CHICKEN DIVAN RECIPE
Steps:
- Preheat oven to 350 degrees F. Spray a 9x13 pan with nonstick coconut or avocado oil cooking spray.
- Season chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper. Set aside
- Add 1 tablespoon avocado oil to a large skillet. Heat over medium-high heat until very hot. Toss the broccoli in a skillet and sauté for 30 seconds. Add 1/2 cup chicken broth, cover pan, and lower heat to medium. Steam broccoli until tender about 2 - 3minutes. Transfer broccoli to prepared bake dish in an even layer.
- Melt one tablespoon butter (you can substitute with olive oil or avocado) over medium heat. Turn the heat up to medium-high and add chicken in a single layer and sear it. Continue to cook and stir chicken until cooked through. Then evenly layer chicken on top of broccoli.
- Melt 2 tablespoons butter with 2 tablespoons olive oil over medium heat (or just use olive oil for dair-free version). Whisk in cassava flour and cook stirring for 1 minute. Turn heat to low then gradually whisk in remaining 1 1/2 cups chicken broth and 1 cup of milk. Add remaining 1 cup milk, then add Dijon, Worcestershire sauce, spices, and chicken bouillon.
- Bring sauce to a boil, whisking constantly. Reduce heat to a simmer and whisk often until thick. Remove from heat, set it asaide, and whisk in 1/2 cup cheddar until melted. Add Parmesan cheese, whisk it until melted. Then whisk the sour cream in until blended. Pour sauce over broccoli and chicken and spread into an even layer.
- Cashew sauce: Add all the ingredients to the high- speed blender. Tharnser it to a small pot and cook it for 5 minutes, whisking in occasionally.
- Breadcrumbs topping: Melt butter over medium heat in a medium skillet. Add Panko and stir to coat. Continue cooking until crumbs become golden brown. Evenly sprinkle over cheese. Cover Chicken Divan with a lid and bake at 350 degrees for 30 minutes.

CHICKEN DIVAN FROM SCRATCH
This is my daughter's favorite comfort food. We started out making this recipe with a canned cream soup and transitioned over the years to a from-scratch cream sauce. The result is a to-die-for broccoli-chicken casserole, which is soooo good as leftovers! Serve with rice.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish.
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until tender, 3 to 5 minutes. Drain and pour into the prepared dish.
- Warm oil in a large frying pan. Add chicken; sprinkle with steak seasoning. Saute until browned on all sides, about 5 minutes. Pour over broccoli in the casserole dish.
- Melt 3 tablespoons butter in a small saucepan. Stir in flour to make a thick paste, then pour in chicken broth. Continue stirring to dissolve the paste. Pour in heavy cream and sherry. Crumble in bouillon cube. Bring to a boil. Reduce heat to a simmer and cook for 5 minutes, stirring to ensure no lumps form.
- Add 1/2 cup Colby Jack cheese to the cream sauce; stir until completely melted. Pour cream sauce over the chicken and broccoli in the casserole dish.
- Melt remaining 3 tablespoons butter and pour over bread cubes. Toss until all bread cubes are coated with butter. Arrange bread cubes evenly on top of the casserole. Sprinkle remaining 1/2 cup cheese on top. Cover casserole tightly with foil.
- Bake in the preheated oven for 25 minutes. Uncover and bake until cheese and bread are browned, about 10 minutes more.

CHICKEN ASPARAGUS DIVAN
A simple italain dish. If you believe all good things come from combining parmesan, whipping cream, and mayo -- this is your recipe. Just another excuse to use classic ingredients.

Steps:
- Preheat oven to 350 degrees.
- In medium-hot skillet (Calphalon) add olive oil.
- Add chicken and brown each side (five minutes). Place chicken breasts in dish and set aside.
- Add onion, celery, and salt to skillet. Scrapping bottom of skillet - sautee for three minutes.
- Add back chicken and water to skillet. Bring to a boil. Simmer until chicken is cooked.
- Drain and discard liquid.
- In separate bowl combine chopped onion, parmesan cheese, and soup.
- Grease a 13x9x2 baking pan.
- Spread half of mixture in bottom of baking pan.
- Add asparagus on top of mixture.
- Add chicken / onion/ celery on top of asparagus.
- Spread remaining mixture on top.
- Bake @ 350 for 20 minutes until heated completley.
- Combine whipping cream and mayo in small bowl.
- Spread over chicken. Sprinkle parmesan on top. Broil in oven till brown.

OLD TIME CHICKEN DIVAN
Not for your typical rushed meal, this classical dish is worth the work! For another presentation, place sliced almonds on top of the chicken and broccoli before the final sprinkling of cheese.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add broccoli, and cook until just tender, 3 to 4 minutes. Drain and rinse well with cold water to chill. Place drained broccoli into a 9x13 inch baking dish and set aside.
- Melt butter in a saucepan over medium heat. Whisk in flour, and cook, whisking constantly, until the flour begins to turn from white, to a pale beige, about 3 minutes. Whisk in sherry, chicken broth, and heavy cream until smooth. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer for 5 minutes; season with salt and pepper.
- Pour half of the hot cream sauce over the broccoli and top with chicken slices. Stir Parmesan cheese into the remaining sauce, and pour over the chicken slices. Sprinkle top with extra cheese, if desired.
- Bake in preheated oven for 20 minutes or until heated through, then broil for a few minutes until top has turned golden brown.

Steps:
- Preheat oven to 350 degrees.
- Place frozen broccoli in 1/2 cup water in a saucepan and boil about 6 minutes; drain well and set aside.
- In a "large" bowl mix together the soup, mayonnaise, sour cream, cheddar cheese, lemon juice, curry powder, salt, pepper and wine or broth; mix well. Add broccoli and chicken and mix thoroughly.
- Spray a 13 x 9 Pyrex dish with vegetable spray. Pour in soup/chicken mixture. Smooth mixture with a spatula or the back of a spoon.
- Combine bread crumbs, parmesan cheese and butter. Sprinkle on top of mixture.
- Bake 30-45 minutes or until heated through.
- Note: TO lighten up you can use 98% ff cream of mushroom soup, light mayonnaise, light sour cream and low-fat cheddar cheese.
- This is really yummy and makes alot!
