Layer chocolate, fresh bananas and airy pudding in a pecan crumb crust for a delicious banana pie and then chill for blissful perfection. So sweet!

30 vanilla wafers, finely crushed (about 1 cup)
1/2 cup finely chopped pecans
1/3 cup butter or margarine, melted
5 oz. BAKER'S Semi-Sweet Chocolate, broken into small pieces
3 cups JET-PUFFED Miniature Marshmallows, divided
2 cups milk, divided
1 pkg. (3 oz.) JELL-O Vanilla Flavor Cook & Serve Pudding
1 cup thawed COOL WHIP Whipped Topping
2 bananas, thinly sliced

Steps:

  • Heat oven to 375°F.
  • Mix wafer crumbs, nuts and butter; press onto bottom and up side of 9-inch pie plate. Bake 5 min.; cool.
  • Microwave chocolate, 1 cup marshmallows and 1/2 cup milk in microwaveable bowl on HIGH 2 min.; stir until chocolate is completely melted. Pour into crust; refrigerate until ready to use.
  • Meanwhile, cook pudding mix in saucepan as directed on package for pudding, using remaining milk. Pour into large bowl; place plastic wrap directly on surface of pudding. Refrigerate 30 min. or until cooled.
  • Add COOL WHIP and remaining marshmallows to pudding; mix lightly. Arrange bananas evenly over chocolate layer in pie; cover with pudding mixture. Refrigerate several hours or until chilled.

3 tablespoons brown sugar
½ cup water
10 bananas, peeled and sliced lengthwise
2 cups whole wheat flour
2 cups toasted wheat germ
3 cups rolled oats
1 cup packed brown sugar
1 cup light margarine
1 tablespoon cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Sprinkle 3 tablespoons of brown sugar over the bottom of a small saucepan or skillet. Cook over medium heat until melted. Stir in water until sugar is completely dissolved. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Pour the syrup into a round baking dish or deep dish pie plate and spread to coat the bottom.
  • Make a layer of bananas on top of the melted sugar. In a medium bowl, stir together the whole wheat flour, wheat germ, oats and 1 cup of brown sugar. Mix in the margarine using your hands, pinching it into small pieces to make a crumbly dough. Sprinkle half of this over the bananas in the dish and pat down. Top with the remaining bananas and sprinkle with about half of the cinnamon. Spread the rest of the dough over the bananas and pat the pie smooth. Sprinkle remaining cinnamon over the top.
  • Bake for 45 minutes in the preheated oven, until the pie topping is toasted and a toothpick inserted into the center comes out clean.

1 1/2 cups sugar
1/2 cup Bisquick baking mix
2 medium bananas, sliced
1 cup heavy cream, chilled
2 tablespoons powdered sugar

Steps:

  • Preheat oven to 350°.
  • Grease a 9" pie plate.
  • In blender, beat together milk, butter, vanilla, eggs, sugar and bisquick on high for 30 seconds until smooth.
  • Pour into pie plate and bake until knife inserted in center comes out clean, about 30 minutes (may take a bit longer).
  • Cool completely.
  • Arrange banana slices on pie.
  • Beat heavy cream with powdered sugar til stiff and spread over top of bananas.

1 envelope unflavored gelatin
1/4 cup cold water
3/4 cup sugar
1/4 cup cornstarch
1/2 teaspoon salt
2-3/4 cups milk
4 egg yolks, beaten
2 tablespoons butter
1 tablespoon vanilla extract
4 medium firm bananas, divided
1 cup heavy whipping cream, whipped
1 pastry shell (10 inches), baked
Juice and grated peel of 1 lemon
1/2 cup apple jelly

Steps:

  • Soften gelatin in cold water; set aside. In a saucepan, combine the sugar, cornstarch and salt. Whisk in the milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. , Stir a small amount of hot filling into yolks. Return all to the pan, stirring constantly. Bring to a gentle boil. Cook and stir 2 minutes longer. Remove from the heat; stir in softened gelatin until dissolved. Stir in butter and vanilla. Cover the surface of custard with plastic wrap and chill until no longer warm. , Slice 3 bananas; fold into custard along with whipped cream. Spoon into pie shell. Cover and refrigerate until set, about 4-5 hours. , Just before serving, place lemon juice in a small bowl and slice the remaining banana into it. Melt jelly in a saucepan over low heat. Drain banana; pat dry and arrange over filling. Brush banana with the jelly. Sprinkle with grated lemon peel. Serve immediately. Refrigerate leftovers.

3/4 cup sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
2 cups whole milk
3 large egg yolks, room temperature, lightly beaten

3 medium, firm bananas
Whipped cream, optional

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°., Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. This recipe comes from Vanessa Sherwood at gliving.com. However, I simplify this much further and omit the salt, coconut oil, and use dates instead of the agave and it is still amazing! For me its much healthier and easier that way but I'm leaving all the options here for you to decide what if you want them or not. You can substitute dates for the agave nectar - one large medjool (soaked & blended) for each tablesoon agave. I just keep "date paste" standing by for stuff like this. 2 tablespoons agave nectar

Steps:

  • Blend the crust indgredients in a food processor. Add more agave if needed to make crust sticky. Line pie pan with saran wrap and press crust on top or use a tart pan with a removable bottom. Place in freezer while making the filling.
  • Blend the pie ingredients, except banana slices, in a blender until smooth. Make sure there is enough liquid to have the ingredients swirling in a vortex. Add coconut water, if needed.
  • Take crust out from freezer and place sliced bananas on top of crust. Pour filling on top of bananas. Place in freezer for 3-4 hours to set. Decorate with walnuts, coconut shavings, or banana slices :D.
