my favorite foods to eat this past year. I love them, and they are incredibly easy to make at home. The balance of sweet and spicy in this recipe is fantastic; great for any game day!

2 1/2 pounds chicken wings, tips removed and wings halved at joint, or wingettes
6 tablespoons unsalted butter, melted
1/4 cup honey
1/4 cup bottled hot sauce, such as Frank's
2 teaspoons paprika
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
Nonstick spray, for greasing
Blue Cheese Dipping Sauce, for serving, recipe follows
Celery sticks, for serving
1 cup crumbled blue cheese
3/4 cup mayonnaise
1/2 cup sour cream
1 teaspoon Worcestershire sauce
Kosher salt and cracked black pepper

Steps:

  • Place the chicken wings in large resealable bag in a shallow baking dish.
  • Melt the butter in a small saucepan and remove from the heat. Stir in the honey, hot sauce, paprika, salt and cayenne pepper. Let cool completely and pour over the chicken wings. Seal the bag and let marinate at room temperature 25 to 30 minutes. Drain and discard the marinade.
  • Meanwhile, preheat the oven to 425 degrees F. Line a large sheet tray with aluminum foil and spray with nonstick spray.
  • Bake the chicken on the sheet tray, flipping once halfway through cooking, 35 minutes.
  • Serve alongside the Blue Cheese Dipping Sauce and celery sticks.
  • Combine the blue cheese, mayonnaise, sour cream and Worcestershire sauce together in mixing bowl or food processor and mix until combined. Season with salt and pepper.

1 cup Greek yogurt
1/4 cup crumbled blue cheese (recommended: Cabrales)
2 tablespoons finely grated red onion
2 tablespoons finely chopped fresh cilantro leaves
Salt and freshly ground black pepper
Peanut oil
1 cup all-purpose flour
Salt and freshly ground black pepper
2 teaspoons ancho chili powder, plus 2 tablespoons
1 teaspoon garlic powder
2 pounds chicken wings split at the joint, wing tips removed and discarded
1/2 cup red wine vinegar
1 to 2 tablespoons pureed chipotle chile in adobo
1 tablespoon New Mexico chili powder
1 tablespoon Dijon mustard
1 teaspoon salt
1 to 2 tablespoons honey
1 stick unsalted butter, quartered
Finely chopped fresh cilantro leaves, for garnish
Jicama sticks (instead of celery)

Steps:

  • Stir together the yogurt, blue cheese, red onion, cilantro and salt and pepper in a bowl. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.;
  • Heat 2-inches of the oil in a large, high-sided pan until it reaches 375 degrees F on a deep-fry thermometer.
  • Stir together the flour, salt, pepper, to taste, 2 teaspoons ancho chili powder and garlic powder in a shallow bowl. Season the wings with salt and pepper and add the wings in batches to the flour mixture to lightly coat and tap off excess flour. Add the wings in batches and cook until golden brown and cooked through, 8 to 10 minutes. Remove with a slotted spoon and place on a plate lined with paper towels.
  • Bring the vinegar, chipotle puree, 2 tablespoons chili powder and New Mexico chili powder to a simmer in a large high-sided saute pan over medium heat. Remove the mixture from the heat and whisk in the mustard, salt, honey, and butter until smooth. Add the wings to the mixture and toss to coat. Garnish with cilantro and serve with jicama sticks and blue cheese sauce.

1 cup Hellmann's mayonnaise
2 teaspoons finely chopped onions
1/4 cup chopped fresh parsley
1/2 cup sour cream
1 teaspoon lemon juice
1 teaspoon white vinegar (red is fine too)
1/2 cup mild blue cheese, crumbled
1 teaspoon minced garlic
25 chicken wings, tips removed, separated at joint (will have 50 pieces)
8 teaspoons melted butter
2 teaspoons vinegar
2/3 cup hot pepper sauce (Like Louisianna Hot Sauce)
cayenne pepper

Steps:

  • Mix all dip ingredients and chill overnight if possible.
  • Spread wings out on a lightly oiled cookie sheet.
  • Mix melted butter, vinegar, and hot pepper sauce.
  • Brush butter mixture onto wings.
  • (Can do this ahead and hold for 2 hours maximum if at room temp).
  • Bake at 400° for 20- 30 minutes, or until wings are cooked through.
  • Baste one time during cooking.
  • Sprinkle cayenne during last 5 minutes of cooking for more heat.
  • Serve hot with dip and celery sticks.

Made these with leftover Uncle Ronnie's Bleu Cheese Dressing (recipe available on this site), and wow! You can use any bleu cheese dressing to make these, but the homemade dressing baked into a sort of soft, but firm, coating on the chicken- have never had that happen with store-bought salad dressing. Good flavor, and melt-in-your-mouth texture, even from cheap store-brand frozen wing sections (which are famous in our house for being tough, sinewy, and flavorless). Pair up with some celery sticks and even more bleu cheese for great party food, or as a tasty late-night snack. This recipe doubles or triples easily.

1 lb chicken wings, 1st and 2nd sections only
1 cup bleu cheese salad dressing
salt and pepper, if desired
1/4-1/2 cup hot sauce

  • Place chicken wings into a sealable container; pour the dressing over all, making sure they are fully covered.
  • Refrigerate at least 8 hours; turn pieces occasionally.
  • Heat oven to 375. Line a baking sheet with non-stick foil, or spray foil with non-stick cooking spray.
