This is a martini that the whole family can enjoy. This is from Paula Deen and needs to be made right before serving.

1 lb jumbo crabmeat or 1 lb regular lump crabmeat
2 lemons, juice and zest of, grated, plus
lemon juice, for coating glass rims
1 tablespoon mayonnaise (just enough to hold it together)
1 tablespoon Dijon mustard
12 asparagus, stems bottom halves chopped, tops left whole (cooked to your liking)
seasoning salt
4 swiss chard leaves, to serve
4 whole olives, for garnish
4 lemon slices, for garnish
water crackers or toast points, to serve

Steps:

  • Just before serving, gently combine the crabmeat with the zest, juice, mayonnaise, mustard, and chopped asparagus stems; add seasoned salt, to taste.
  • To serve: spread some seasoned salt onto a plate, rim the martini glasses with lemon juice, and dip them into the salt. Line each glass with a chard leaf and fill with the crab mixture. Garnish each martini with 3 asparagus spears, an olive, and a lemon slice. Serve with water crackers or toast points.

2 tablespoons dill seed
2 tablespoons mustard seed
2 tablespoons cumin seed
2 tablespoons chili powder
2 tablespoons paprika
1 tablespoon red pepper flakes
2 sprigs rosemary
10 sprigs thyme
3 sprigs dill
2 sprigs sage
½ bunch parsley
30 live, hard-shell blue crabs

Steps:

  • Crush the dill seed, mustard, and cumin in a spice grinder or with a mortar and pestle. Pour the spices into a 5 gallon stockpot along with the chili powder, paprika, red pepper flakes, rosemary, thyme, dill, sage, and parsley. Fill the pot 3/4 full with water, and bring to a rolling boil over an intense flame.
  • Add the blue crabs, cover the pot, and boil until all of the shells turn red, and the meat is no longer translucent, about 20 minutes. Stir the crabs occasionally as they boil to ensure even cooking.

36 live blue crabs
½ cup seafood seasoning (such as Old Bay®)
½ cup salt
3 cups beer
3 cups distilled white vinegar
¼ cup seafood seasoning (such as Old Bay®)

Steps:

  • Combine 1/2 cup seafood seasoning, salt, beer, and vinegar in a large stockpot over high heat. Bring to a strong simmer.
  • Right before cooking, carefully place each crab upside down and stick a knife through the shell, just behind mouth.
  • Fit a screen over the beer mixture and layer the crabs on the screen. Be sure that the crabs are above the simmering liquid. Cover.
  • Steam crabs until they turn bright orange and all of the blue/green color is gone, 20 to 30 minutes. Sprinkle with the remaining 1/4 cup seafood seasoning before serving.

BEAUTIFUL BLUE VODKA MARTINI



Beautiful Blue Vodka Martini image

This is a BEAUTIFUL drink that I fell in love with at one of our local sports bars. This was only my 2nd Martini to ever try. I really like vodka and this one had vodka so I tried it. It is very pretty and at restaurants where I order it, everyone, including the servers remark on how pretty it is. It is BRIGHT blue. So even if you don't like it you'll enjoy looking at it! It is not real sweet so if you like sweet and don't like the taste of vodka then you might not like it. It's all alcohol so it only takes 2-3 at the most but it's a good party drink. Just be sure to sip it slowly! I really hope you like it. If you don't really like vodka martinis, please don't try it and hate it, and then give me a bad rating. I take my ratings very seriously. Thanks! Also, you can add a drop of Grenadine (red) at the end, which will drop to the bottom of the Martini glass and will look like a purple ball. Adds a nice, sweet, appetizing touch. This recipe makes enough for two or more martinis. Downsize for your needs.

4 ounces vodka
3 ounces blue curacao
2 ounces dry vermouth (Don't use sweet!)
grenadine (optional)
ice (Cubed or Crushed)

Steps:

  • Place ice into the martini shaker. About 3/4's full.
  • Add first 3 liquid ingredients to martini shaker using a one ounce jigger.
  • Put the lid on the shaker, grab a hand towel and grab the shaker and shake like crazy for at least 30 seconds.
  • Using the strainer pour into your martini glasses and add one drop of Grenadine if you wish.
  • Garnish as you wish with an orange slice, lemon slice or olives or whatever you prefer. I like lemon.
  • Have fun and drink safe!
