BLUEBERRY SHORTBREAD CHEESECAKE
I personally prefer cheesecake with a different crust rather than a graham cracker crust. Through trial and error, I have come up with this recipe using blueberries. It takes a lot of time, but is definitely worth it. Don't think about the calories!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Combine the butter, flour, sugar, and salt in a food processor. Process until mixture begins to form small lumps; press into the bottom of a 2-quart baking dish.
- Bake in preheated oven until golden brown, about 20 minutes; remove from oven. Reduce oven's heat to 325 degrees F (165 degrees C).
- Beat the cream cheese and 1 cup of sugar in a bowl until soft and creamy. Stir in the eggs one at a time, until smooth. Gradually stir in the sour cream, vanilla, and lemon zest. Pour the mixture over the crust.
- Bake until firm to the touch, 45 to 55 minutes. Meanwhile, make the topping by combining the blueberries, sugar, and cornstarch in a large saucepan over medium heat; cook until thickened. Allow mixture to cool.
- Pour the cooled blueberry mixture over top of the cream cheese layer. Chill assembled cheesecake in refrigerator overnight.

I found this recipe at cooks.com - I had an instant cheesecake in the cupboard that I needed to use, and sent my son to the store for the Twinkies. He really, really liked this dessert - now he makes it for his girlfriend and her family!

Steps:
- Spray bundt pan with cooking spray. Press split Twinkies (cake side next to pan) into bundt pan.
- Make cheesecake according to mix (do not use crumbs). Beat Cool Whip and cream cheese in a separate bowl, then fold into the cheesecake filling.
- Pour in the middle of the Twinkies.
- Chill until set; unmold and add cherry pie filling in center.

- Preheat oven to 350°. In a small saucepan, combine the blueberries, sugar and lemon juice. Cook and stir over medium heat for 5 minutes or until the berries are softened. Combine cornstarch and water until smooth; stir into the blueberry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; cool to room temperature. Transfer to a blender; cover and process until smooth. Set aside. , For crust, in a small bowl, combine the crumbs and sugar; stir in the butter. Press onto the bottom of a greased 9-in. springform pan. Place pan on a baking sheet. Bake at 350° for 10 minutes. Cool on a wire rack., In a large bowl, beat cream cheese and sugar until smooth. Beat in the sour cream, flour and vanilla. Add eggs; beat on low speed just until combined. Pour filling over crust. Drizzle with 3 tablespoons blueberry mixture; cut through batter with a knife to swirl., Return pan to baking sheet. Bake for 40-45 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Serve with remaining blueberry sauce. Refrigerate leftovers.

Steps:
- Combine crumbs, 2 tablespoons sugar and butter. Pat mixture into the bottom of a 9 inch springform pan.
- Mash cream cheese until soft and creamy. Gradually beat in sour cream, 3/4 cup sugar, vanilla and flour. Beat in eggs one at a time.
- Pour mixture into crumb-lined pan. Bake in a preheated 325 degree F (165 degrees C) oven for 1 hour or until firm to the touch.
- Cool and then remove cake from pan by loosening edges with a knife. Place frozen blueberries on top of cake. Melt jelly and spoon over blueberries to glaze. Chill until ready to serve.

In another bowl, combine the biscuit mix, milk and remaining sugar. , Spread half of the batter into a 1-qt. baking dish coated with cooking spray; top with half of the blueberries and half of the reserved sugar mixture. FANTASTIC TWINKIE REFRIGERATOR STRAWBERRY SHORTCAKE!
Plan ahead this needs to chill for a minimum of 2 hours before serving, purchase the ready-made glaze for this, if you like a lot of cream topping then use a 12-ounce container of Cool Whip topping, 16 servings is only estimated I can eat this whole cake myself lol! --- see note on bottom for a thinner twinkie crust -- you will *LOVE* this! :)

- Prepare a 13 x 9-inch pan.
- Mix the strawberry slices with the glaze; chill until ready to use.
- Place the whole twinkies into the bottom of the pan, pressing down slightly (do not slice the twinkies leave in one piece).
- In a bowl using an electric mixer at medium speed beat softened cream cheese with condensed milk until smooth.
- Fold in the 8-ounce container using a spatula until combined.
- Spread the cream cheese mixture over the twinkies.
- Spoon the berries over the cream cheese mixture.
- Cover with plastic wrap and chill for a minimum of 2 hours before serving.
- *NOTE* for a thinner twinkie crust use 8 twinkies and slice in half lengthwise, spread into bottom of the pan.
