BROOKLYN BOWL FRIED CHICKEN



Brooklyn Bowl Fried Chicken image

This fried chicken is a specialty of Eric and Bruce Bromberg's SoHo restaurant Blue Ribbon and many of its offspring, including Brooklyn Bowl, the bowling alley in Williamsburg, Brooklyn. It is famous, and it is crunchy. And, as long as you are not afraid of having a three-inch-deep lake of hot oil in your kitchen, it is preposterously simple to make at home. No three-day buttermilk bath, or lard seasoned with bacon - just a quick crust of egg whites and matzo crumbs that the Bromberg brothers ought to patent. You sprinkle it with a sort-of-Cajun spice mix and send it to the table with pots of honey, if you are a restaurant, or, at home, with a bear-shaped squeeze bottle. The spice mix, all of which you will likely have in your pantry, comes together in two minutes.

Vegetable oil, for frying
4 large egg whites
1/2 cup matzo meal, or matzo crackers crushed with a rolling pin
1/2 cup all-purpose flour
1 medium chicken (about 3 pounds), cut into eight pieces (2 legs, 2 thighs, 4 breast pieces; save wings for stock)
Fine sea salt
freshly ground black and white pepper
1 teaspoon Cajun seasoning (see recipe)
Honey, for serving

Steps:

  • Fill a large pot with oil to a depth of about 3 inches. Heat the oil over medium-high heat until a deep-fat thermometer reads 375 degrees.
  • Meanwhile, whisk the egg whites in a large, shallow bowl. In a separate shallow bowl, combine the matzo meal and flour. Keeping the dark meat and the white separate, dip each chicken piece in egg white and let excess drip back into the bowl. Then roll each chicken piece in the matzo mix, and tap off excess.
  • Carefully lower the chicken thighs and drumsticks into the oil. After 3 minutes, carefully add the breast pieces. (Keep the oil at 375 by adjusting heat as necessary.) Fry until dark gold, about 10 minutes more. Transfer the fried chicken to a paper-towel-lined plate. Sprinkle immediately with salt and pepper, then coat the pieces with the Cajun seasoning. Serve the chicken with honey, for dipping.

6 cups soy oil
1 whole (3-pound) chicken, cut into 8 pieces
4 large egg whites, whisked
1/2 cup matzoh meal
1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 cup plus 2 tablespoons salt
1 teaspoon finely ground white pepper
1 teaspoon Fried Chicken Seasoning
Chicken Gravy, for serving
Mexican honey, for serving

Steps:

  • Fill a large pot with oil. Heat oil over medium-high heat until it reaches 375 degrees on a deep-fry thermometer.
  • Rinse chicken pieces and pat dry with paper towels. Place egg whites in a large shallow dish. In another shallow bowl, combine matzoh meal, flour, and baking powder. Dip each chicken piece into the egg white mixture to coat; let excess drip back into dish. Then, coat each piece of chicken with matzoh mixture to coat; tap off excess.
  • Working in batches if necessary, fry chicken until dark golden, about 10 minutes for breast meat and 13 minutes for leg and thigh meat. Transfer to a paper towel-lined plate to drain. Mix together salt and pepper and sprinkle over chicken immediately; coat each piece with chicken seasoning. Serve immediately with gravy, if desired, and honey.

1/2 teaspoon hot paprika
1/8 teaspoon cayenne pepper
1/8 teaspoon dried basil
1/8 teaspoon dried parsley
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
4 egg whites, beaten
1/2 cup flour
1/2 cup matzo meal
1/4 teaspoon baking powder
3 lbs chicken, cut into 8 pieces
kosher salt & freshly ground black pepper
honey, for dipping (optional)

Steps:

  • Add oil, to a depth of 2 inches in a Dutch oven and heat over medium high heat, about 375 degrees F.
  • In a small bowl, combine paprika, cayenne, basil, parsley, garlic powder, and onion powder; set aside.
  • Beat egg whites in another bowl.
  • In a third bowl, combine flour, matzo, and baking powder.
  • Dip a piece of chicken in egg whites, then press into the matzo mixture so crumbs adhere; shake off any excess.
  • Transfer chicken to a rack set over a baking sheet.
  • Repeat with remaining chicken pieces.
  • Fry chicken until crispy and cooked through, about 10-12 minutes; drain on paper toweling then season with salt, pepper, and the reserved seasoning mixture.

1 c buttermilk
2 1/4 tsp black pepper divided
1 tsp salt
1/2 tsp cayenne pepper
1 whole chicken (about 4lbs) cut into 8 pieces
1 1/2 c all purpose flour
2 Tbsp paprika
2 tsp dry mustard
1 1/2 tsp garlic salt
2 1/2 c vegetable oil

Steps:

  • 1. Place the buttermilk, 1/4 tsp. black pepper,salt, and cayenne pepper in a large resealable plastic bag. Add chicken,seal and shake to coat. Chill for 30 minutes or up to 2 hours, if possible.
  • 2. Place the flour,paprika, mustard,garlic,salt,and remaining pepper in a seperate bag,Add one piece of chicken to the bag,close and shake to coat. Transfer to a wire rack. Repeat with thne remainig chicken pieces.
  • 3. Preheat oven to 250 F.. heat the vegetable oil in a deep medium skillet to 350 For until a cube of bread dropped into the oil browns in 30 seconds. Add4 chicken pieces to the skillet and reduce heat. Cover and cook for 10 minutes.
  • 4. Turn the chicken and cook, uncovered until the juices run clear when chicken is pieced with a knife, about 10 minutes longer. Drain the chicken on paper towels. Transfer to a baking sheet and place in the oven to keep warm. Repeat the steps for frying and draining for the remaining chicken pieces. Serve hot.

Working with one piece at a time, dip chicken in egg whites and press into matzo to coat. Shake off excess; transfer chicken to a rack set inside a baking sheet. Working in 2 batches, fry chicken until crispy and cooked through, 10-12 minutes. Transfer chicken to paper towels and season with salt, pepper, and the reserved paprika mixture. Serve with honey, if you'd like.

1 tsp garlic powder
1 tsp paprika
3 eggs
2 c buttermilk

Steps:

  • 1. Mix the first 5 ingredients in a large dish (flour and spices).
  • 2. Mix egg and buttermilk in another large dish.
  • 3. Cut up 3 or 4 boneless chicken breasts into strips.
  • 4. Dip them in the egg mixture first, let the excess drain off.
  • 5. Then coat thoroughly in the flour mixture.
  • 6. Second dredge - back to the egg mixture.
  • 7. Back to the flour mixture.
  • 8. Deep fry at 350 for 6-7 minutes.
