BLUE CHEESE-CELERY FINGER FOOD
This is a great little appetizer you can whip up in no time especially when there are unannounced guests. I usually have the ingredients on hand. You can garnish the celery pieces with almonds if you like.

- Press Roquefort cheese through a sieve. Combine Roquefort cheese, butter, and sherry in a bowl and stir until smooth. Fill cheese mixture into a pastry bag with a star nozzle and fill celery pieces with cheese mixture.

BUFFALO CHICKEN AND BLUE CHEESE DIPPING SAUCE

Steps:
- Dipping Sauce: Combine all ingredients in a small bowl, mixing well.
- With the back of the mixing spoon, mash the blue cheese into the sour cream until almost all of the lumps are gone.
- Chill in the refrigerator for at least 1 hour before serving.
- Chicken: Soak the chicken in the hot sauce in the refrigerator for at least 30 minutes.
- Put the flour in a pie tin and season with salt and Cajun seasoning.
- Remove chicken from hot sauce, shake off excess, and dredge chicken in the flour.
- Set on a baking rack.
- Heat the butter and oil in a large skillet over medium heat.
- When the butter has stopped bubbling, add the chicken tenders and cook until golden and cooked through, about 3 minutes per side.
- Remove from the pan and drain on paper towels.
- Serve warm with blue cheese dipping sauce and celery pieces.
CELERY AND BLUE CHEESE SALAD
I have been craving the cool crispiness of fresh celery. Now teamed with creamy chunks of tangy blue cheese, it's so simple and so pleasing. Serve with rice pilaf or polenta cutlets. Adapted from Moosewood Restaurant New Classics cookbook. Enjoy! Recomended cheeses are Maytag, mellow Danish, and Buttermilk Blue.

- Cut the celery crosswise into 1/2" thick pieces to make 4 cups sliced.
- Place it in a pretty bowl and sprinkle in crumbled blue cheese.
- Add the salt, pepper, and olive oil and toss well.
- Serve chilled. Enjoy!
