LAMB CHOPS WITH BALSAMIC REDUCTION
This recipe for lamb chops is a favorite in my house. It is an easy and quick recipe for two people (we eat two chops each). Rosemary and thyme give it great flavor. If you double the recipe, remember that the sauce will take longer to reduce.

Steps:
- In a small bowl or cup, mix together the rosemary, basil, thyme, salt and pepper. Rub this mixture onto the lamb chops on both sides. Place them on a plate, cover and set aside for 15 minutes to absorb the flavors.
- Heat olive oil in a large skillet over medium-high heat. Place lamb chops in the skillet, and cook for about 3 1/2 minutes per side for medium rare, or continue to cook to your desired doneness. Remove from the skillet, and keep warm on a serving platter.
- Add shallots to the skillet, and cook for a few minutes, just until browned. Stir in vinegar, scraping any bits of lamb from the bottom of the skillet, then stir in the chicken broth. Continue to cook and stir over medium-high heat for about 5 minutes, until the sauce has reduced by half. If you don't, the sauce will be runny and not good. Remove from heat, and stir in the butter. Pour over the lamb chops, and serve.

- Preheat broiler. Sprinkle pork chops on both sides with pepper; place on a broiler pan coated with cooking spray. Broil 4-5 in. from heat 4-5 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving., Meanwhile, in a small saucepan, heat butter over medium-high heat. Add green onion and garlic; cook and stir until tender. Stir in flour until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Add cheese and wine; heat through. Serve chops with sauce.

When second side of chops are brown, turn back over on the grill. Spread the blue cheese paste on the chops and continue to cook until the paste melts into the meat. Then they're ready. - Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Rub both sides of each lamb chop with the garlic clove and season with black pepper.
- Mash blue cheese and cream together in a bowl, forming a paste.
- Cook lamb chops under the broiler until no longer pink in the center, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
- Spread the cheese paste evenly atop one side of each chop.
- Bake under the broiler until the cheese is browned and bubbling, 1 to 2 minutes more.

- Trim fat from chops. Cook lamb chops in hot oil in a large skillet over medium-high heat 8 to 10 minutes on each side or until browned. Cover, reduce heat, and cook 20 minutes or to desired degree of doneness, turning once. Transfer chops to a serving platter, and keep warm.
- Pour brandy into skillet. Combine whipping cream and egg yolk; add to brandy in skillet, stirring well. Cook over low heat, stirring constantly, until thickened. Stir in grapes and cheese. Spoon sauce evenly over chops, and serve immediately.
