SMOKY SAUSAGE & APPLE PIZZA

- In a small bowl, combine the all-purpose flour, 1/2 cup whole wheat flour, yeast, salt and sugar. Stir in the water, oil and honey; beat just until moistened. Stir in enough remaining whole wheat flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 30 minutes., Meanwhile, in a large skillet, saute the onion, 2 teaspoons vinegar, 1 teaspoon syrup, salt and cayenne in oil until onion is tender. Remove from the heat; stir in the sage, mustard and remaining vinegar and syrup., Grease a 12-in. pizza pan; sprinkle with cornmeal. Roll out dough to fit prepared pan; prick thoroughly with a fork. Bake at 450° for 5-8 minutes or until edges are lightly browned., Arrange the onion mixture, beet greens, apple, sausages and cheese over top. Bake 5-7 minutes longer or until crust is golden and cheese is melted.

PIZZA WITH CARAMELIZED ONIONS, FIGS, BACON AND BLUE CHEESE
Here is a recipe for pizza that calls to mind - at least this mind - the joys of car travel through southeastern France, where pizzas such as this are available at all the imaginary cafes in small towns near the Italian border. It certainly tastes as if it comes from that region and, if you close your eyes as you eat it, you can almost imagine yourself halfway through a drive from Aix to Turin. The time spent caramelizing the onions is more than worth it, so do it the day before you intend to make the pie. Which is when, as it happens, you should make the dough as well. And we have a recipe for that as well - a version adapted from the team behind the magical Roberta's Pizza in Brooklyn.

- At least 45 minutes before cooking, preheat the oven and pizza stone to 550 degrees.
- Melt the butter in a large sauté pan over high heat. Add the onions, thyme and bay leaves. Cook for 5 minutes, stirring often, until the onions begin to wilt. Reduce the heat to medium-low and cook, stirring occasionally, until the onions have softened and turn a deep, golden brown, about 25 minutes. Season to taste with salt and pepper. Remove the bay leaves and transfer the onions to a small bowl.
- Place the bacon in the pan and set over high heat. Cook, stirring occasionally, until brown and crispy. Using a slotted spoon, transfer the bacon to a small bowl.
- Place the pizza dough on a heavily floured surface and stretch and pull, using your hands or a rolling pin, into about a 14-inch round. Place on a lightly floured pizza peel or rimless baking sheet. Cover with the toppings, careful not to press on the dough and weigh it down: the caramelized onions first, then the figs and bacon, and finally the Gorgonzola, leaving roughly a 1/2 inch border. Shake the pizza peel slightly to make sure the dough is not sticking. Carefully slide the pizza directly onto the baking stone in one quick, forward-and-back motion. Cook until the crust has browned on the bottom and the top is bubbling and browning in spots, about 7 minutes. Drizzle with a little olive oil and some cracked black pepper. Serve hot. Makes 1 pizza.

- Unroll dough, separating into strips. Working on flat surface, coil 1 strip dough into spiral. Add second strip to end of the first strip; pinching ends together to seal; continue coiling with remaining dough to make an 8" circle. Roll coiled dough into a 12" circle, place in 12" pizza pan coated with cooking spray. Arrange spinach, apple and cheese over dough. Bake at 450 for 15 minutes.

- Preheat oven to 400° F. Roll or stretch the pizza dough onto a pizza stone of baking sheet sprayed with cooking spray. Bake the pizza dough for 10 minutes then remove it from the oven.
- Heat a medium sized skillet over medium high heat and spray it generously with cooking spray. Add in the thinly sliced onion along with a pinch of salt and sauté for about 4 minutes stirring the onions a couple times. After 4 minutes add in the thinly sliced apple and sauté another 3 minutes until the apple has softened slightly and the onions are soft and golden. Remove the cooked onion and apple from the pan onto a plate, set aside.
- In a large bowl whisk together the eggs, egg whites, salt, pepper, and thyme. In the same skillet over medium heat spray again with more cooking spray. Pour the egg mixture into the prepared skillet and scramble the eggs just until they are set, about 3 minutes.

- In the bowl of a mixer, combine 1 cup of flour, yeast, sugar, and salt. Add water and oil. Continue to beat the dough for a minute or two or until well blended.
- Gradually stir in remaining flour, 1/2 a cup at a time until dough forms into a ball. Knead the dough with the dough hook until smooth (this should take about 3 minutes).
