Capture the essence of summer and enjoy it all year long with this fresh corn relish recipe. To serve, pile a spoonful on top of a burger or dig into a scoop of corn relish dip with tortilla chips.

16 - 20 fresh ears of corn
2 cup water
3 cup chopped celery (6 stalks)
1.5 cup chopped red sweet pepper (2)
1.5 cup chopped green sweet pepper (2)
1 cup chopped onion (2 medium)
2.5 cup vinegar
1.75 cup sugar
4 teaspoon dry mustard
2 teaspoon pickling salt
2 teaspoon celery seeds
1 teaspoon ground turmeric

Steps:

  • Remove husks and silks from corn; cut corn from cobs (do not scrape cobs). Measure 8 cups of corn. In an 8- to 10-quart stainless-steel, enamel, or nonstick heavy kettle or pot combine corn and the 2 cups water. Bring to boiling; reduce heat. Simmer, covered, for 4 to 5 minutes or until corn is nearly tender; drain.
  • In the same kettle, combine cooked corn, celery, red and green sweet pepper, and onion. Stir in vinegar, sugar, mustard, pickling salt, celery seeds, and turmeric. Bring to boiling. Reduce heat; simmer, uncovered, for 25 minutes, stirring occasionally.
  • Ladle hot relish into hot, clean half-pint or pint canning jars, leaving a 1/2-inch headspace. Wipe jar rims; adjust lids. Process filled jars in a boiling-water canner for 15 minutes (start timing when water returns to boil). Remove the jars from canner; cool on wire racks.

16 -20 fresh ears corn
2 cups water
3 cups celery, chopped (about 6 stalked)
1 1/2 cups red peppers, chopped (2 medium)
1 1/2 cups green peppers, chopped (2 medium)
1 cup onion, chopped (1 large)
2 1/2 cups vinegar
1 3/4 cups sugar
4 teaspoons ground mustard
2 teaspoons pickling salt
2 teaspoons celery seeds
1 teaspoon ground turmeric
3 tablespoons cornstarch
3 tablespoons water

Steps:

  • Remove husk from corn. Scrub with stiff brush to remove silks, rinse. Cut kernels from cob(do not scrape cobs). Measures 8 cups kernels.
  • In large pot, combine corn kernels, and 2 cups water. Bring to a boil, reduce heat. Simmer covered for 4-5 minutes or until corn is nearly tender, drain.
  • In the same pot, combine corn, celery, peppers, and onion. Stir in vinegar, sugar, mustard, pickling salt, celery seeds and turmeric. Bring to a boil, stirring until sugar dissolves. Reduce heat, simmer uncovered for 5 minutes, stirring occasionally.
  • In small bowl, stir together cornstarch and 3 tablespoons water. Add cornstarch mixture to corn mixture. Cook and stir until mixture is slightly thickened and bubbly. Cook and stir 2 minutes.
  • Ladle into hot sterlized pint jars, leaving 1/2" headspace. Wipe rims and add lids.
  • Process in water bath for 15 minutes. Start timing once water is boiling.
  • **Cumin-Poblano corn relish: prepare as directed, except substitute 1 1/2 cups chopped fresh poblano chile peppers for the green peppers. Reduce vinegar to 2 cups and add 1/2 lime juice. Substitute 1 tablespoon ground cumin for the celery seeds and turmeric.
  • **Apple-corn relish: prepare as directed, except reduce corn kernels to 6 cups and add 2 cups chopped Granny Smith apples with celery, peepers, and onion. Substitute 2 teaspoons caraway seeds for the celery seeds.
  • **Olive-corn relish: prepare as directed, except add 1 cup coarsely chopped pitted green olives and 1 cup chopped pitted black olives with celery, peppers and onions.

6 cobs fresh corn, shucked or (28-ounce) can corn
1 red pepper
1 large poblano pepper (poblanos are called pasillas in California and the Southwest)
2 tablespoons olive oil
3 cloves garlic, minced
1 medium onion, diced
1 yellow pepper, diced
1 orange pepper, diced
4 Roma tomatoes, diced
1 to 2 ounces cream cheese
1/4 cup milk or cream
Salt and freshly ground black pepper
1 bunch fresh cilantro leaves, chopped
1 bunch fresh chives, chopped

Steps:

  • Heat grill to medium.
  • Place corn in foil, sprinkle with water, wrap and put on the grill, with the red and pablano peppers. Char the peppers, remove, peel and dice for relish. Remove the corn to a cutting board, cut off the kernels and reserve in a medium bowl.
  • Add oil to a large skillet and saute the garlic and onion. Saute for a minute, then add the roasted and fresh peppers, tomatoes, and corn heat for another quick minute. Add cream cheese and stir in milk very slowly until the cream cheese is melted and the mixture is smooth. Pour into a serving bowl, fold in cilantro and season with salt and pepper, to taste. Serve garnished with chives.

1 teaspoon salt
1/2 teaspoon ground turmeric

Steps:

  • In a large saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 20-30 minutes or until thickened. Store in the refrigerator.

4 cups chopped cabbage
1 cup chopped onion
1 cup chopped green bell pepper
1 cup chopped red bell pepper
1 cup white sugar
2 tablespoons ground dry mustard
1 tablespoon celery seed
1 tablespoon mustard seed
1 tablespoon salt
1 tablespoon ground turmeric
1 quart apple cider vinegar
1 cup water

Steps:

  • In a large saucepan, mix corn, cabbage, onion, green bell pepper, red bell pepper, white sugar, ground dry mustard, celery seed, mustard seed, salt, turmeric, apple cider vinegar and water. Bring to a boil. Reduce heat and simmer 20 minutes.
  • Transfer the mixture to sterile containers. Seal and chill in the refrigerator until serving.
