Bacon-Blue Cheese Sandwiches image

Onion jam, which is reason enough to try this sandwich, is simple to make (see the recipe for BLAAK Onion Jam at beekman1802.com, which also sells the jam by the jar). Although any blue cheese is delicious here, look for one that's sliceable or crumbly, not gooey. Stilton, Maytag, and Roaring Forties are good choices.

8 slices white or sourdough bread
6 ounces sweet onion jam
6 ounces blue cheese, sliced
6 slices Irish or Canadian bacon, cooked
Unsalted butter, for pan

Steps:

  • Preheat oven to 300 degrees. Spread each of 4 bread slices with 2 tablespoons onion jam. Top each with a quarter of the cheese, 1 1/2 slices bacon, and 1 slice bread.
  • Melt 1 to 2 tablespoons butter on a griddle or in a heavy skillet over medium heat. Add sandwiches in batches, and cook until golden brown on both sides, about 6 minutes total, flipping once and adding more butter as needed. Transfer to a baking sheet, and bake until cheese is melted, about 5 minutes. Cut in halves or quarters, and serve hot.

Years ago, I went through my mom's recipe box and found this classic recipe. Everyone I know loves the rich and creamy blue cheese dressing with a hint of bacon.

3/4 to 1 cup (3 to 4 ounces) crumbled blue cheese
6 bacon strips, cooked and crumbled

2 teaspoons sugar
1-1/2 teaspoons Worcestershire sauce
1/4 teaspoon seasoned salt
1/8 teaspoon pepper

Steps:

  • In a small bowl, combine all ingredients; mix well to blend. Cover and chill for at least 3 hours. Store in the refrigerator.

1 cup (4 ounces) crumbled blue cheese
1/4 cup crumbled cooked bacon
1/4 cup minced chives

4 slices cooked OSCAR MAYER Bacon, finely chopped
1/3 cup crumbled blue cheese
1/2 cup KRAFT Mayo with Olive Oil Cracked Pepper Reduced Fat Mayonnaise
8 mini pretzel sandwich rolls, split
1 cup tightly packed spring lettuce mix

Steps:

  • Heat grill to medium heat.
  • Mix ground beef and bacon just until blended; shape into 8 meatballs. Insert about 1-1/2 tsp. blue cheese into center of each meatball, pressing meat mixture around cheese to completely enclose cheese. Flatten each into 1/2-inch-thick patty.
  • Grill 3 to 5 min. on each side or until done (160ºF).
  • Spread garlic aioli onto bottom halves of rolls; cover with burgers, lettuce and tops of buns.

Recently I have been puzzled when I read about an IBM Watson recipe "African style tiramisu with blue cheese". I didn't find this recipe, but I started reflecting about this combination. I had blue cheese and bacon at home, and decided to make my own "Watson style" waffle recipe. With the ingredients you can make 8 large Belgian waffles. With the cheese and the bacon they become really hearty. You can eat them immediately. Real Belgian waffles are made upside down. After you have filled it with the batter, you have to turn it upside down, so that it can distribute equally. After a few minutes you can return and continue to bake until ready. 200 g all-purpose flour
300 ml milk
7 g dry yeast (one package)
2 eggs
50 g blue cheese (I used cambozola)
50 g bacon (I used Schwarzwalder Schinken)

Steps:

  • Mix the flour with the milk, the egg and the yeast.
  • Cut the blue cheese and the bacon into fine pieces, and add it to the batter.
  • Heat the waffle maker.
  • Bake the waffles in app. 5 minutes, depending on your machine. They are ready when they are golden brown and come out without problems.

Using a 1-tablespoon ice cream scoop, scoop little balls of the cheese mixture and roll them between your palms to smooth. Place on a plate, cover and refrigerate for at least 1 hour.
  • When ready to serve, allow the balls to sit at room temperature for 5 minutes. Mix together the pretzels and chives in a small bowl. Roll the truffles in the crushed pretzel mixture and serve.
