SWEET BLUEBERRY CREAM CHEESE PIE



Sweet Blueberry Cream Cheese Pie image

This is a crowd pleaser. Easy to make, but needs to be chilled for several hours.

1 cup all-purpose flour
¾ cup chopped pecans
½ cup margarine, melted
4 cups blueberries
1 cup white sugar
2 tablespoons cornstarch
1 teaspoon lemon juice
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
⅓ cup lemon juice

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Mix flour, pecans, and margarine in a bowl. Press dough into a 9x13-inch baking dish to form a crust.
  • Bake in preheated oven until golden brown, about 30 minutes. Allow crust to cool completely.
  • Meanwhile, heat blueberries, sugar, cornstarch, and 1 teaspoon lemon juice in a saucepan over medium heat until berries burst and juice thickens, about 10 minutes. Allow blueberry sauce to cool completely.
  • Beat cream cheese until fluffy. Add sweetened condensed milk and blend well. Stir in 1/3 cup lemon juice. Pour cream cheese filling into cooled crust and spread blueberry sauce over cream cheese. Chill in refrigerator for at least 2 hours before serving.

This is a shortcut recipe for blueberry Danish pinwheels made with puff pastry. It's the perfect option for busy families. These breakfast pastries can be also enjoyed for brunch or as an afternoon treat!

½ cup Ricotta Cheese
4 tablespoons Blueberry Jam (, see note 1)
1 Puff Pastry Sheet (, see note 2)
12 Blueberries (, see note 3)
Powdered Sugar (, for dusting)

Steps:

  • Preheat oven to 400° Fahrenheit (200° Celsius).
  • In a bowl, mix ricotta with jam and set aside.
  • Using a knife or pizza cutter, cut puff pastry sheet into same size squares (about 3-inch/8-centimeter wide).
  • Take one square and make diagonal cuts in all 4 corners (check my photos or video if needed), about 1-inch (2.5-centimeters) long toward the center. Repeat with all squares.
  • Spoon about a heaped teaspoon of ricotta mixture in the center of each puff pastry square. Take one corner of the square and fold it towards the center. Repeat with every other corner/tip to form a pinwheel shape. Secure the center with a blueberry by pressing it down.
  • Repeat with the rest of them. When ready, transfer them onto a baking tray lined with baking parchment. Reduce the oven temperature to 370° Fahrenheit (190° Celsius) and bake them for about 12 minutes or until they are puffed and browned.
  • Let them cool down before dusting them with powdered sugar.
  • Enjoy!

1 packet dry ranch salad dressing
1/4 teaspoon garlic powder
1/3 cup black olives, chopped
2 tablespoons pimentos, chopped
3 green onions, chopped

Steps:

  • Mix all of the ingredients (except tortillas) together in a large bowl.
  • Spread the mixture thinly and evenly over each tortilla.
  • Roll up each tortilla tightly and wrap in plastic wrap.
  • Chill in the refrigerator for several hours or overnight.
  • Cut the tortillas about an inch thick and place them on a serving tray.

4 ounces cream cheese, softened
1/2 cup confectioners' sugar
1/2 cup heavy whipping cream, whipped
2/3 cup sugar
1/4 cup cornstarch
1/2 cup water
1/4 cup lemon juice
3 cups fresh or frozen blueberries

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. , In a small bowl, beat cream cheese and confectioners' sugar until smooth. Fold in whipped cream. 1 cup butter, softened
3 ounces cream cheese, softened
1 cup sugar
1 large egg
1 tablespoon grated orange zest
1 teaspoon vanilla extract
3-1/2 cups all-purpose flour
1 teaspoon salt
FILLING:
1 cup semisweet chocolate chips
3 ounces cream cheese, softened
1/2 cup confectioners' sugar
1/4 cup orange juice

Steps:

  • In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Beat in the egg, orange zest and vanilla. Combine flour and salt; gradually add to the creamed mixture and mix well. Cover and chill for 4 hours or until firm. , Meanwhile, combine all filling ingredients in a small saucepan. Cook and stir over low heat until smooth; set aside to cool. , On a floured surface, divide dough in half; roll each half into a 12x10-in. rectangle. Spread with filling. 10 large flour tortillas
2 (8 ounce) boxes cream cheese
1 cup pitted black olives, finely chopped
2 tablespoons pimientos, finely chopped
1 ounce ranch dressing
2 tablespoons green jalapenos, finely chopped

Steps:

  • Soften cream cheese
  • Mix in the powdered Ranch dressing
  • Add the pimentos, black olives and the jalapeños.
  • Spread evenly over the flour tortillas using a rubber spatula.
  • Roll tightly. Cover and chill for about one hour.
  • Slice into pinwheels.
