A classic BLT is augmented with fresh focaccia, mashed avocado and mayonnaise. Intensely-flavored oven-dried tomatoes replace juicy beefsteak slices.

1 1/2 pounds bacon
4 ripe avocados, pitted and peeled (1 1/2 pounds)
Juice of 1/2 lime
Focaccia
Oven-Dried Tomatoes
1 to 2 heads Bibb lettuce, leaves separated, or 1/2 head Boston lettuce
1/4 cup Homemade Mayonnaise, or prepared

Steps:

  • Preheat oven to 400 degrees. Place bacon in a single layer in two 11-by-17-inch rimmed baking sheets. Cook in the oven until browned and crisp, turning over halfway through cooking time, 15 to 20 minutes. You may need to drain off some of the fat about halfway through cooking time. Transfer bacon to a paper-towel-lined pan to drain; discard fat.
  • Place avocadoes in a bowl with lime juice, and mash with a fork until chunky but spreadable.
  • Using a large serrated knife, split focaccia horizontally. Spread bottom with avocado mixture; layer with bacon, oven-dried tomatoes, and lettuce. Spread remaining focaccia with mayonnaise, if desired, and top sandwich. Cut into 12 squares, and serve.

2 tablespoons mayonnaise
2 teaspoons Dijon mustard
1/4 teaspoon black pepper, ground
4 -5 roma tomatoes, chopped
1/2 lb cooked bacon, crumbled (about 8 slices)
6 ounces monterey jack cheese, shredded
1/3 cup green onion, sliced
1 cup romaine lettuce leaf, thinly sliced

Steps:

  • Heat oven to 400°F.
  • Stretch or roll bread dough into greased 15x10x1-inch jelly-roll pan. (If dough is difficult to stretch, cover with plastic food wrap and let rest 10 minutes, then continue stretching to fit into pan.).
  • Combine mayonnaise, mustard and pepper in small bowl.
  • Spread evenly over dough.
  • Combine tomatoes, bacon, 3/4 cup cheese and green onions in medium bowl; toss lightly.
  • Sprinkle over dough.
  • Bake for 20 to 25 minutes or until edges of crust are golden brown.
  • Sprinkle with remaining cheese; continue baking just until cheese is melted (2 to 3 minutes).
  • Immediately sprinkle with lettuce. Cut into squares.
  • Serve warm.

Looking for an alternative to garlic bread? Try this golden focaccia bread that's a big hit at our house. The dough is easy to whip up in the bread machine, then season with rosemary, garlic salt and Parmesan cheese. I serve it warm whenever we're having spaghetti or another Italian dish. -Kay King, Dyersville, Iowa

Number Of Ingredients 12

3/4 cup plus 3 tablespoons water (70° to 80°)
3 tablespoons butter, softened
2 tablespoons nonfat dry milk powder
3 tablespoons sugar
1-1/2 teaspoons salt
3 cups bread flour
2-1/4 teaspoons active dry yeast
TOPPING:
2 tablespoons olive oil
3 tablespoons grated Parmesan cheese
2 teaspoons minced fresh rosemary or 3/4 teaspoon dried rosemary, crushed
1/2 teaspoon garlic salt

Steps:

  • In bread machine pan, place the first seven ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). , When cycle is completed, turn dough onto a lightly floured surface. Cover and let rest for 15 minutes. Knead for 1 minute. Press into a 15x10x1-in. baking pan. Press dough 1/4 in. up the sides of pan. Cover and let rise in a warm place for 20-30 minutes or until sightly risen. , With a wooden spoon handle, make indentations at 1-in. intervals. Brush dough with oil; sprinkle with Parmesan cheese, rosemary and garlic salt. Bake at 400° for 13-15 minutes or until lightly browned. Cool slightly. Cut into squares; serve warm.
